SPINACH SALAD DRESSING

Sweet, creamy, and a little bit tangy, this Spinach Salad Dressing pairs perfectly with a crispy, fresh spinach salad!

Number Of Ingredients 13

⅓ cup vegetable oil
2 tablespoons red wine vinegar
2 teaspoons dijon mustard
1 ½ teaspoons honey
1 clove garlic (minced)
¼ teaspoon black pepper
⅛ teaspoon salt (or to taste)
8 cups spinach
2 hard boiled eggs (sliced)
8 slices bacon (cooked and crumbled)
3 green onions (sliced)
2-3 fresh mushrooms (sliced)
¼ cup feta cheese (optional)

Steps:

  • Combine dressing ingredients in a small jar with a lid. Shake well to combine and refrigerate at least 1 hour.
  • Toss dressing with spinach just before serving.
  • Add remaining ingredients on top of salad. Serve immediately.

6 cups baby kale salad blend
1 cup julienned zucchini
1/2 cup thinly sliced sweet onion
1/2 cup fat-free plain yogurt
2 tablespoons lime juice
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 medium ripe avocado, peeled
3 green onions, chopped
2 tablespoons minced fresh parsley

Steps:

  • In a large bowl, combine salad blend, zucchini and sweet onion. Place remaining ingredients in blender; cover and process until smooth. Divide salad mixture among 4 plates; drizzle with dressing.

This is a flavourful version of cabbage rolls without all the work! It's really good served with mashed potatoes. I think this dish is great as is but if you really don't like much salt in your food I would only add half of the onion soup mix. This recipe is weight watchers core when made without the addition of the optional cheese.

1 lb lean ground beef or 1 lb ground pork
1 onion, chopped
1 garlic clove, minced
4 tablespoons Minute brown rice
1 (1 ounce) envelope onion soup mix
1 lb Coleslaw
1 (398 ml) can tomato sauce
1 (10 ounce) can tomato soup
3/4 cup water
2 cups cheese, shredded (optional)

Steps:

  • Brown meat, onion and garlic. Drain well.
  • Stir rice and onion soup mix into meat mixture.
  • Place coleslaw in a lightly greased 9x13 glass pan.
  • Spread meat mixture evenly over the cabbage.
  • Mix together the tomato sauce, tomato soup and water and pour over the cabbage and meat.
  • Top with cheese, if using.
  • Cover and bake at 350 degrees for an hour and a half.

This is a nice tangy dressing that has been handed down from generation to generation. It does have to sit for a few days to meld.

2/3 red wine vinegar
1/3 vegetable oil
garlic clove, minced
mayonnaise

Steps:

  • Mix red wine vinegar, oil and garlic in a bowl or cup with lid.
  • Shake.
  • Let sit in refrigerator for 2 days.
  • Whisk in mayonnaise to taste.
  • Serve.
