This is my husband's recipe that was handed down to him by his grandmother. His grandmother stated that you must use Farmer John® sausage and bacon drippings or it would not taste as delicious as hers. It was never written down, just a pinch of this and a handful of that. I finally got him to measure everything and this is the result.

1 (8 ounce) package pork link sausages (such as Farmer John(R))
¼ cup bacon drippings
¼ cup all-purpose flour
2 ½ cups buttermilk
salt and ground black pepper to taste

Steps:

  • Place sausages and bacon drippings in a skillet and cook over medium heat, breaking up sausage into bite-sized pieces, until golden brown, 4 to 6 minutes. Add flour, stirring constantly. Slowly add buttermilk and cook and stir until gravy has thickened, 3 to 5 minutes.

PLAN/PURCHASE
4 - 5 slice(s) bacon, diced, about 8 ounces (225g)
4 tablespoon(s) flour, all-purpose variety
2 cup(s) fresh buttermilk
salt, kosher variety, to taste
black or white pepper, freshly ground, to taste
ADDITIONL ITEMS
buttermilk biscuits, freshly made
eggs and country-fried steaks
hot sauce, i prefer frank's, served on the side

Steps:

  • PREP/PREPARE
  • For this recipe you will need a good skillet, saucepan, or Dutch oven.
  • Do not have any buttermilk. No worries. You can substitute whole, or 2% milk. Just add 1 tablespoon of lemon juice or white vinegar per cup of milk and let sit for 5 - 10 minutes at room temperature. Then, use it as you would regular buttermilk.
  • Gather your ingredients (mise en place).
  • Dice the bacon into small bits.
  • Add to a medium-sized pan, or Dutch oven over medium heat, and cook until the fat is rendered, and the bacon crisps, about 8 - 10 minutes.
  • Remove all but 4 tablespoons of the bacon grease, then add the flour.
  • If your bacon did not produce enough fat, you can sub some butter, or non-flavored oil.
  • Stir over medium-low heat, for about 3 - 4 minutes.
  • Stirring the fat and the flour for a few minutes will help get rid of that flour taste.
  • Add the buttermilk, a bit at a time, and keep stirring, as you are pouring.
  • Slowly bring the mixture up to a simmer and stir to make sure you do not have any lumps.
  • Continue stirring until the gravy thickens, about 3 - 4 minutes.
  • While the gravy is thickening, add some salt and pepper, to taste.
  • PLATE/PRESENT
  • Biscuits, scrambled eggs, country-fried steak... It is gravy, go for it. Enjoy.

1/4 cup + 1tbsp bacon grease
1/2 cup freshly cooked bacon cut into small pieces
4 tbsp all purpose flour
1/4 cup cream
1 3/4 cup buttermilk
Freshly ground pepper to taste

Steps:

  • In a frying pan over moderate heat, mix the bacon and the grease. Add the flour, stirring constantly until the flour is entirely blended with the grease and appears smooth. Add the cream and buttermilk and stir until the mixture thickens, approximately 5 minutes. Add pepper to taste and serve over biscuits.

2 tablespoons all-purpose flour
2 cups whole milk
salt and pepper to taste
cooked biscuits for serving

Steps:

  • Brown bacon in a large skillet until crisp.
  • Remove bacon and leave 2 tablespoons bacon fat in the skillet.
  • Whisk flour into the bacon fat and cook 1 minute.
  • Add milk a little bit at a time, stirring after each addition.
  • Bring to a boil, reduce heat, and simmer until thick and bubbly.

One day DH wanted biscuits and gravy, but I didn't have sausage, only bacon. So, I found a recipe online and went for it. Thus, bacon gravy was born!

6 slices bacon
2 tablespoons bacon grease
2 tablespoons flour
2 cups milk
salt and pepper

Steps:

  • Preheat a large skillet to medium-hi. Place 6 slices of bacon in the skillet and cook until just under crispy.
  • Remove bacon from skillet and drain; set aside. Discard all but 2 tablespoons of the bacon grease.
  • Add flour to grease, and whisk together. Cook for about a minute without burning the flour.
  • Add milk; whisk together.
  • Heat until bubbling. Simmer for 5-10 minutes, until sauce starts to thicken.
  • Meanwhile, crumble bacon. Add salt and pepper (to taste), and bacon to gravy. Allow to simmer until desired consistency.
  • Serve over biscuits.
