12 slices bacon, cut in half
24 dried apricot halves
1/2 cup plum jam
1/4 cup soy sauce

Steps:

  • Heat oven to 350 degrees farenheit.
  • Wrap 1/2 slice of bacon around an apricot half, secure with a toothpick.
  • Place on ungreased cookie sheet and bake 20-25 minutes or until the bacon is brown & crisp.
  • Turn once during baking.
  • While the bacon is cooking mix the jam & soy sauce in a saucepan and cook over low heat until the jam has melted and mixed with the soy sauce.
  • Remove bacon/apriots from oven and place on paper towels to remove excess grease.
  • Serve dipping sauce with the bacon-apricot appetizers.

  • Heat oven to 375º F. Place a sage leaf on each apricot, wrap with a piece of bacon, and place seam-side down on a baking sheet.
  • Bake until the bacon is beginning to crisp, 6 to 8 minutes per side.
  • Remove from oven and brush with the maple syrup. Serve with toothpicks.

12 large dried apricots
12 smoked almonds
4 slices bacon, cut crosswise into thirds
1/2 tablespoon maple syrup
1 teaspoon red wine vinegar
Freshly ground black pepper
1 teaspoon chopped chives, for garnish

Steps:

  • Gently separate the two sides of each apricot and stuff with the almonds. Wrap each with a segment of the bacon. Arrange in a small nonstick skillet seam-side down. Cook on medium heat until the undersides are well-browned and crisp, 6 to 7 minutes.
  • Turn the apricots over and continue to cook until browned on the bottom, 2 to 3 minutes more. Add the maple syrup, vinegar and a few grinds of pepper and cook, shaking the skillet to coat, until the liquid has reduced and the apricots are glossy and browned all over, about 1 minute more. Transfer to a small plate and sprinkle with the chives. Serve warm or at room temperature.

1/2 cup honey barbecue sauce

  • Cut bacon strips widthwise into thirds. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain. , Wrap a bacon piece around each apricot; secure with a toothpick. Place in an ungreased 15x10x1-in. baking pan., Bake at 350° until bacon is crisp, 18-22 minutes. 3 cups dried apricots (about 14 ounces)
1/2 cup whole almonds
SAUCE:
1/4 cup plum preserves or apple jelly
2 tablespoons soy sauce

Steps:

  • Preheat oven to 375°. Cut each bacon strip into thirds. Fold each apricot piece around an almond; wrap with a piece of bacon. Secure with toothpicks., Place on two ungreased 15x10x1-in. pans. - 24 dried apricots about 7 ounces
- 3 ounces havarti, cut into 1/2 to 3/4 inch squares, 1/4 inch thick
- 24 almonds, about 1 ounce
- 12 strips bacon, about 12 ounces, cut in half crosswise
- 24 toothpicks, soaked in water
- freshly ground black pepper

Steps:

  • heat gas grill to high or prepare a hot charcoal fire. Pry open the apricots and put a piece of cheese and almond into each one. Wrap a piece of bacon around each apricot, trimming as needed so it overlaps by 1/2 inch, and secure it with a wooden pick. Season the apricots all over with pepper.
  • Reduce the grill heat to medium, or scatter the coals a bit or raise the grate if using charcoal. Use tongs to grill the apricots on all sides with the grill open, propping them between the bars to hold up on the narrow side. move the apricots around often to avoid flareups.
