AVOCADO PATE

This is a mild flavored pate so don't expect a guacamole spread. The recipe is easy to double for buffets or a party. It is very important to get good tasting and textured avocados for this dish. They should be ripe but firm, I once made this and the avocado was over ripe, the taste was bland and it would not firm up properly. The amounts given are not extremely vital, there is room for a little more or a little less of most ingredients, but in this case I would go easy on the garlic. I serve this with toast, herb or homemade melba toast, and sometimes substitute the nuts with very finely chopped red bell pepper. For a dinner party I put the pate in individual little molds, this amount makes then about 4 servings. If you have some leftover, its nice on bread with some slices tomato.

Number Of Ingredients 10

1 1/2 cups mashed avocados, depending on the size you will need 2 to 3 avocados
4 -5 ounces cream cheese
1 tablespoon finely chopped green onion, i use only the tops
1 tablespoon finely chopped parsley
lime juice, i start with about 1 teaspoon
1 clove garlic, crushed
1 pinch chili powder
salt and pepper
some more chopped parsley, for serving
2 tablespoons chopped pistachio nuts (optional)

Steps:

  • Blend or process avocado, cream cheese, onion, parsley, limejuice, garlic and chili powder until smooth.
  • Taste for salt and pepper and if more lime juice is needed.
  • Line a dish/mold with cling film/ plastic wrap, sprinkle the nuts in the bottom, spoon in the avocado mix.
  • Cover and put in the fridge for about 3 hours.
  • When ready to serve, unmold and sprinkle with some more parsley.

5 tablespoons unsalted butter, melted
1 1/2 cups graham cracker crumbs
1 tablespoon granulated sugar
Pinch of salt
2 medium hass avocados
1 8-ounce package cream cheese, at room temperature
1 14-ounce can sweetened condensed milk
2 1/2 tablespoons fresh lime juice
1 1/2 tablespoons fresh lemon juice
Pinch of salt
Whipped cream or confectioners' sugar, for garnish (optional)

Steps:

  • Make the crust: Preheat the oven to 350 degrees F. Brush an 8-inch springform pan with some of the melted butter. Mix the remaining butter with the graham cracker crumbs, sugar and salt in a bowl. Press the mixture into the bottom and up the sides of the prepared pan. Bake until golden brown, about 15 minutes. Cool completely on a rack.
  • Make the filling: Halve and pit the avocados, then scoop out the flesh and chop. Transfer to a bowl, add the cream cheese and beat with a mixer on medium speed until smooth. Add the condensed milk, lime and lemon juices, and the salt and beat until fluffy, scraping the bowl as needed. Pour the filling into the crust, press a piece of plastic wrap directly on the surface and chill at least 4 hours.
  • Remove the springform ring and slice the pie. Garnish with whipped cream or confectioners' sugar, if desired, and serve immediately (the top will start to brown as the pie sits).

When I lived in California, I had avocado trees in my backyard. So I came up with this about 38 years ago. Don't tell anybody it has avocado in it, they will think it's key lime pie! It's so easy and good!

1 avocado, mashed
1 (14 ounce) can sweetened condensed milk
ΒΌ cup fresh lemon juice, or to taste
1 (9 inch) pie shell, baked

Steps:

  • Stir milk into mashed avocado. Stir in lemon juice. Combine well, then pour into pie shell. Cover, and refrigerate at least 4 hours. Serve with cool whip.

2 large avocados - halved, peeled, and pitted
2 (3.88 ounce) tins herring fillets packed in oil or Pacific Pilchards
12 pimento-stuffed green olives, chopped
3 pickled gherkins, chopped
2 tablespoons capers, chopped
Worcestershire sauce
4 tablespoons mayonnaise
freshly ground black pepper to taste
4 green onions, finely chopped

Steps:

  • In a mixing bowl, combine avocados herring fillets, olives, gherkins, and capers. Add chopped green onion if desired. Season with Worcestershire sauce and pepper. With an electric mixer, begin whisking together ingredients to make paste. Mix in mayonnaise to bind: for a rough mixture add in about 1 tablespoon mayonnaise, and for a smoother paste add up to 4 tablespoons. Chill for 4 to 8 hours.
