Here's what you need: bread, avocado, lime, salt, pepper, radishes

4 slices bread, toasted, 1/2 inch (1 1/4 cm) thick
1 avocado
1 lime, juiced
salt, to taste
pepper, to taste
8 radishes, thinly sliced

Steps:

  • Thinly slice all the fresh radishes. Set aside.
  • Cut the avocado in half, and use a knife to slice the inside, then scoop out the avocado into a bowl.
  • Mash the avocado with lime, salt and pepper.
  • Spread the mixture on some toasted bread.
  • Top the avocado toast with the sliced radishes and any other garnishes you would like.
  • Sprinkle with salt and cracked pepper.
  • Enjoy!

100g mixed radishes , cut into different shapes
1 tbsp white wine vinegar
pinch caster sugar
1 large avocado
juice 1/2 lime
pinch chilli flakes
4 slices of your favourite bread (we used sourdough)
2 eggs , soft boiled for 6 mins, then rinsed under cold water, peeled and halved)

Steps:

  • Toss the radishes in a bowl with the vinegar, sugar and a pinch of salt. In a separate bowl, mash the avocado with the lime juice, chilli flakes and some seasoning. Toast the bread, then top each slice with a little avocado, half an egg, some pickled radishes and a few more chilli flakes, if you like.

This dish was truly the best breakfast I've had in a long time. A toasted slice of bread topped with soft avocado and the unique flavor of pickled radishes. Delicious.

¾ cup white vinegar
¾ cup water
3 tablespoons honey
2 teaspoons salt
1 bunch radishes, cubed
½ teaspoon whole mustard seeds
1 pinch ground black pepper
1 bay leaf
1 pinch coarse sea salt
1 pinch furikake (Japanese nori seasoning)
1 pinch toasted sesame seeds
1 avocado, cut into 1/4-inch dice
2 slices whole-grain bread
1 bunch sprouted cilantro
1 lemon wedge

Steps:

  • Bring vinegar, water, honey, and salt to a boil in a small saucepan. Remove from heat.
  • Put radishes, mustard seeds, black pepper, and bay leaf in a pint jar with a lid. Pour hot vinegar mixture over the radishes. Let the radishes come to room temperature. Cover with lid and place in the refrigerator for at least 2 hours.
  • Mix coarse sea salt, furikake, and sesame seeds together in a small bowl to create the seasoning mix.
  • Toast bread until lightly brown, about 2 minutes. Top each slice with half the avocado. Top avocado with a portion of the pickled radishes. Sprinkle half the seasoning mix over radishes. Place a small handful of cilantro on top. Squeeze lemon over the toast.
