BACON AND SPRING ONION PANCAKES
This is my version of the Chinese home-style pancake that my mum used to make for me when I was a child-she used little dried shrimp instead of bacon and water instead of stock. These are great as a light lunch or a quick snack. My children love them, especially drizzled with some sweet chili sauce! Try cutting them in triangles, rolling them up and securing with a cocktail stick-great for serving with drinks! Please note that these are NOT American style pancakes, more like a savoury crepe.

Steps:
- In a bowl mix together everything except the oil to make a smooth batter.
- In a frying pan heat up about 2 tbsp oil, ensuring that it has coated all around the pan.
- Pour in 1/4 of the batter mix, spreading it around pan with a spatula. Cook until the edges start to brown.
- Flip pancake and cook the other side until it browns slightly.
- Repeat with the remaining batter until you have four large pancakes.
- Cut into wedges and serve hot.

- Place eggs, milk and melted butter in a bowl and whisk until combined. Sift flour, baking powder and salt into a bowl. Make a well in the centre, gradually add egg mixture and beat until smooth. Allow to rest for 2 hours (or overnight, if possible).
- Heat a non-stick frying pan and ladle 4 tablespoons of batter into the pan. Sprinkle 1 tablespoon of spring onions over pancake. Turn pancake and cook on the other side. Transfer to a plate and keep warm while cooking remaining pancakes.
- For the lemon butter, heat the juice of two lemons in a small pan over medium heat. Whisk in 125g unsalted butter in small pieces until melted and combined. Season with salt and freshly ground black pepper.
- To serve, place a pancake on each plate, top with 1 cup of baby spinach, 4 slices of gravlax and a pile of cucumber ribbons. Spoon lemon butter around, but not on top of, the pancake.

- Preheat oven to 200 degrees. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together buttermilk, melted butter, and egg. Whisk flour mixture into buttermilk mixture just until moistened, with small to medium lumps remaining.
- In a large cast-iron or nonstick skillet or on a griddle, cook bacon over medium-high until fat is rendered and bacon is browned on one side, 5 to 6 minutes. Flip and cook until golden and crisp on underside, 1 to 3 minutes. Drain bacon on paper towels; pour off all but 1 teaspoon fat from skillet (reserve for another use).
- Heat skillet over medium. Pour 1/4-cupfuls batter into skillet and top each with a bacon slice. Cook until some bubbles appear on top of pancakes and a few have burst, about 2 minutes. With a spatula, carefully flip pancakes and cook until browned on underside, about 2 minutes. Transfer to a platter, bacon side up, and loosely tent with foil. Keep pancakes warm in oven and repeat with remaining batter, adding more bacon fat if needed. Serve with pure maple syrup, if desired.

- Whisk all ingredients except the onions in a bowl until smooth.
- Stir in the spring onions.
- Lightly coat a small frying pan with cooking spray.
