Grilled Baby Octopus With Lemon image

Don't be intimidated by the fact that this Greek-style grilled baby octopus recipe requires a whole one. They are readily available frozen.

1 pound baby octopus, thawed if frozen
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
2 teaspoons salt
1 tablespoon black pepper
2 tablespoons fresh oregano , finely chopped; or 1 tablespoon dried
1/2 teaspoon ground cloves
3 cloves garlic, mashed
Garnish: 2 lemons, cut into wedges

Steps:

  • Gather the ingredients.
  • In a plastic bag or container with a tight-fitting lid, place the octopus, olive oil, lemon juice and zest, salt, pepper, oregano, cloves, and garlic.
  • Massage the marinade into the octopus and put it in the fridge for 24 hours to marinade. Massage it periodically during the marinating phase.
  • Fire up the grill. If you have a gas or charcoal grill, it is vital that you add some kind of wood smoke . Without it, the dish becomes far less interesting.
  • While the grill is heating, skewer the little octopi. It's a good thing if some of the herbs or garlic from the marinade sticks to the octopus, but it's not essential.
  • Grill over the smoky fire, covered, for 3 minutes.
  • Turn them over and grill for 3 minutes more.
  • Serve while still hot with lemon wedges on the side. Enjoy.

Sauteed Bay Scallops with Lemon Butter image

1 pound bay scallops
2 tablespoons olive oil
3 tablespoons unsalted butter
Juice of 1 lemon
1/4 cup chopped fresh parsley
Freshly ground black pepper

Steps:

  • Choose a saute pan large enough to hold all of the scallops in one layer without overcrowding the pan or without them touching each other. Cook in batches if necessary. Heat the oil and 1 tablespoon of the butter until nearly smoking. Add the scallops and do not move or shake pan, but allow the scallops to brown well on one side before tossing the pan to flip them or gently turning them with a spatula to cook the second side.
  • Remove the scallops from the pan and place on a warm serving platter. Return the pan in which the scallops had been cooked to the fire, add the remaining 2 tablespoons of sweet butter, and cook until the butter begins to turn a light brown color. When the butter has browned to a hazelnut color add the lemon juice and chopped parsley.
  • Pour the classic lemon butter over the scallops, garnish with heart-shaped croutons and serve promptly.

Sometimes the best pairings are accidental. One weekend when I had some work to do, I asked my husband to go to the local fish market and pick up one of their marvelous chowders that could be reheated for lunch. He came home instead with a pound of local bay scallops, the first of the season (and abundant this year). Now I had to cook. Fortunately, I had other suitable ingredients on hand and in less than 30 minutes, lunch was on the table. Not one to let a tasting opportunity go to waste, I figured the dish I almost literally threw together would be compatible with a bottle of simple white Burgundy. It had just enough richness in the glass.

1 pound fresh bay scallops
3 tablespoons flour
Salt and pepper
pepper
2 tablespoons extra virgin olive oil
1 large shallot, minced
2 cloves garlic, minced
2 plum tomatoes, finely chopped
Juice of 1/2 lemon
1/3 cup dry white wine
1 1/2 tablespoons unsalted butter, softened
2 tablespoons minced flat-leaf parsley
Toasted baguette slices, for serving

Steps:

  • Season the flour with some salt and pepper and toss the scallops in it. Heat the oil in a 10- to 12-inch skillet. Add the shallot and garlic and sauté over medium heat a few minutes, until soft. Remove, draining well to keep most of the oil in the pan. Increase the heat to medium-high. Shake excess flour from the scallops and sauté them, tossing, until lightly browned.
  • Return the shallot and garlic to the skillet. Add the tomatoes and sauté until they soften, a minute or so. Add the lemon juice and wine and stir just until the ingredients are well combined. With a slotted spoon, transfer the scallops to a warm serving dish. (It's fine if some vegetables hitch a ride with the scallops.)
  • Increase the heat to high and reduce the liquid until it thickens to the consistency of heavy cream. Lower heat, swirl in the butter and check the seasoning. Fold in the parsley. Pour the sauce over the scallops and arrange the toast around the platter.

28 uncooked large shrimp (1-1/2 pounds), peeled and deveined
28 sea scallops (about 1/2 pound)
1/2 cup butter, cubed
7 tablespoons lemon juice
5 tablespoons Worcestershire sauce
1 to 2 teaspoons garlic powder
1 teaspoon paprika

Steps:

  • Place shrimp and scallops in a large resealable plastic bag; set aside. , In a microwave-safe bowl, combine the butter, lemon juice, Worcestershire sauce, garlic powder and paprika. Microwave at 50% power for 1 minute or until butter is melted. Stir to blend; set aside 1/3 cup for basting. Pour remaining marinade over shrimp ans scallops. Seal bag and turn to coat; refrigerate for 1 hour, turning occasionally., Drain and discard marinade. Alternately thread shrimp and scallops on metal or soaked wooden skewers. Main ingredients:
2 cups vegetable stock
1 cup white wine
1 lb Baby octopus, cleaned (beaks and inside organs removed)
½ lb Bay scallops
¾ lb Shrimp, medium sized (31-35 to the pound), peeled and deveined
For the marinade:
10 tbsp extra virgin olive oil
4 tbsp red wine vinegar
3 tbsp lemon juice
1 tbsp white wine
2 cloves of garlic, crushed
Salt to taste
Freshly ground black pepper to taste
1 red bell pepper, diced
1 tbsp cilantro leaves, chopped

Steps:

  • Preparation of the seafood: Bring vegetable stock and white wine to a boil. Add the baby octopus. Cover the pot and simmer for approximately 25 minutes. The baby octopus is ready once it is fork tender and the flesh has turned opaque. Drain the baby octopus in a colander and cut into bite size pieces. Bring 1 quart of water to a boil. Turn down the heat so the water is simmering. Add the scallops and then the shrimp. Cook for 1 to 2 minutes or until done, being careful not to overcook. Drain immediately. Marinade and final combination: In a large bowl prepare the marinade by whisking together the olive oil, red wine vinegar, lemon juice, the 1 tablespoon of white wine and crushed garlic. Add salt and pepper, adjusting amounts to personal taste. Mix in the red bell pepper and the cilantro. Add the baby octopus, bay scallops and shrimp to the marinade and mix well gently. Cover and refrigerate overnight.
