SOFT, MOIST AND GOOEY CINNAMON BUNS
I tried long and hard to find the ultimate cinnamon bun recipe for bread machines...this is it. They are so soft and yummy!

Steps:
- In a bread machine pan, place the milk, beaten egg, melted butter, water, vanilla pudding mix, bread flour, sugar, salt and yeast in the order recommended by the manufacturer. Select the Dough cycle.
- When cycle is finished, remove the dough, and knead for 3 to 5 minutes. Roll out to a large rectangle.
- Mix together the softened butter, brown sugar and cinnamon. Spread over dough. Sprinkle with chopped walnuts and raisins, if desired. Starting with the widest end, roll the dough into a log. Pinch to seal seams. Cut into 1/2 inch to 1 inch slices, and place in a greased 9x13 inch pan. Place in a draft-free space, and allow to rise until doubled.
- Preheat the oven to 350 degrees F (175 degrees C). Bake for 15 to 20 minutes. To make frosting, mix the milk, confectioners sugar, softened butter and vanilla in a small bowl. Spread over warm cinnamon rolls.

I have tried countless recipes for Cinnamon Rolls trying to find the perfect recipe. This is it!! I can't ever make enough of these at home! They are so easy to make too - don't you just love bread machines!

Steps:
- Place all ingredients in bread machine in order recommended by manufacturer. Select DOUGH cycle press Start.
- In separate bowl combine cinnamon and sugar.
- After dough has finished, turn it out onto lightly floured surface and roll into a 16x24 rectangle. Spread dough with butter and sprinkle evenly with cinnamon and sugar mixture. Roll up dough and cut into 12 rolls. Place rolls in lightly greased 9x13 pan. Cover and let rise until almost doubled (about 30 min). Preheat oven to 400 degrees F.
- Bake rolls for 14-16 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners sugar, vanilla extract and salt. Spread frosting on warm rolls.

- Put yeast in bread machine first on bottom, then flour, sugar and salt.
- Then melt butter in microwave. Add beaten egg, milk and water.
- Pour onto dry ingredients in bread machine on the dough setting.
- When dough is done, put it onto a lightly floured surface.
- Knead in enough flour to make it easy to handle.
- If it is too elastic, cover and leave 10 minutes.
- Use floured rolling pin to roll out dough on floured surface.
- Roll out into rectangular shape to approx 1/4-inch thick.
- Use filling and spread over entire surface of dough with spoon.
- Roll up dough.
- Cut into circle with a sharp knife about 1-inch thick; place these in a greased 9x13-inch pan.
- Cover with a tea towel and leave in a warm place for approx 30 minutes, until double in size.
- Bake in a 350° oven for about 25 minutes, light brown on top.
- When done, make glaze and swirl over buns.

- Place all of the cinnamon roll dough ingredients in your bread machine in the order recommended by your machine's manufacturer.
- Set the machine to run the dough cycle.
- When the cycle is finished, remove the dough and knead it enough to punch down.
- Roll out the dough to a 17 X 10-inch rectangle.
- Place butter, brown sugar, and cinnamon in a small bowl. Mix well.
- Heat the filling in the microwave for 10 seconds to make it spreadable.
- Spread the filling over the rolled-out dough with a rubber spatula. Get as close to the edges as possible.
- Sprinkle nuts and/or raisins over the dough, if using.
- Starting with the widest end, roll the dough into a tight log. Pinch the edge to seal.
- Cut the log into 1-inch slices.
- Place the slices cut-side down in a lightly greased baking dish with sides.
- Put the dish in a warm draft-free place and allow the dough to rise until double.

- Slowly add in the powdered sugar, beating with a mixer, until all powdered sugar is incorporated.

- Add ingredients according to manufacturer's suggested order and set on dough cycle.
- Turn onto lightly floured board.
- Roll out to a rectangle about 10x18 inches.
- Brush with melted butter; sprinkle with cinnamon-sugar mixture and pecans, if used.
- Starting at long end, carefully roll up; pinch seams together.
- Measure and cut 1-inch slices.
- Place cut side up on a buttered baking sheet.
- Cover with a slightly dampened towel and let rise in a warm place for about 45 minutes to 1 hour.

BREAD MACHINE CINNAMON BUNS WITH WALNUTS & RAISINS
This is a take on recipe #43744: Bread Machine Cinnamon-Pecan Buns, which I changed a little. The dough is so wonderful and rises incredibly, and the sauce - oh, the sauce! They're just packed with walnuts and raisins, too - a real treat! I've also added an optional drizzle, for those that must have icing on their cinnamon buns!

- Measure first 8 ingredients into bread machine (refer to your bread machine instructions for the proper order). Select the dough cycle.
- Meanwhile, prepare syrup: Boil together butter, water and brown sugar for 1 minute.
- Immediately, pour syrup into a 9 X 13 pan; tilt pan to cover bottom evenly.
- Arrange walnuts, flat side up on syrup; scatter raisins on top.
- When bread machine cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle.
- Roll dough into a 12 X 18 inch rectangle. Brush with melted butter.
- Sprinkle evenly with the mixture of brown sugar and ground cinnamon. Sprinkle chopped walnuts and golden raisins on top. Starting at large side, roll up jelly-roll fashion. Pinch edge to seal. Cut roll into 12 equal pieces. To avoid too much filling from escaping, I first cut the roll in half, then each half in half, and then each quarter in thirds. Place rolls flat over syrup.
- Cover and let rise 30 minutes or until double in volume.
- Remove cover and bake at 375 for 30-35 minutes, until golden brown.
- Loosen edges and carefully invert onto serving tray.
- To make icing: Mix icing sugar and cinnamon together; add maple syrup and 1 tbsp milk, mix. If needed, add more milk. Icing should be stiff - but not too stiff - and not too runny either. I like to leave the icing on the side to allow folks to decide to use it or not.

And even better, the bread machine does the hard work for you! I've added a few extra filling ingredients that I like. These would be a wonderful Thanksgiving or Christmas morning treat! ...

- 1. DOUGH: Place ingredients in bread pan in order they are listed. Set on 2 lb loaf and select the dough cycle.
- 2. Once the bread machine had done the work, turn dough out onto a floured surface. Cover with a clean dish towel and let rest for 10 minutes.
- 3. Meanwhile, mix brown sugar and cinnamon together, cover; set aside.
- 4. Once dough has rested for 10 minutes, roll out into a 16 x 21-inch rectangle. Spread dough evenly with 1/3 cup softened butter and sprinkle evenly with brown sugar/cinnamon mixture. If desired sprinkle with nuts and raisins (or diced apples).
- 5. Roll dough up (starting with long edge) tightly; slice (using sharp knife) into 12 rolls. Place rolls into a lightly greased 9 x 13-inch baking pan. Cover and let rise until nearly doubled (about 30 minutes). NOTE: You can cover and put in refrigerator over night. They will rise in the refrigerator and this will take a lot of prep time off the next morning. IF baking the next day, take rolls out of the refrigerator 30 minutes prior to baking.
- 6. Preheat oven to 400 degrees. Bake for 20 to 23 minutes. After 15 minutes when rolls had lightly browned, I tented with a piece of foil to keep from over browning. NOTE: the original recipe called for 15 minutes baking time, however, this was not long enough for the centers of rolls to cook completely in my oven. Watch and check after 15 minutes; add addtional time as needed for your oven.
- 7. FROSTING: mix all ingredients until creamy. Can store in the refrigerator. Divide evenly; spread over warm rolls.
