Bacon & Avocado Pasta Salad image

11 ounces grape tomatoes (rinsed and dried)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound rigatoni pasta
2 avocados (pitted)
6 strips bacon (cooked crispy and crumbled)
1 cup Avocado Ranch Dressing
Salt and pepper (to taste)

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper.
  • In a medium bowl, drizzle tomatoes with olive oil and sprinkle with salt and pepper. Stir until tomatoes are coated. Transfer tomatoes to the prepared baking sheet and spread into a single layer. Bake for 15 to 20 minutes until tomatoes are slightly wilted and bursting. Remove from the oven and set aside.
  • While the tomatoes cook, bring a large pot of water to a boil. Season water with a generous pinch of salt. Cook pasta according to package directions until al dente. Drain pasta and run under cold water until completely cooled.
  • Add pasta to a large bowl and pour in avocado ranch dressing. Stir until pasta is completely coated.
  • Run a knife through the avocado flesh to make a checkerboard pattern, then run a large spoon under the avocado right up against to skin to remove the flesh. Add most fo the avocado to pasta bowl.
  • Add most of the crumbled bacon and roasted tomatoes to the pasta. Gently stir everything together until combined. Season with salt and pepper, to taste.
  • Sprinkle reserved bacon, avocado, and tomatoes on top of the pasta salad. Cover with plastic wrap and refrigerate until ready to serve.

3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
4 teaspoons sugar
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon Dijon mustard
SALAD:
1 bunch romaine, chopped (about 12 cups)
3/4 pound bacon strips, cooked and crumbled
3 medium tomatoes, chopped
1 medium red onion, halved and thinly sliced
3 medium ripe avocados, peeled and cubed
2 tablespoons lemon juice
1 cup crumbled Gorgonzola or feta cheese

Steps:

  • Place first 6 ingredients in a jar with a tight-fitting lid; shake well until blended. Refrigerate until serving., In a large bowl, combine romaine, bacon, tomatoes and onion. Toss avocados with lemon juice and add to salad. Sprinkle with cheese. Serve with dressing, shaking the jar to blend again if needed.

1 (8 ounce) package bow-tie pasta
6 slices bacon
⅔ cup chopped basil
3 tablespoons lemon juice
2 tablespoons olive oil
3 cloves garlic, minced
¼ teaspoon ground black pepper
⅛ teaspoon salt
2 avocados, chopped
½ cup grated Romano cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta; cook, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.

1 ripe avocado, chopped
2 tablespoons lemon juice

1 (4 ounce) can sliced black olives
1 medium tomato, diced

Steps:

1/4 cup olive or vegetable oil
1 tablespoon water
1 tablespoon balsamic vinegar
2 tablespoons chopped fresh basil leaves
1 cup cherry tomatoes, halved
1 cup drained fresh mozzarella cheese pearls
1 cup fresh baby arugula leaves
8 slices bacon, crisply cooked, coarsely chopped

Steps:
