A turkey bacon lattice topper adds an impressive element to this classic quiche combination. Using a prepared crust makes it super easy to pull together.

1 refrigerated rolled pie crust (from one 14.1-ounce box)
11 strips turkey bacon
1 cup shredded Cheddar (about 4 ounces)
2/3 cup milk
10 large eggs
5 ounces frozen broccoli florets
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Unroll the pie crust and fit it into a 9-inch deep-dish pie plate.
  • Arrange 6 strips of the bacon one above the other in a square on a baking sheet; the edges should touch but not overlap. Working with one of the remaining strips at a time, weave them over and under to form a lattice.
  • Whisk the Cheddar, milk, eggs, broccoli, 1 teaspoon salt and a few grinds of pepper in a medium bowl until well combined. Pour into the pie crust. Bake the bacon lattice and quiche on separate baking sheets until the bacon is just starting to crisp up and the quiche is slightly set but still jiggly in the center, about 15 minutes.
  • Use 2 spatulas to transfer the bacon lattice to the top of the quiche. Continue baking until the bacon is golden brown and crisp and the quiche is set, 15 to 20 minutes more. Let stand for 10 minutes before serving.

1 small sweet onion, chopped, divided
1 tomato, chopped, divided
12 slices OSCAR MAYER Bacon
1-1/2 cups chopped broccoli
1 doz. eggs
1/3 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1/2 tsp. dried thyme leaves
1 pkg. (7 oz.) KRAFT 2% Milk Shredded Cheddar Cheese

Steps:

  • Heat oven to 325ºF.
  • Reserve 2 Tbsp. each onions and tomatoes for later use. Cook bacon in large skillet until crisp. Remove bacon from skillet; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add broccoli to reserved drippings; cook and stir 2 min. or until tender. Remove from heat. Crumble bacon. Add to skillet along with the remaining onions and tomatoes; mix well.
  • Whisk eggs, sour cream and thyme until blended; pour into 13x9-inch baking dish sprayed with cooking spray. Top with vegetable mixture and cheese.
  • Bake 30 min. or until center is set. Top with reserved onions and tomatoes. Let stand 5 min. before cutting to serve.

1 (19 ounce) bag frozen roasted potatoes with broccoli and cheese sauce (I use Green Giant)
1 refrigerated pie crust, softened as directed on box (from 15-oz box)
4 eggs
2/3 cup whipping cream (I use sour cream with chives)
7 slices bacon, cooked, crumbled (about 1/3 cup)
1 cup finely shredded parmesan cheese (4 oz)
1 cup finely shredded cheddar cheese (4 oz)
1/2 teaspoon dried basil leaves
1/2 teaspoon pepper
1/4 teaspoon parsley flakes
1/8 teaspoon salt, if desired
1 teaspoon finely chopped fresh chives

Steps:

  • Heat oven to 350°F
  • Cook frozen potatoes with broccoli and cheese sauce in microwave as directed on bag.
  • Meanwhile, place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.
  • In large bowl, beat eggs and whipping cream with wire whisk until well blended. Stir in cooked potato mixture and remaining ingredients except chives. Pour filling into crust-lined plate; spread evenly. Sprinkle chives over filling.
  • Bake 30 to 40 minutes or until edge of filling is light golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving.

We LOVE quiche. My husband's mother made it for him every week after he was diagnosed with hyperglycemia. So, here's a quiche recipe with some of my favorite ingredients (potato, bacon, and broccoli), how am I going to NOT try it? Or like it? I picked this up from the Pillsbury website.

4 eggs, beaten
1 cup half and half
1/8 tsp. garlic powder
1 cup swiss cheese, grated
1 cup broccoli, chopped
1/4 tsp. salt
1/8 tsp. lemon pepper
softened cream cheese
1 refrigerated piecrust dough

Steps:

  • 1. Mix all ingredients except half of bacon and softened cream cheese and pour into piecrust. sprinkle remaining bacon on top.
  • 2. Bake for 35 minutes at 350 degrees or til knife comes out clean. Top with a dollop of softened cream cheese.
