The basic recipe was handed down from a friend. I added the sliced onion and substituted the 3 cans of cream of mushroom soup with 1 can of cream of mushroom soup with garlic and 2 cans of cream of mushroom soup original. I also added the egg noodles which serves the gravy texture wonderfully.

2 (10.75 ounce) cans cream of mushroom soup
1 (10.75 ounce) can cream of mushroom soup with garlic
1 cup water
1 (1 ounce) package dry onion soup mix (such as Lipton®)
2 teaspoons vegetable oil
1 yellow onion, sliced
4 (4 ounce) beef cube steaks
⅔ (12 ounce) package egg noodles

Steps:

  • Whisk cream of mushroom soup, water, and onion soup mix in a slow cooker until thoroughly combined.
  • Heat vegetable oil in a large skillet over medium heat; cook and stir onion in the hot oil until browned, about 20 minutes. Transfer onion to a bowl, leaving oil in skillet.
  • Brown cube steaks in the hot skillet, about 5 minutes per side. Place cube steaks into slow cooker and top with onions. Cook on Low until cube steaks are tender, 5 to 6 hours.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain. Serve cube steaks and mushroom gravy over egg noodles.

This recipe comes from "Incredibly Easy One Dish" cookbook. I haven't tried it yet, but it looks simple and tasty. I like that it is made in the crockpot. The steaks are sure to be tender.

4 -6 beef cube steaks
2 tablespoons olive oil
2 (10 ounce) cans condensed cream of mushroom soup (undiluted) or 3 (10 ounce) cans condensed cream of mushroom soup (undiluted)
1 -1 1/2 cup water
1 (1 ounce) package dry onion soup mix or 1 (1 ounce) package mushroom soup mix

Steps:

  • Set slowcooker to low.
  • In a large skillet, brown steaks in oil.
  • Place in preheated slow cooker.
  • Mix cans of soup, 1/2 cup water for each can of soup, and soup mix.
  • Pour over steaks.
  • Cover and cook on Low for 4 to 6 hours.

4 cups brewed strong coffee
1 cinnamon stick
8 whole cloves
1 orange strip, peeled as one long strip from one orange, white pith removed
4 ounces orange juice, from the same orange (or orange liqueur)
brown sugar cube, to taste

Steps:

  • In a medium saucepan, simmer together the coffee, spices, and orange rind, about five minutes, taking care not to boil.
  • Strain the liquid through a fine-meshed sieve into four mugs.
  • Add orange juice, stir and add sugar to taste.
  • For extra oomph, add orange liqueur instead of juice.

1 medium onion, sliced
2 tablespoons olive oil
2 cloves garlic, chopped or minced
1 1/2 cups short-grain brown rice
4 cups vegetable broth or bouillon cubes dissolved in hot water
3/4 cup white wine or ale (optional)
2 medium tomatoes, chopped
Handful of fresh or frozen rosemary, basil, oregano, or other garden herbs of your choice
1 15 ounce can of beans of your choice, drained and rinsed (mixed beans are a good choice)
15-20 large leaves of kale, chopped into bite-size pieces
salt and pepper to taste

Steps:

  • Cook the onion on medium-low in a large saucepan or pot until it becomes slightly caramelized. Add the garlic and cook for a few minutes, or until the delicious aroma infuses your kitchen. If necessary to prevent sticking, add a drizzle more olive oil. Add rice and stir until the color darkens, slightly toasted. Again, you may need to add a tad more olive oil here to prevent sticking. Add the broth or bouillon, wine or beer, tomatoes, and herbs. Give a stir and turn up the heat to medium-high. Once it comes to a boil, cover and simmer for 45 minutes, stirring occasionally. (Note: Depending on what kind of rice you use, you may want to adjust how long you cook the rice for.) Halfway through cooking the rice, add the can of beans. Once the rice is cooked to a texture you like, add the kale, salt and pepper, stir and cover for about 5 minutes, or until the kale softens. The rice will not have soaked up all of the juices the way rice is ordinarily cooked. You can eat immediately or heat it up the next day when all the flavors have melded together and the rice has soaked up more of the liquid to make it more stew-like. Top with some grated sharp cheese or hot sauce!
