2 teaspoons butter
1/2 cup chopped walnuts
1 tablespoon brown sugar
3 large apples, peeled
3/4 cup apple cider or juice
3 tablespoons cider vinegar
2 teaspoons honey
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup walnut oil or canola oil
5 cups torn romaine
5 cups torn red leaf lettuce
1/3 cup thinly sliced red onion
1/3 cup dried cranberries
1 cup (4 ounces) crumbled Gorgonzola cheese

Steps:

  • In a small heavy skillet, melt butter. Add walnuts and cook over medium heat until toasted, about 4 minutes. Sprinkle with brown sugar. Cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool., Core apples and cut into quarters. Slice apples, but not all the way through, leaving slices attached at the stem end. Place apple quarters in a greased 15x10x1-in. baking pan; fan slightly., In a small bowl, whisk the cider, vinegar, honey, salt and pepper; gradually whisk in oil. Set aside 1 cup for dressing; drizzle remaining mixture over apples. Bake, uncovered, at 425° for 18-22 minutes or until tender., Meanwhile, arrange the romaine, leaf lettuce, onion and cranberries on 12 salad plates. Top each with a roasted apple fan; sprinkle with cheese and candied nuts. Drizzle with reserved dressing.

The ladies ask for the recipe...the men ask me to make sure their wives get a copy of it! Our house is on the edge of town. It has lots of room for gardening (my husband, my parents and grandparents, all lived on farms). I'm a second-grade teacher with two boys, 5 and 2, who "help" Mommy cook.

1 can (20 ounces) crushed pineapple, undrained
2/3 cup sugar
1 package (3 ounces) lemon gelatin
1 package (8 ounces) cream cheese, softened
1 cup diced unpeeled apples
1/2 to 1 cup chopped nuts
1 cup chopped celery
1 cup whipped topping
Lettuce leaves

Steps:

  • In a saucepan, combine pineapple and sugar; bring to a boil and boil for 3 minutes. Add gelatin; stir until dissolved. Add cream cheese; stir until mixture is thoroughly combined. Cool. , Fold in apples, nuts, celery and whipped topping. Pour into a 9-in. square baking pan. Refrigerate until firm. Cut into squares and serve on lettuce leaves.

1 cup dried cranberries
6 slices bacon (cooked and crumbled)
1 red bell pepper (chopped)
1/2 small red onion ( thinly sliced)
1/3 cup feta cheese crumbles
1/2 cup roasted salted pepitas ((or sunflower seeds))
3/4 cup Recipe Caramelized Walnuts (*)
3/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
1/4 cup honey
1-2 tablespoons sugar (to taste)
1 tablespoon poppy seeds
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried minced onions

Steps:

  • Add all of the dressing ingredients to a medium bowl and whisk to combine or shake in a mason jar. Refrigerate while you prepare the salad ingredients then whisk/shake again before drizzling over salad. The dressing can be made up to five days in advance.
  • When ready to serve, toss all of the salad ingredients together in a large bowl. You can either drizzle with desired amount of dressing and toss to combine or if you expect leftovers, drizzle individual salad servings with dressing.
