Tex-Mex Turkey Burgers with Avocado Mayonnaise image

1 1/4 pounds lean ground turkey
2 cloves garlic, grated
2 teaspoons hot smoked paprika
Kosher salt and freshly ground pepper
1 avocado, halved
3 tablespoons mayonnaise
Juice of 1 lime
1 tablespoon vegetable oil
4 slices pepper jack cheese (about 3 ounces)
4 sesame potato buns
Shredded lettuce and tortilla chips, for topping

Steps:

  • Combine the turkey, garlic, paprika, 3/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 1/2-inch-thick patties; set aside.
  • Combine 1/2 avocado, the mayonnaise, lime juice and 1/4 teaspoon salt in a medium bowl; mash until smooth. Thinly slice the remaining 1/2 avocado and season with salt and pepper. Set aside for topping.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat (or preheat a grill to medium high and oil the grates). Add the burgers and cook until browned, 3 to 4 minutes per side. Top each burger with a slice of cheese; cover and cook until the cheese melts, about 30 seconds.
  • Meanwhile, split and toast the buns; spread the avocado mayonnaise on the cut sides. Serve the burgers on the buns with lettuce, the sliced avocado and tortilla chips.

1/2 lemon, juice of
1/4 teaspoon salt (or to taste)
1 pinch cayenne pepper (optional)
1/4 cup extra virgin olive oil

Steps:

  • Wash the avocado and cut it in half. Scoop out the flesh and put it into the blender.
  • Add lemon juice, salt, and cayenne pepper and blend together.
  • With blender running, add olive oil slowly. You many have to stop the machine several times to redistribute ingredients. Puree to a smooth creamy mixture.
  • Makes 3/4 cup.

1 large egg yolk
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons Dijon mustard
2 tablespoons lemon juice
3/4 cup olive oil
1 tablespoon boiling water
1 avocado, peeled and pitted
2 tablespoons fresh lime juice
1/2 small red onion, minced
1/2 bunch flatleaf parsley, leaves only coarsely chopped

Steps:

  • In a large mixing bowl, whisk the yolk together with the salt, pepper, mustard, and lemon juice. Add the olive oil in a thin stream, very slowly at first, whisking constantly. Keep whisking until all the olive oil is completely absorbed. Whisk in the boiling water to stabilize the mayonnaise. In another bowl mash together the avocado and the lime juice. Stir the avocado, onion, and parsley into the mayonnaise and cover. If not using right away, refrigerate for up to 2 days.

3 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
2 tablespoons fresh parsley
1 egg yolk
1 teaspoon lemon juice

3 tablespoons fresh breadcrumbs
3 tablespoons wasabi powder
1 avocado, peeled,seeded and pureed
3 tablespoons apple cider vinegar
1 teaspoon cajun seasoning

Steps:

  • For Crab Cakes: Pick through crabmeat gently to remove cartilage.
  • In mixing bowl gently combine all ingredients and portion in to 2 ounce cakes (about 8-10).
  • Dredge in flour and saute half of the cakes at a time in butter, over medium heat, until golden brown on each side.
  • Drain on paper towels.
  • For Avocado Wasabi Mayonnaise: Combine all ingredients and chill well.

  • Mayonnaise:.
  • Roughly chop the avocado and place into your food processor with the mayo, a pinch of salt and pepper and process on high until smooth.
  • Remove from the food processor, place in a bowl and cover the surface with cling wrap.
  • Salsa:.
  • Combine the tomato, onion, parsley, lemon juice, a pinch of salt and pepper and mix.
  • Mix in a touch of olive oil and set aside.
  • Chicken:.
  • Preheat oven to 180 (350 fahrenheit).
  • Cook the bacon in a large heavy based pan, until soft.
  • Add the onion and chilli pepper and continue to cook a couple of minutes, (do not allow onion or bacon to brown), remove from heat and allow to cool.
  • If using whole thigh meat, chop the chicken up roughly and place into your food processor and process until completely minced.
  • Place chicken, contents of pan, egg, lemon zest and thyme into food processor and process until all combined.
  • If mixture is very wet add all the bread crumbs, if only slightly wet add a little less.
  • Add a pinch of salt and pepper and process once again.
  • The mixture should appear slightly oily and shiny when done.
  • Wet your hands and roll small handful size balls of the mix (slightly larger for main course), then press slightly flat.
  • In a non stick fry pan add a liberal splash of olive oil and cook 1-2 minutes per side over med-high heat.
  • Once all the cakes have been seared, transfer to the oven for a few minutes while you organise the serving plates.

