FRIED AVOCADO BITES



Fried Avocado Bites image

Creamy on the inside and crispy on the outside, these tempura-fried avocado bites are the perfect appetizer for your next get-together.

Three 8-ounce avocados, halved and pitted
Fine salt
2 tablespoons fresh lime juice
2 tablespoons sugar
1/2 teaspoon Asian chili garlic paste
Vegetable or canola oil, for frying (about 8 cups)
1 cup seltzer
3/4 cup all-purpose flour
1 large egg
1/4 cup loosely packed fresh cilantro leaves, for garnish
1 tablespoon Asian fish sauce

Steps:

  • Special equipment: a deep-fry thermometer
  • Line a small rimmed baking sheet with parchment. Score the flesh of each avocado half to the skin with 2 lengthwise and 3 crosswise cuts, to make 12 chunks per half. Ease the chunks out of the skins with a large spoon, and spread them in an even layer on the prepared baking sheet. Sprinkle with 1/2 teaspoon salt, and freeze for 1 hour.
  • Meanwhile, make the dipping sauce: Whisk together the lime juice, sugar, fish sauce and chili garlic paste in a small bowl until the sugar is dissolved; set aside.
  • Fill a large, heavy-bottomed pot or a Dutch oven with about 1 1/2 inches of oil. Attach a deep-fry thermometer, and bring to 360 degrees F over medium heat.
  • Whisk together the seltzer, flour, egg and 1/4 teaspoon salt in a medium bowl until smooth. Submerge half the avocado chunks in the batter. Scoop them out with a slotted spoon, letting excess batter drip back into the bowl, and add them to the hot oil, being careful not to splash. Fry the avocado chunks, turning frequently, until deeply golden brown, about 4 minutes. Transfer them to a paper towel-lined plate, and sprinkle right away with some salt. Bring the oil temperature back up to 360 degrees F. Repeat with the remaining avocado chunks. Transfer all the chunks to a serving plate, and garnish with cilantro leaves. Serve immediately with the dipping sauce.

COWBOY CAVIAR

Had something similar at a New Year's Eve Party. Since I was hosting a Packers vs Cowboys gathering, decided to make some to go with our taco bowls. Maybe it should be called Packers Caviar? Nah, doesn't have the same ring! Serve with crackers, tortilla chips, crudités or as part of a taco salad or bowl!

1 can(s) black beans, drained & rinsed (15 oz)
1 can(s) black-eyed peas, drained & rinsed (15 oz)
1 can(s) white shoepeg corn, drained (14 oz)
1 avocado, diced
1 Tbsp lime juice
2 roma tomatoes, diced or 1 cup grape tomatoes, halved
1/2 medium green pepper, diced
1/2 red pepper, diced
1/2 medium onion, minced
4-6 green onions, sliced
2 Tbsp minced pimento (optional)
1 tsp garlic salt
1/2 tsp garlic powder
2 Tbsp minced cilantro
1/2 c prepared italian dressing
salt and pepper to taste
red pepper flakes to taste

Steps:

  • 1. Mix ingredients in large bowl. Sprinkle the lime juice on the avocado before you stir it in. Stir together. Adjust seasonings to taste.
  • 2. PS I happened to have a started jar of pimento in the fridge - otherwise wouldn't have included it!
  • 3. PPS Feel free to use "real" garlic instead of the garlic salt and powder!

AVOCADO AND RIVER-TROUT CAVIAR

3 avocados, two and one-half inches wide at center
Lemon juice
10 tablespoons sour cream
8 teaspoons chopped chives, approximately
10 tablespoons red caviar
5 teaspoons black caviar (see note)

Steps:

  • Cut avocados in half; remove skin and pits. Slice each half lengthwise into one-quarter-inch-thick slices. You need 20 slices. Brush with lemon juice to prevent darkening. Reserve leftovers for other uses.
  • Put two slices of the avocado together to form a circle. Fill center with one tablespoon sour cream. Sprinkle with one-half teaspoon chives.
  • Cover this almost completely with one tablespoon red caviar, leaving a touch of sour cream showing. Sprinkle with a little more chives and spoon one-half teaspoon black caviar down the center. Continue until all of the slices are used.

4 hard boiled eggs
mayonnaise
2 ripe avocados
1/2 small red onion, finely chopped
1 jar red caviar
1 dozen small, prebaked pastry or phyllo shells

Steps:

  • Mash peeled eggs very fine (or chop fine in food processor, add mayonnaise and mix well. Set aside. Puree avocados in food processor until very smooth. Spoon a layer of avocado into each shell, place bout 1/2 tsp chopped onion on top, then top with egg mixture (a pastry bag works well for this). Make sure avocado is completely covered. Top with 1/4 tsp caviar. Serve chilled.

TEXAS CAVIAR WITH AVOCADO



Texas Caviar with Avocado image

A delicious party dip with beans, tomatoes, onions, and lots of diced avocado. A variation on 'Texas Caviar'; one bite and you won't leave the bowl. Serve with 'scoop' tortilla chips.

This is a super way to serve lumpfish caviar. I wouldn't do this with Russian Buluga it would be wasted .

1 large avocado, peeled and mashed (or 2 small)
3 tablespoons red onions, chopped finely
6 hard-boiled eggs, chopped finely
3 tablespoons mayonnaise
1 (3 1/2 ounce) jar lumpfish caviar

Steps:

  • Press the mashed avocado into the botton of a 8" or 9" pyrex pie plate.
  • Sprinkle the chopped onion over the avocado.
  • Combine the egg and Mayo.
  • Place gently over the onion.
  • Spoon the Caviar very gently on top.
  • Chill& serve with crisp sesame seed crackers or or small pumpernickel rounds.
