1/2 avocado, sliced
3 -4 tablespoons low-fat cream cheese
2 slices of sturdy wheat bread

Steps:

  • Spread the cream cheese on one side of the bread, layer the ham and avocado. Add sliced fresh tomatoes, sprouts if desired. Slice sandwich in half. Find a location where you can reflect on the day near the water and enjoy. A foamy root beer or cola goes real nice with this.

4 flour tortillas
8 ounces thinly sliced cooked ham
8 slices swiss cheese

Steps:

  • Place 1 tortilla on plate.
  • Layer ham, swiss cheese and avocado slices on tortilla.
  • Fold in sides of each wrap; roll up. Cut each in half.
  • Serve immediatly, or wrap each sandwich in plastic wrap and refrigerate until serving, up to 24 hours.

1/4 teaspoon pepper
1 cup cubed fully cooked ham
1 tablespoon butter
1 medium ripe avocado, peeled and cubed
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • In a large bowl, whisk the eggs, milk, garlic powder and pepper; stir in ham. In a large skillet, melt butter over medium-high heat. Add egg mixture; cook and stir until almost set. Stir in avocado and cheese. Cook and stir until completely set.
