MARINATED GRILLED TERIYAKI CHICKEN

Rich and tender chicken thighs are soaked in a savory, sweet and tangy teriyaki marinade then cooked over a gas grill to achieve the perfect char. It's an easy recipe even the pickiest eaters will love!

1/2 cup low-sodium soy sauce*
1/3 cup mirin
3 Tbsp packed light brown sugar
2 Tbsp honey**
2 Tbsp rice vinegar
1 Tbsp minced garlic
1 Tbsp peeled and minced fresh ginger
1/2 tsp toasted sesame oil, (or more to taste)
2 1/2 lbs boneless skinless chicken thighs (or breasts (7 medium, trim away fat))
3 Tbsp water
1 1/2 tsp cornstarch
Sliced green onions (and sesame seeds, for serving (optional))

Steps:

  • In a medium mixing bowl whisk together soy sauce, mirin, brown sugar, honey, rice vinegar, garlic, ginger and sesame oil. Ladle out 1/2 cup marinade (I like to leave most of the garlic and ginger bits in the bowl), and reserve the 1/2 cup in container in refrigerator.
  • Place chicken in a gallon size resealable bag, pour remaining marinade over chicken. Seal bag while pressing out excess air, rub marinade over chicken (or marinate in a bowl).
  • Transfer to refrigerator and let marinade 1 - 8 hours.
  • Near the end of marinating preheat a grill over medium heat (about 375 degrees). Clean grill grates and brush lightly with oil.
  • Grill chicken about 5 - 7 minutes per side (time will vary based on thickness and breasts will cook faster than thighs), until center registers 165 degrees.
  • While chicken is grilling heat reserved 1/2 cup marinade mixed with 2 Tbsp water in a small saucepan. Bring to a simmer over medium-high heat, then reduce to low and let simmer about 2 - 3 minutes.
  • Whisk together remaining 1 Tbsp water and the cornstarch in a small bowl until well combined, then whisk into sauce. Let cook about 30 seconds longer while stirring constantly. If needed you can season sauce with a little salt.
  • Brush sauce over grilled teriyaki chicken. Serve warm garnished with green onions and sesame seeds if desired.

Two days may seem like an awful long time to marinate but I promise you it is worth it! This recipe was given to me by my Hawaiian friend, Norm. It is an authentic, no fail, super yummy way to prepare teriyaki. I have used this same recipe for anywhere from 2-6 lbs. of meat.

2 1/2 cups soy sauce
3/4 cup water
1 1/2 cups sugar
1 bunch green onion, chopped
8 ounces gingerroot, sliced
2 whole bulbs of garlic, each clove peeled and smashed
3 lbs boneless chicken thighs

Steps:

  • In a large bowl, mix soy sauce, water, and sugar until sugar dissolves.
  • Add green onions, ginger, and garlic to bowl.
  • Add chicken pieces.
  • Cover and marinate 48 hours.
  • Grill chicken on low 9 minutes each side or until cooked all the way through. (Make sure to grill on low or, if broiling, broil away from the heat. The high sugar content of the marinade will cause the chicken to burn if it is cooked at too high a temperature).

This is a family favorite and so simple. I first got the recipe from a friend who was a chef in a Japanese restaurant. When I married my husband he was using the same recipe he got from his Japanese ex-mother-in-law. It is so versatile we have used it for chicken breasts, wings, thighs, salmon, halibut, beef-kabobs - even veggies!

8 -12 chicken drumsticks
1 cup soy sauce
1 cup brown sugar, packed
1 cup water
3 tablespoons olive oil or 3 tablespoons canola oil
1 teaspoon ginger (optional)

Steps:

  • Heat oil in a large saucepan over medium high heat.
  • Brown chicken pieces in hot oil.
  • While chicken is browning, mix together the soy sauce, sugar, water, and ginger.
  • Add the sauce to the chicken.
  • Bring to a boil and then reduce heat to medium low and let simmer, uncovered, for about 20 to 30 minutes or until chicken is done and sauce has thickened.
  • Turn chicken pieces occasionally during cooking process.
  • Serve over cooked rice.(We use short grain "sticky rice" prepared in a rice cooker.).
  • Serve excess sauce along side, people always seem to want more of it.
  • To reduce the calories, skinless chicken may be used.

I got this off the package of No Yolks Noodles and was very pleasantly suprprised. You can use chicken or pork. Very quick, easy and tasty!

9 ounces No Yolks egg noodle substitute
1 (16 ounce) bag broccoli coleslaw mix
1 tablespoon oil
8 ounces chicken breasts or 8 ounces boneless pork chops
5 green onions, chopped
2 cloves garlic (I use more)
1 (10 3/4 ounce) can chicken broth
3 tablespoons teriyaki sauce (I use more)
2 teaspoons cornstarch
1/2 teaspoon red pepper flakes

Steps:

  • Cook NO YOLKS to package directions Add broccoli slaw at 4 minute mark, return to boil and cook for additional 2 minutes.
  • drain and keep warm.
  • In large frying pan, stir fry meat in oil until browned about 5 minutes.
  • Push meat to one side and add onion, garlic, cook 1 minute.
  • Mix 2T chicken broth and the cornstarch in a small bowl, whisk until smooth, pour into garlic and onion mixture.
  • Add remaining broth,teriyaki sauce and red pepper to pan and cook,stirring constantly until mixture thickens and boils.
  • Serve immediately over noodle broccoli mixture.