6 fresh sage leaves
1 (3- to 4-pound) boneless turkey breast
2 tablespoons unsalted butter, softened
Kosher salt and freshly ground black pepper
12 slices bacon
4 ciabatta rolls
1/2 cup Balsamic Onion Marmalade (page 193)
1 ripe avocado, halved, pitted, peeled, and sliced
4 tablespoons Mayonnaise (page 176)

Steps:

  • Preheat the oven to 350°F.
  • Slide the sage leaves under the skin of the turkey breast and place the turkey on a sheet pan. Rub the skin with the butter and season generously with salt and pepper. Roast the turkey for 1 to 1 1/2 hours, until it reaches an internal temperature of 165°F. Baste the meat with its juices throughout. (Keep in mind that the meat will continue to cook even after it's removed from the oven, so be careful not to cook it too long.) Allow the meat to rest before slicing, or cool completely.
  • In a heavy skillet over medium-high heat, cook the bacon until golden brown and crisp on both sides. Transfer to paper towels to drain.
  • Slice the ciabatta rolls in half. Place the turkey slices on the bottom halves and top with the marmalade. Place the bottom and top halves of the rolls in the 350°F oven and remove once the marmalade is heated through and the bread is toasted. Top the marmalade with the bacon, followed by the avocado. Evenly spread the mayonnaise on the top halves of the rolls. Close the sandwiches, cut into halves, and serve.
  • Note
  • Don't cook the bacon over too high heat or the fat will burn. When you're done, save the fat you've rendered and store it in the freezer. The next time you're roasting some vegetables, toss some bacon fat in with them!

Steps:

  • To make the chipotle mayonnaise, mix in the chipotle puree, cilantro, and lime juice to taste.
  • Toast 3 thin slices of bread and spread each slice with the chipotle mayonnaise.
  • Cover one slice with a crisp lettuce leaf and 3-4 slices avocado, and season with salt and pepper.
  • Add the second piece of toast, mayonnaise side up, and cover with 3 slices of Swiss cheese, sliced tomato, and another layer of lettuce.
  • Set the third piece of toaste, mayonnaise side down, over the lettuce and press down gently.
  • To be traditional, trim the crusts, then cut the sandwiches diagonally to make 4 triangles and secure each with a skirted toothpick.

2 red bell peppers, seeded and halved
1 red onion, cut into 1/2-inch slices
cooking spray (garlic flavored works great)
6 hamburger buns
3 small avocados, peeled and sliced
1 small avocado, peeled and chopped
1/2 cup mayonnaise
2 tablespoons lemon juice
1 garlic clove, minced
1/4 cup fresh basil leaf

Steps:

  • Coat the mushrooms, bell peppers, and onion with cooking spray.
  • Grill onion, covered with grill lid, over medium high heat(350* to 400*) 8 minutes on each side. Grill mushroom 5 minutes on each side(or you may roast in a 425*F. oven). Place bell peppers on grill, skin side down, and grill 4-5 minutes or until skin is blistered(if you can't find fresh red bell peppers, you can buy them already roasted in jars). See note.
  • Peel the bell peppers, and cut into strips.
  • Avocado Mayonnaise: Process all ingredients in a food processor until smooth, stopping to scrape down sides. Cover and chill 2 hours, if desired. Makes 1 cup.
  • Spread the avocado mayonniase on cut sides of buns: place on cooking grate, and grill 1 minute. Place mushrooms, bell pepper strips, and onion evenly on bottom halves of buns. Top each with avoado slices and top bun halves.
  • Note: To grill onion, push water soaked skewers crosswise through the whole onion at 1/2" intervals. Slice between skewers and place skewered slcies on grill.

