BACON BLUE CHEESE POTATO SALAD
I'm not crazy about potato salad, but this one is definitely the exception. It's creamy and the flavor is wonderful. I got the recipe from my friend Devon, who got it from somebody else. Don't be put off by the blue cheese - the flavor is not overwhelming at all. I didn't know it had blue cheese until I asked for the recipe.

Steps:
- Boil potatoes until tender.
- Cook bacon until crisp, and cut into one inch pieces.
- In a bowl, combine mayonnaise, sour cream, vinegar, salt and pepper.
- Fold in green onions, cheese, potatoes and bacon.
- Can be served immediately or refrigerate until ready to serve.

- In a large pan, fry bacon over medium-high heat. Set aside on a paper towel lined plate in order to absorb excess grease.
- In a large bowl, combine potatoes, 1/2 cup blue cheese, half and half cream, half of the chives and the 1/2 of the cooked bacon and mix well.
- Place in a baking dish or pan and bake uncovered at 375 degrees for 45-60 minutes.
- Top the casserole with remaining bacon, blue cheese and chives and bake an additional 5 minutes.

- In a bowl, combine the first 7 ingredients. Transfer to a greased 9-in. pie plate. Drizzle with butter; sprinkle with paprika. Bake at 350° until lightly browned, 35-45 minutes.

POTATO-BACON HASH

- 1. In a heavy skillet, cook the bacon until crisp. Transfer it to a paper towel-lined plate.
- 2. Remove all but 1 tablespoon of the fat and return the pan to high heat.
- 3. Add the potatoes, white scallions (if using), garlic, salt, pepper, and 1/4 cup water. Bring to a boil.
- 4. Cover, reduce heat to medium-low, and simmer until the potatoes are just tender, 8 to 10 minutes.
- 5. Add the bacon, broken into pieces. Cook, stirring occasionally, for about 10 minutes more.
- 6. Remove from heat, garnish with the green scallions (if using), and serve.

- Preheat your oven to 190c.
- Combine potatoes, onions, bacon and half the cheese in a bowl.
- Season with the salt and pepper.
- Spoon into a oven proof baking dish-10 cup capacity-and sprinkle over the thyme.
- Whisk together the cream and stock, and pour over the potatoe mix.
- Sprinkle with the remaining cheese and bake uncovered in the preheated oven for 1 hour 20 minutes or until golden brown.
- Serve at once.
