AUSTRALIAN LAGER AND SPICY CHEESE DIP
I found this on the Foster's Lager website - sounds tasty and easy to make. You can use any beer, I'm sure, but Australian beer would add a special touch of authenticity to this recipe. Posted for Zaar World Tour 2007.

Steps:
- Melt cheese and beer in a saucepan over medium heat.
- Once melted, stir in tomato and cilantro and transfer to serving dish/fondue dish.

- Microwave for three minutes.
- Stir then if needed microwave two more minutes.

- Brown ground beef and 1/4 cup onions in a large nonstick skillet. Break apart as needed. Drain.
- Combine beef with remaining ingredients in slow cooker.
- Cook on LOW 2 1/2 hours, or until cheese is melted.
- Serve from slow cooker with scoop-shaped tortilla chips.
- TIP: The smaller the Velveeta chunks, the faster they will melt.
- VARIATION: Instead of the 1/4 cup onions, use 3/4 teaspoon garlic powder.

- Beat cream cheese in a medium bowl until smooth. Add ingredients in the following order, mixing with the beater after each one: sour cream, Cheddar cheese, beer, jalapeno peppers, garlic powder, onion powder. Cover and refrigerate until flavors have blended and dip has thickened, at least 2 hours.
- Remove from the refrigerator 15 minutes before servings.

SPICY CROCK POT QUESO (CHEESE DIP)
A rich, spicy cheese dip that is a must for parties and get-togethers. It also works well as a sauce. You can make it as mild or as spicy as you like, depending upon the type of sausage and/or Rotel you use.

Steps:
- Crumble sausage and brown in skillet.
- Place Velveeta and Rotel into a crock pot and heat on high.
- Once sausage is browned, add it to the crock pot.
- Continue heating on high, stirring occasionally, until cheese has melted.
- Turn heat down to low, get out the tortilla chips and beer, and enjoy the ballgame.
- This recipe works as a sauce as well.
- If you are having a large get-together, I recommend doubling the recipe, it's usually the life of the snack buffet.
SPICY CHEESE DIP (MICROWAVE)
This is from Qu'est-ce qu'on mange Volume 3. It can be served in a fondue pot and dip bread cubes and asparagus tips.
