Here's what you need: brussels sprouts, avocado, green onions, fresh spinach, bacon, parmesan cheese, dried cranberries, sliced almonds, lemon juice, dijon mustard, dried oregano, pepper, salt, olive oil

Number Of Ingredients 14

20 brussels sprouts, shaved
1 avocado, diced
6 green onions, diced
1 cup fresh spinach
7 slices bacon, cooked and cut into 1/2 inch (1 cm) pieces
⅓ cup parmesan cheese
¼ cup dried cranberries
¼ cup sliced almonds
4 tablespoons lemon juice
1 tablespoon dijon mustard
1 tablespoon dried oregano
1 tablespoon pepper
½ tablespoon salt
4 tablespoons olive oil

Steps:

  • Slice the stems off the Brussels sprouts and cut each one in half, then thinly slice. Transfer the shaved sprouts to a medium bowl and break apart with your hands.
  • To prepare the vinaigrette, juice the lemons into a small bowl and remove the seeds.
  • Add the mustard, oregano, pepper, and salt. Whisk to combine.
  • Slowly add the olive oil while continuing to whisk until evenly blended.
  • Slice the avocado and remove the pit, then dice.
  • Trim the ends of the scallions, then dice.
  • In a large bowl, combine the Brussels sprouts and spinach.
  • Add the avocado, bacon, scallions, Parmesan cheese, cranberries, and almonds.
  • Pour the dressing evenly over the salad.
  • Toss thoroughly until well mixed.
  • Enjoy!

3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
4 teaspoons sugar
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon Dijon mustard
SALAD:
1 bunch romaine, chopped (about 12 cups)
3/4 pound bacon strips, cooked and crumbled
3 medium tomatoes, chopped
1 medium red onion, halved and thinly sliced
3 medium ripe avocados, peeled and cubed
2 tablespoons lemon juice
1 cup crumbled Gorgonzola or feta cheese

Steps:

  • Place first 6 ingredients in a jar with a tight-fitting lid; shake well until blended. Refrigerate until serving., In a large bowl, combine romaine, bacon, tomatoes and onion. Toss avocados with lemon juice and add to salad. Sprinkle with cheese. Serve with dressing, shaking the jar to blend again if needed.

3 pounds fresh Brussels sprouts
10 bacon strips, chopped
1 medium red onion, halved and thinly sliced
2/3 cup white wine vinegar
1/3 cup honey
1/4 cup Dijon mustard
2 medium apples, thinly sliced

Steps:

  • Trim Brussels sprouts. Using the slicing blade on a food processor or a knife, thinly slice sprouts. Transfer to a large bowl. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1/4 cup in pan., Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in vinegar, honey and mustard. Cook and stir 1 minute. Add bacon and apples to Brussels sprouts. Drizzle with onion mixture; toss to coat. Refrigerate at least 3 hours before serving.
