OVEN BAKED MEATBALLS RECIPE
Baked Meatballs hit ya right in the nostalgia zone, whether you actually had an Italian parent or grandparent or just wish you did. About as simple and pure a meatball recipe as you'll find, ground beef, breadcrumbs, eggs, spices, and sauce all come together in one delightful, round shape.

- Preheat oven to 400 degrees and grease a large baking sheet or a casserole dish.
- In a large bowl combine ground beef, panko, eggs, salt, pepper, garlic powder, onion powder, red pepper flakes (if using). Stir with a large spoon or spatula, then use clean hands to mix the ground beef until all ingredients are well incorporated.
- Use a 1/4 cup cookie scoop (or a 1/4 cup measuring cup) to portion out the beef mixture. Roll each into a tight ball and place on prepared baking pan 2 inches apart.
- Transfer to preheated oven and bake for 25 minutes.
- Serve over mashed potatoes or pasta with your favorite marinara sauce or my easy beef broth brown gravy (see note).

EASIEST EVER MEATBALLS AND GRAVY OVER RICE

- Place ground sausage in a bowl. Spray medium skillet with cooking spray and heat over medium-high heat.
- Scoop sausage with a medium disher (or cookie scoop) directly into the hot skillet. (If you don't have a disher, form rounded tablespoons of meat into balls by hand.)
- Cook meatballs about 5 minutes until brown on one side, then use tongs to flip. Cook an additional 5-7 minutes until cooked through. Transfer meatballs to a clean bowl.
- Reduce heat to medium, and add flour and oil to the skillet, whisking together until smooth. Cook 2-3 minutes until flour mixture starts to brown, then very slowly add broth, about ¼ c. at a time, whisking constantly. Stir in milk, and bring gravy to a low boil.
- Return meatballs to the gravy, and spoon gravy over the meat. Simmer for a few minutes before serving over cooked rice.

- In a bowl, combine the egg, rice, onion, parsley, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place on the rack in a pressure cooker. Combine the soup, water and Worcestershire sauce; pour over meatballs., Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium; cook for 10 minutes. (Pressure regulator should maintain a slow steady rocking motion or release of steam; adjust heat if needed.) Remove from the heat. Immediately cool according to manufacturer's directions until pressure is completely reduce.

BROWN GRAVY PORCUPINE MEATBALLS
Very easy meal idea, made with boxed Rice-A-Roni, packaged brown gravy and 1 pound ground beef. Everyone loves this easy homecooked recipe.

- In a large bowl mix ground beef, rice mixture from Rice-A-Roni, half a packet of the seasoning mix from the Rice-A-Roni and the egg. Shape into medium size meatballs.
- Heat a large nonstick skillet on medium high and add oil. Add meatballs and brown on all sides. Turn heat down to medium low, cover with lid, and continue to cook until cooked through, about 7-9 minutes.
- In a large measuring cup or bowl, measure water and add gravy mix. Mix with fork or whisk and add to meatballs in the pan. Turn heat to low, cover and cook 35-40 minutes or until rice is cooked, stirring occasionally and adding additional 1/2 cup water gradually as needed if gravy becomes too thick.
- During the last couple of minutes of cooking, add black pepper. Serve with mashed potatoes, topping with gravy.

- In a large bowl, beat the egg, milk, cornstarch, onion, salt, pepper, nutmeg, allspice and ginger. Add beef; mix well. Shape into 1-1/2-in. meatballs. (Mixture will be very soft. For easier shaping, rinse hands in cold water frequently.) , In a large skillet over medium heat, brown the meatballs in butter, half at a time, for about 10 minutes or until no longer pink. Remove meatballs to paper towels to drain, reserving 1 tablespoon drippings in skillet. , For gravy, add butter to drippings. Stir in flour. Add broth and milk. this has been in my family for decades. sure, its a regular rice and gravy recipe but its a family favorite thats been passed down through the years. Great old fashioned southern dinner here...You can use regular old meatballs, sausage, or even left over chicken.

- defrost and season ground meat.add bread crumbs to help meatballs stick. roll into meatballs.
- roll meatballs into flour.
- heat oil in skillet and add floured meatballs.
- brown meatballs well on all sides. (its good that some of the flour sticks to the bottom of the pan. you don't want to burn them but this buildup will add to the gravy.).
- add just enough water to cover meatballs.
- add 1/2 envelop of soup mix.
- add couple of shakes of Worcestershire sauce.
- stir and scrap bottom of pan until mixture thickens.
- serve on top of rice and enjoy.
- *if you need more gravy add other 1/2 of soup mix and water. or if its not thick enough add some cornstarch.

- Preheat oven to 375°F. Spray a 9 x 13" baking dish with cooking spray and set aside. In a large bowl, stir together ground meat, soy sauce, Worcestershire sauce, chili powder, onion powder, and garlic powder. In another bowl, whisk together cream of mushroom soup and chicken broth. Add rice, and stir. Pour the rice mixture into the prepared baking dish. Using a medium disher or a tablespoon, evenly measure meatballs and drop into the rice mixture. Arrange in straight lines to be sure they all fit. Cover pan with foil, and bake for 40 minutes. Remove foil, and bake an additional 15 to 20 minutes until meatballs are cooked through and most of the liquid is absorbed.

- In a bowl, combine the beef, oats, 1/2 teaspoon salt, pepper, celery salt and parsley. Shape by tablespoonfuls into meatballs. Place meatballs on a greased rack in a shallow baking pan.
