CHOCOLATE SHEATH CAKE
A very rich moist cake that leaves you asking for more. It sounds like a lot of ingredients and a lot of trouble but it is very very easy to make. Requested at a lot of large get-togethers and birthdays. This is a very old recipe given to me by my mother some 40 years ago.

Steps:
- Mix first four ingredients together in a sauce pan and cook on medium heat until the mixture bubbles.
- Sift together 2 cups sugar, 2 cups flour, baking soda and cinnamon and add to the first mixture and mix well.
- Mix buttermilk, vanilla and eggs and mix well and add to the other mixture.
- Mix well.
- Pour into a greased 13x9x2-inch pan.
- Bake in a 350°F oven for 30 to 40 minutes.
- Ice when warm as the icing hardens as it cools.
- For Icing: Mix cocoa, butter and milk in a sauce pan and bring to a boil.
- Remove from the heat and add the sugar and pecans.
- Mix well and pour over warm cake.

CHOCOLATE SHEATH CAKE
This is one of the richest cakes I've ever made/eaten. If you like chocolate overload, this is it. There's nothing light or "diet" about it.

- Preheat oven to 425 degrees. FOR THE CAKE: In a large heat-proof bowl, mix all purpose flour and granulated sugar. Set aside.
- In double boiler, bring 1 stick of butter, vegetable oil, water and 1/4 cup cocoa to a boil. Stir well. Mix hot mixture into flour-sugar mixture. Add eggs, buttermilk, cinnamon, baking soda and vanilla extract. Mix well.
- Pour batter into a 9" x 13" pan which has been sprayed with non-stick cooking spray. Bake for 20-30 minutes or until it tests done. Let cool 5-10 minutes before icing.
- FOR THE ICING: Sift together confectioners' sugar and 1/4 cup cocoa. While cake cools, in a double boiler, melt 1 stick butter. Add confectioners' sugar-cocoa to the melted butter and mix well. Slowly add about 6 tablespoons of milk for a smooth consistency. Pour icing evenly over partially cooled cake. Cool completely.
OLD-FASHIONED CHOCOLATE SHEET CAKE
My great-great aunt made this old-fashioned chocolate sheet cake recipe, and it's been in our family for 2 generations! You can also use cream cheese or buttercream icing to make a layer cake.

- Preheat the oven to 400 degrees F (200 degrees C). Grease and flour a 10x15-inch cake pan.
- Mix flour, sugar, and baking soda together in a large bowl; set aside.
- Heat butter, water, cocoa powder, and vanilla extract in a saucepan over medium heat, stirring occasionally, until smooth and just boiling. Pour over the flour mixture and stir to combine. Stir in buttermilk and eggs. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Remove cake from the oven and cool on a wire rack for 5 minutes.
- Meanwhile, combine butter, milk, cocoa powder, and vanilla extract for the icing in a saucepan over medium heat. Bring to a slow boil, then stir in powdered sugar. Pour icing over the hot cake. Let sit for 2 hours before serving.

- Preheat oven to 350 degrees.
- Sift flour, add sugar into large mixing bowl.
- In sauce pan, add margarine, shortening, cocoa and water. Bring to a boil.
- Pour hot mixture over flour, and then add sugar. Mix well.
- Add buttermilk, vanilla, cinnamon, salt, baking soda, and eggs. Mix well.
- Pour batter onto well greased cookie sheet (15 1/2 x 10 1/2).
- Bake for 20 minutes at 400 degrees.
- Now we make the frosting.
- 5 minutes before cake is done, combine and bring to a boil in a sauce pan: margarine, cocoa, and milk.
- Remove from heat. Add vanilla, and powdered sugar.
- Beat until smooth.
- Spread over cake while hot. Enjoy!

- 1. Preheat oven to 350°F
- 2. Bring the 1 cup shortening, 1 stick butter, 1 cup water and 4 T cocoa to boil in a large saucepan..stir frequently.
- 3. Pour over the flour (stir baking soda into flour) , cinnamon (if using) & sugar... stir in the buttermilk, beat the eggs with the vanilla and add to flour mixture.
- 4. Stir well... pour into greased and floured 9X13" cake pan (or jellyroll pan for a sheetcake if doubling recipe)...bake in preheated 350°F oven for 30 minutes or until done.
- 5. While the cake is still warm... start making the Yummy frosting.
- 6. "Laura's 7 minute frosting": (Peggy said: I still have know idea why she calls it 7 minute frosting???)
- 7. Heat butter, cocoa & milk... add the powered sugar and vanilla... stir well... then add the coconut flakes & pecans.
- 8. Stir together well...then pour over the cake while it is still warm.
