Here's another lovely dish from Costco Connection magazine. I think this salad would be a nice starter for Thanksgiving.

3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons orange juice
3 tablespoons pecans (finely chopped)
2 tablespoons honey
salt and pepper (to taste)
6 cups baby mixed greens
1 apple pear (cored and thinly sliced into wedges)
1/3 cup pomegranate seeds (or dried cranberries)
1/3 cup feta cheese

Steps:

  • In a salad bowl combine olive oil, red wine vinegar, orange juice, pecans, honey and salt and pepper to taste. Mix until well blended.

An impressive salad with wonderful colors! This will "wow" your guests. It could be used as a main dish by adding small pieces of chicken. Outstanding salad!

3 cups mixed baby lettuces and spring greens, torn
1 small head romaine lettuce, torn
2 bosc pears
1 red apple
4 ounces blue cheese
1/2 cup toasted pecans, broken
wine vinaigrette dressing (I use Kraft Seven Seas Red Wine Vinaigrette)

Steps:

  • In large bowl mix leaf salad greens and romaine lettuce. Leaving peeling on for color, cut apple and pears in bite-size pieces and add to greens.
  • Add crumbled blue cheese and toasted pecans. Drizzle only enough vinaigrette dressing to moisten well. Toss well. Serve immediately.

Young tender baby greens, topped with slices of mellow ripe pears with a sprinkling of Gorgonzola and toasted pecans. The flavors are enhanced by the Honey Mustard Dressing. This salad goes well with pork or chicken.

2 -3 ounces mixed baby greens
1/2 ripe pear, cored, sliced thin
1/4 cup pecans, toasted, coarse chopped
4 tablespoons gorgonzola, crumbled
1 tablespoon balsamic vinegar
1 tablespoon rice vinegar
2 tablespoons honey
2 teaspoons Dijon mustard
1 tablespoon walnut oil
salt
pepper

Steps:

  • Place all the dressing ingredients in a small container with a tight fitting lid and shake vigorously to blend.
  • Add salt and pepper to taste.
  • If not serving immediately, place the dressing in refrigerator. Before serving, allow the dressing to sit at room temperature for 30 minutes.
  • Layer chilled salad plates with the baby greens and top with thinly sliced pears.
  • Sprinkle with toasted pecans and cheese, drizzle with dressing as desired.

Tossed Greens With Pineapple, Apple and Feta Cheese image

This is a simple tossed salad, and I love the fact that the vinaigrette is oil-free. The dressing has a bit of a tang to it, but it is well-balanced by the sweetness of the fruit. I used Golden Delicious apples since they don't turn brown when cut, and romaine lettuce for the greens. I think the greens should be something "sturdy" to hold up to the apples and pineapple. Spinach would also be great! This recipe comes from Del Monte. Edited to note that I have this posted in the vegan category, even though feta cheese is listed in the ingredients because I have made this without cheese, too, and it is also good that way.

1 1/2 cups pineapple, cubed
1 red onions or 1 other sweet onion, thinly sliced
3 tablespoons feta cheese, crumbled
6 cups salad greens
3 tablespoons water
3 tablespoons balsamic vinegar
2 tablespoons sweet-hot mustard
1 clove garlic, minced finely or 1 clove garlic powder
salt and pepper

Steps:

  • Whisk together water, vinegar, mustard, garlic, salt, and pepper in a small bowl; set aside.
