AWESOME FRIED CHICKEN GIZZARDS
My husband loves chicken gizzards, the frozen ones are so expensive in the stores, I decided to try to make my own. He was very impressed with them and said they were actually better than the store bought ones. I personally have never liked them, but for him, I tried one. And believe it or not, LOVED IT! My daughter loved them as well, of course, I didn't tell her what it was until she tried it. So now we have a new meal for our household.

Steps:
- I started with a package of onion ring batter, made as instructed on the box.
- To that I added the rest of the seasonings. Keep tasting the batter as you add the seasonings, so it is to your liking.
- Put the gizzards into the batter, and stir to make sure all pieces are thickly coated.
- In a large, deep frying pan. Put in about an inch of oil. Heat over high heat.
- Drop a small amount of batter in to test the oil.
- When the oil is ready, put in your gizzards. I cooked mine for about 10-15 minutes per side. The longer you cook them, the more tender they will get.
- Remove from oil to a plate with paper towels for draining.
- You can make as many pounds as you would like if you are feeding a lot or just a few.

- In a large resealable plastic bag, combine chicken, buttermilk and salt. Refrigerate for 8 hours or overnight.
- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- In a large resealable plastic bag, combine flour, Italian dressing mix, poultry seasoning, salt and pepper. Remove chicken from buttermilk, and coat well with flour mixture. Let set on a plate for about 10 minutes.
- Fry in hot oil until meat is no longer pink, and breading is golden brown, about 20 minutes. Drain on paper towels.

- Wash chicken and soak in salt water for about 20 minutes.
- I use a large bowl and 1 teaspoon of salt.
- Preheat oven to 425°.
- Place oil and butter in a shallow baking pan and set in the oven to heat and melt.
- Combine the flour and seasonings and dredge the chicken in the flour mixture.
- Remove hot pan from the oven and arrange the chicken in the pan skin side down,but do not crowd.
- Place in the oven and bake for 30 minutes, turn chicken so that the skin side is up and continue baking for 20 to 30 minutes more, until nicely browned and juices run clear.
- Remove onto a platter and let cool at least 10 minutes.
AIR FRYER ESSENTIALS: AWESOME FRIED CHICKEN
Made this up the other day. And, tried a new kind of marinade (new to me), with a tasty mingling of flour and spices. The end result came out juicy, with an awesome crispy exterior. The buttermilk and hot sauce marinade gave it a perfect "Southern" tang, with just a hint of vinegary heat. So yummy. So, you ready... Let's...

- 1. PREP/PREPARE
- 2. You will need an air fryer or a convection oven to make this recipe. In addition, an oil bottle, for spraying, would be good to have. In fact, it would be really good to have.
- 3. I took three bone-in, skin-on chicken breasts, and put them in three marinades. The first I cooked up after 2 hours, the second after 24 hours, and the third, after 48 hours. The 2-hour marinade was okay but lacked much flavor. The 24- and 48-hour marinades came out tasting the same... lots of good buttermilk flavor with just a hint of heat. Conclusion: In terms of time, 24 hours is the sweet spot for the marinade.
- 4. Gather your ingredients (mise en place).
- 5. Place the chicken in Ziploc bag, or non-reactive dish, along with the buttermilk, and hot sauce (optional tabasco).
- 6. Cover and place in the fridge for 24 hours, or as long as you can afford.
- 7. Preheat your air fryer to 350f (175c).
- 8. After the allotted time mix the coating ingredients in a shallow dish, remove a chicken piece from the marinade, and thoroughly coat with the flour/spice mixture. Repeat for as many pieces you can comfortably place into the basket of your air fryer.
- 9. Chef's Note: Do not overlap or crowd the basket. Each piece needs a bit of space.
- 10. Place into the preheated air fryer, and use the following method: 1. Cook for fifteen minutes. 2. Open the basket and spray the chicken with a light oil, until you do not see any dry spots. 3. Continue to cook for fifteen minutes. 4. Open the fryer and take the chicken's temperature. -- Chicken is fully cooked at 165f (75c). 5. Continue to cook, checking every few minutes, until the chicken is about 5 - 7 degrees from being done. 6. Crank the heat up to 400f (205), for about 3 - 4 minutes. This will crisp up the skin. 7. Remove from air fryer, and allow to rest, before serving.
- 11. PLATE/PRESENT
- 12. Carve, and serve with sides of your choice. Enjoy.
- 13. Keep the faith, and keep cooking.
