3 lbs summer squash
1/2 cup onion, chopped
1/2 cup butter, melted
2 eggs, beaten
1 tablespoon sugar
1/2 cup saltine crumbs
1 teaspoon salt
1/2 teaspoon black pepper
saltine crumbs

Steps:

  • Wash squash, cut in half lengthwise, then in 1/4-inch slices.
  • Combine with chopped onion and cook in water to barely cover until both are tender.
  • Drain thoroughly, pressing out excess water with back of spoon.
  • Mash squash and onion with potato masher.
  • Mix with half the butter, the cracker crumbs, eggs, sugar, to taste, salt and pepper.
  • Pour into greased casserole dish.
  • Pour remaining butter on top and sprinkle with additional cracker crumbs.
  • Bake at 375F for 45-60 minutes, or until top is golden brown and bubbly.
  • NOTE: This recipe is from a restaurant in Smyrna, Georgia called Aunt Fannie's Cabin.
  • Aunt Fannie was a freed slave of an old Georgia family who remained with the family until her death.
  • The menu at the Cabin represented many of the dishes that Aunt Fannie prepared for the family.

A wonderful casserole, even for those who don't particularly care for squash!

2 teaspoons vegetable oil
3 crookneck yellow squash, diced
½ sweet yellow onion, diced
2 tablespoons water, or as needed
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup shredded Cheddar cheese
½ (6 ounce) box dry bread stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
  • Heat oil in a skillet over medium heat; cook and stir squash and onion until tender, 8 to 10 minutes. Add water and simmer to soften squash, 2 to 4 minutes. Stir cream of chicken soup, sour cream, and Cheddar cheese into squash mixture; mix well.
  • Transfer squash mixture to the prepared baking dish; top with stuffing mix.
  • Bake in the preheated oven until cheese is bubbling and stuffing is browned, about 30 minutes.

This takes a bit of preparation time, but is well worth it. It's almost a meal in itself - all that cheese! It's another of the old Alston Family recipes I'm including in our family cookbook.

Number Of Ingredients 16

FIRST LAYER
3 small zucchini or yellow squash, diced
4 eggs, beaten
1/4 c butter, melted
1 c parmesan cheese, grated
salt and pepper to taste
1 Tbsp sugar
1/2 c minced onion
SECOND LAYER
3 to 4 medium sized tomatoes, sliced
salt and pepper to taste
THIRD LAYER
2 large onions, sliced thinly
1 c sour cream
2 c sharp cheddar, grated
1/2 c mayonnaise

Steps:

  • 1. Preheat oven to 350°. Mix FIRST LAYER ingredients together well and spread on the bottom of a 3-quart greased casserole dish.
  • 2. Place tomatoes in overlapping pattern on top, as the SECOND LAYER. Sprinkle with salt and pepper.
  • 3. Place sliced onions over top of tomatoes. Mix the remaining ingredients of THIRD LAYER well, and spread over top of casserole. May sprinkle a little paprika on top for color if desired.
  • 4. Bake at 350° for 45 - 60 minutes, until casserole bubbles around the edges for about 15-20 minutes. Cool slightly before slicing into squares for serving.
