GRILLED SALMON WITH LEMON-CUCUMBER SALAD image

2 large cucumbers, peeled, halved, seeded and sliced
1 small red onion, thinly sliced
1 tablespoon chopped fresh dill
1 tablespoon fresh lemon juice
1 teaspoon extra virgin olive oil
salt to taste
1 tablespoon prepared horseradish
1/2 cup non-fat sour cream
freshly ground black pepper
4 King or Copper River salmon fillets, about 4 to 6 ounces each
2 teaspoons olive or canola oil

Steps:

  • Cook:35 minutes 1 For the cucumber salad: 2 Combine the cucumbers, red onion, dill, lemon juice and olive oil in a large mixing bowl. Season to taste with salt. 3 For the horseradish sauce: 4 Combine the horseradish and sour cream in a small bowl and season to taste with salt and pepper. 5 For the salmon: 6 Preheat the grill to medium-high. 7 Brush the salmon fillets with oil and season with salt and pepper. 8 Grill the salmon until it is just cooked through, about 5 minutes on each side. 9 Serve the salmon with a dollop of horseradish sauce and a large spoonful of cucumber salad.
