I had a meaty ham bone...and wanted a hearty stick to your ribs kind of meal. And this is what I came up with. It turned out so tasty...I have to share it. The baby lima beans cook up fast, I didn't even pre-soak them. But if you want...sure go ahead. Total time was 3 1/2 hours...and wow...its even better the next day. All the flavors blend in that time. I hope you give it a try, if your a bean soup person...this is a must.

2 cups baby lima beans
1 large ham bone, meaty
2 medium onions, chopped
2 large carrots, chopped
3 celery ribs, chopped
1 teaspoon Cavenders All Purpose Greek Seasoning
2 garlic cloves, chopped
1 teaspoon salt
1/2 teaspoon pepper
6 cups water

Steps:

  • In a large pot throw in;.
  • Washed beans, and the rest of the ingredients, except for the salt.
  • Put enough water or stock to completely cover all ingredients.
  • Cook for around 3 to 3/12 hours, taste and add the salt if needed.

3 cans (14-1/2 ounces each) chicken broth
2 cans (15-1/4 ounces each) lima beans, rinsed and drained
3 medium carrots, thinly sliced
2 medium potatoes, peeled and diced
2 small sweet red peppers, chopped
2 small onions, chopped
2 celery ribs, thinly sliced
1/4 cup butter
1-1/2 teaspoons dried marjoram
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano
1 cup half-and-half cream
3 bacon strips, cooked and crumbled

Steps:

  • In a Dutch oven or soup kettle, combine the first 12 ingredients; bring to a boil over medium heat. Reduce heat; cover and simmer for 25-35 minutes or until vegetables are tender. , Add cream; heat through but do not boil. Sprinkle with bacon just before serving.

1 pound dry lima beans
4 cups water
5 carrots, chopped
1 leek, bulb only, chopped
2 tablespoons minced shallots
2 stalks celery, chopped
4 cubes vegetable bouillon
8 cups water
2 tablespoons olive oil

Steps:

  • Bring 4 cups of water to a boil. Add dry lima beans, and boil for 2 to 3 minutes. Remove from heat, and allow the beans to sit, covered, for 1 to 2 hours to soften. Drain and rinse until water runs clear, discarding bean water.
  • In a soup pot, saute vegetables in olive oil until onions and celery are translucent. Add lima beans, and saute for another 2 to 3 minutes.
  • In the meantime, bring 4 cups of water to a boil. Add the vegetable bouillon to the boiling water, and stir until dissolved. Add broth to the sauteed vegetables and beans. Add remaining water, and allow soup to simmer over a low flame for 1 to 1 1/2 hours. Serve steaming hot.

SOAK BEANS OVERNIGHT
1 lb baby lima beans, dried
8 - 10 c water to cover
COOK BABY LIMA BEAN SOUP NEXT DAY
water to cover
4 c vegetable broth
1 medium onion, diced
4 - 5 medium carrots, diced
1 medium meaty ham bone
1 medium sized piece of ham, you'll dice later
2 - 3 clove garlic,minced
1 tsp celery salt
1 Tbsp dried celery flakes
salt & pepper

Steps:

  • 1. Sort and rinse beans before soaking. Then place in a medium sized bowl the sorted beans and 7-8 cups of water.
  • 2. Let them soak overnight.
  • 3. Drain and rinse the baby lima beans.
  • 4. Add to your cooking pan/pot, Ninja Cooking System or crockpot.
  • 5. Add your vegetable broth, carrots, onions, garlic and the rest of the ingredients. Add water to cover ham bone. You'll cook your soup for 3 - 4 hours on a medium heat. Stirring occasionally and checking to see if you need to add any more water.
  • 6. When soup is ready, I take out the ham bone and ham. I dice up the ham in small pieces and place back down in the soup. I usually put the ham bone back into the soup till I'm ready to freeze up what is left over.

2 (14 ounce) cans fat-free chicken broth
1 cup water
1 lb frozen baby lima bean (3 cups)
1 large onion (for about 1 cup chopped)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon bottled minced garlic
2 tablespoons cornstarch
sour cream (optional for garnish)
bacon bits (optional for garnish)
snipped flat leaf parsley (optional for garnish)

Steps:

  • In a soup pot or Dutch oven, place the broth and water over high heat. Add the lima beans and cover.
  • Peel and chop the onion and add it to the pot. Add the salt, pepper and garlic.
  • Keep the pot covered until the mixture comes to a boil. Then uncover and stir. Cover the pot and cook on medium-high, keeping a steady boil for 10 minutes, or until the beans are tender.
  • Remove the soup from the stove. Using an immersion blender, puree the soup until it is smooth (or you can use a potato masher to do this). Place the pot over medium heat.
  • In a small jar that has a lid, add the cornstarch and 1/4 cup cool tap water, and shake to mix well. Drizzle the cornstarch mixture into the soup, and stir constantly until the soup thickens, about 2 minutes.
  • Serve immediately, garnished with bacon bits, sour cream and parsley, if desired.

1 (1-pound) bag frozen baby lima beans, thawed (3 cups)
2 1/2 cups water
1 medium onion, finely chopped
1 large garlic clove, minced
3 tablespoons unsalted butter
3/4 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen baby peas
2 cups coarsely chopped trimmed mustard greens
2 tablespoons chopped fresh chives

Steps:

  • Purée 1 cup lima beans with water in a blender until smooth, about 1 minute.
  • Cook onion and garlic in butter in a 3-quart heavy saucepan over moderately low heat, stirring, until softened, about 6 minutes. Add purée, remaining lima beans, salt, and pepper and simmer, covered, stirring occasionally, 3 minutes. Stir in peas and mustard greens and simmer, covered, 3 minutes.
  • Stir in chives and season with salt and pepper.
