1/2 cup coconut, toasted, for garnish
3/4 stick (3 ounces) butter
1 tablespoon honey
1 1/2 cups graham cracker crumbs
1 can (14 ounces) sweetened condensed milk
8 ounces cream cheese
2 ripe avocados, peeled and pit removed
1/4 cup lime juice
1 teaspoon vanilla
1/8 teaspoon sea salt

Steps:

  • Preheat the oven to 325 degrees. To make the crust, melt the butter in a small saucepan, over low heat. Stir in the honey. Add the graham cracker crumbs and mix well. Pat the crumbs evenly onto the bottom and up the sides of a 9inch pie plate. Bake the pie shell for 12 to 15 minutes. Remove from the oven and cool. In a medium bowl, combine the condensed milk and cream cheese. Blend well with an electric mixer. Mash the avocados with the lime juice and add to the milk mixture. Add the vanilla and salt, and beat until smooth. Turn into the cooled crust. Garnish with the coconut, cover, and chill for 2 to 6 hours before serving.

10 whole graham crackers
2 tablespoons sugar
3 tablespoons unrefined coconut oil, melted
2 ripe avocados, peeled and pitted
1 15-ounce can sweetened cream of coconut
1 tablespoon grated lime zest, plus 1/3 cup fresh lime juice (from about 6 limes)
1/4 teaspoon salt
1 1/2 cups frozen coconut whipped topping (from one 9-ounce container), thawed, plus more for serving

Steps:

  • Preheat the oven to 350˚. Coat the bottom and sides of a 9-inch pie plate with vegetable oil. Pulse the graham crackers and sugar in a food processor until finely ground. Add the vegetable oil and coconut oil and pulse until the mixture looks like wet sand. Press the mixture into the bottom and up the sides of the prepared pie plate. Bake until set, 12 to 15 minutes. Transfer to a rack; let cool completely.
  • Clean out the food processor. Add the avocados, cream of coconut, lime zest and juice and salt and puree until smooth. Pour the mixture into a large bowl and fold in the whipped topping until combined. Spoon the filling into the crust and smooth the top. Freeze until firm, about 6 hours.   • Combine pretzels with brown sugar and butter. Press into bottom and sides of pan. Refrigerate crust until well chilled. In a small bowl, combine lime juice and unflavored gelatin; let stand 4 to 5 minutes or until softened. In a large bowl or the food processor, combine gelatin mixture, mashed avocados, and sweetened condensed milk. Pour mixture into prepared graham cracker pie crust. I made this up by combining a few different recipes when I was looking for a dessert recipe after being newly diagnosed as a diabetic. The ingredients might seem like a strange combination, but it's really yummy. Very light & fluffy. The cooking time is really chilling time. And please ignore the nutritional analysis on the side as I noticed it doesn't take into consideration that the Jello is sugar-free or the Cool Whip is light. And it doesn't contain the yogurt at all.

  • 1. Preheat oven to 325. Scoop avocado from shells, chop and mash (or put chunks into blender, blend until smooth).
  • 2. Beat egg yolks until thickened. Add: avocado, milk, 4 Tbsp lemon juice, salt and vanilla. Beat until smooth.
  • 3. Pour into pie shell, bake for 20 minutes.
  • 4. Cool pie for 30 minutes. Combine sour cream, sugar, and remaining 1 Tbsp lemon juice. Spread over pie. Bake 10 more minutes.

juice of half a large lemon

4-6 green onions - finely sliced
1 and 1/3 cups small cooked shrimp - rinsed, drained, and dried
6 large eggs - hard-boiled, peeled and finely chopped
1/2-2/3 cup cream cheese - softened and whipped
1/2-2/3 cup sour cream
fine zest of half a large lemon
GARNISHES
1/3 cup finely minced, fresh curly parsley
3-4 tablespoons black or red caviar - drained and dried
a few thin lemon slices - cut in half and twisted

Steps:

  • In a small bowl, combine mashed avocadoes, lemon juice, salt and pepper until well blended. Evenly spread in a 9-10 inch ceramic quiche pan or glass deep-dish pie plate. Evenly sprinkle the green onions over the avocadoes and press down gently. Layer the shrimp evenly atop the green onions and press down gently. Spread the eggs evenly over the shrimp and press down gently. Add the sour cream and lemon zest to the cream cheese and whisk until well blended/smooth. Carefully spread the cream cheese mixture evenly over the egg layer and seal to the pan edges. With the back of a spoon, make swirls in the cream cheese mixture. 1 T orange juice

  • Take a pre made crust and lay washed and dried raspberries along bottom of crust. In a double broiler melt chocolate chips with milk and vanilla. Add sweetener to taste. Mix well, and take off from heat after fully melted so that it does not burn. In a separate bowl mash up the avocado, or pulse in a food processor. Add in orange juice, Get all lumps out. After chocolate cools a bit mix it in with mashed avocado. This mixture should be thick and creamy. Test the sweetness level. Pour over raspberries and place in fridge to set.