1 2 3/4 pound chicken, with neck, rinsed and patted dry
1 teaspoon black peppercorns
8 cloves of whole unpeeled garlic, plus 1/2 clove garlic, peeled and chopped
1 medium bulb fennel, with leaves
Coarse sea salt
2 scallions, thinly sliced
1 1/2 avocados
3 tablespoons fresh lime juice, or more to taste
1 large egg yolk
1 tablespoon Dijon mustard
3/4 cup vegetable oil
1/4 cup, plus 2 tablespoons whole milk yogurt

Steps:

  • In a large soup pot, combine chicken, chicken neck, peppercorns and whole garlic cloves. Cut fennel bulb into 1/4-inch dice, and reserve 1/2 cup; add remainder to pot. Chop fennel leaves, and reserve 2 tablespoons; add remainder to pot. Add just enough water to cover chicken, and season generously with sea salt. Bring to a boil, then reduce to a simmer. Cook until chicken juices run clear when sliced at a joint, 20 to 25 minutes. Transfer chicken to a plate and allow to cool completely. Reserve broth for another use.
  • Remove meat from chicken, discarding skin and bones. Cut meat into 1/2-inch pieces. Place in a large bowl with reserved fennel bulb, reserved fennel leaves and scallions. Peel and cut one avocado into 1/2-inch cubes, and add to bowl. Sprinkle with 1 tablespoon lime juice, and toss gently to mix.
  • Prepare mayonnaise: In a small bowl, whisk together egg yolk, 1 tablespoon lime juice, mustard, chopped garlic and a large pinch of salt and pepper. Beginning a drop at a time, whisk in vegetable oil. As it emulsifies, add oil a little faster in a slow, steady stream. When all oil is incorporated and mixture is thick, press remaining half of avocado through a sieve into mixture. Add remaining tablespoon lime juice and yogurt, and whisk to blend. Season to taste with salt and pepper; it should be highly seasoned.
  • Fold 1/3 cup mayonnaise into chicken. There should be just enough mayonnaise to coat ingredients; add more if necessary. Cover and refrigerate for at least an hour. Adjust seasonings before serving, adding more lime juice as desired.

1/4 cup mayonnaise
1 ripe avocado, peeled, pitted and cut up
2 teaspoons lime juice
1/4 to 1/2 teaspoon hot pepper sauce
2 tablespoons chopped fresh cilantro
4 (6 to 8-oz.) fresh tuna steaks
1 to 2 tablespoons olive oil
1 1/2 teaspoons peppered seasoned salt
1 teaspoon cumin

Steps:

  • Heat grill. In food processor bowl with metal blade, combine all mayonnaise ingredients. Cover; blend until smooth. Place mixture in small bowl. Refrigerate while preparing tuna.
  • When ready to grill, brush both sides of tuna steaks with olive oil; sprinkle with peppered seasoned salt and cumin. Place on gas grill over medium-high heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 8 to 12 minutes or until fish flakes easily with fork, turning once. Serve tuna steaks with avocado mayonnaise.

1 avocado, skinned and pitted
1 tablespoon lime juice
1 tablespoon cilantro, fresh
1/2 teaspoon salt
1/4 cup canola oil

Steps:

  • Place avocado , line juice, cilantro and salt in Master Prep Pitcher. Secure top and pulse for 10 seconds until combined.
  • Open pour sprout on top of Pitcher and pulse the mixture in 10 second bursts as you slowly drizzle in the canola oil in a thin, yarn-thick stream. Combine this process until all of the canola oil has been combined and mayonnaise is dense and creamy.
  • Cover and store refrigerated for up to one week.
  • BOB'S TIPS: Set out all of your ingredients before cutting into the avocado to keep it from turning brown before you've had the chance to turn it into mayonnaise. The acidity of the lime juice will stop the process dead in its tracks.

2 6-ounces salmon fillets,about 1/2 inch thick, skinned
1 cup dry white wine
1 cup water
1 thin onion slice
1 fresh parsley spring

Steps:

  • Combine salmon, wine, water, onions, and parsley in 8-inch skillet. Bring to simmer over low heat and cook 5 minutes per 1/2 inch thickness of fish, basting occasionally. Cool completely in liquid. Transfer salmon to plates using slotted spatula. Cover with plastic wrap and refrigerate until chilled.
