Soft, easy molasses cookies. Great for kids to help make!

Steps:
- Cream together shortening and brown sugar. Stir in egg and molasses and mix well. Fold in dry ingredients and stir. Cover and chill until firm (1 - 2 hours).
- Preheat oven to 350 degrees F (175 degrees C).
- Roll dough into small balls (I use a small melon baller to help with this) and roll in white sugar. Place on lightly greased cookie sheets.
- Bake 9 - 10 minutes. Leave on cookie sheet one minute until set.

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium sized bowl, combine the flour, baking soda, cinnamon, and allspice. In a large bowl, with an electric mixer on medium, cream the sugar and butter until light yellow and fluffy. Add the molasses, egg whites, and egg; beat well.
- Using a wooden spoon, stir in flour mixture until flour disappears. Fold in raisins and nuts.
- Drop by tablespoons, 2 inches apart, onto lightly greased cookie sheets. Bake 8-9 minutes. Lightly sift confectioners' sugar over if you like.

Steps:
- In a large bowl Cream butter and sugar until light and fluffy.
- Blend in the molasses and egg, beating well.
- In another bowl, combine the flour, ginger, cinnamon, allspice and cloves.
- Dissolve baking soda in the water.
- Next, add the flour and baking soda mixtures alternately to butter mixture.
- Blending well after each addition.
- Drop by rounded tablespoons onto lightly greased and floured cookie sheets.
- Bake at 350ºF about 12 to 15 minutes until done.
- Remove from cookie sheets and cool on wire racks.

OLD FASHIONED MOLASSES COOKIES
A real old fashioned molasses cookie for you to sink your teeth into. These cookies are cut out into circles and each one has a decorative raisin in the middle. To make sour milk, just add 1 teaspoon of vinegar to a cup of milk and let it stand for 5 minutes.

- In a large bowl, cream together the sugar and shortening until smooth. Stir in the molasses and vanilla. Combine the flour, cinnamon, baking soda and salt; stir into the mixture alternately with the sour milk. Cover the dough and chill for at least one hour.
- Preheat the oven to 375 degrees F (190 degrees C).Grease cookie sheets. On a lightly floured surface, roll out about 1/3 of the dough to 1/4 inch in thickness. Cut into circles about 3 inches in diameter using a cookie cutter or drinking glass. Place cookies 2 inches apart onto the prepared cookies sheets. Place a raisin onto the center of each cookie.
- Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
