EASY LAZY LASAGNA

This incorporates all the flavors of lasagna, but it's easier because the ingredients are simply mixed together and baked.

1 cup wide egg noodles
½ pound ground beef
4 ounces bulk Italian sausage
1 ½ cups marinara sauce
½ cup cottage cheese
⅓ cup grated Parmesan cheese, divided
¼ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon Italian seasoning
½ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
  • Bake in the preheated oven until cheese is golden brown, about 25 minutes.

Ever want lasagne for breakfast? How about bacon, egg, and cheese with your lasagne? I didn't realize the recipe would be as labor intensive before I started it, but it was worth it in the end. Just a fair warning, when this says it has 12 servings just remember you'll keep going back for more. DELICIOUS! DO NOT COOK THIS IF YOU ARE HUNGRY! Recipe from The Pillsbury Cookbook.

12 lasagna noodles, uncooked
1 lb bacon, cut into 1-inch strips
1/3 cup bacon drippings
1 cup onion, chopped
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups milk
12 eggs (hard cooked and sliced)
2 cups swiss cheese, shredded
1/3 cup parmesan cheese, grated
2 tablespoons parsley (fresh, chopped)

Steps:

  • Cook lasagne noodles to desired doneness as directed on package.
  • Drain and rinse with hot water.
  • In a large skillet, cook bacon until crisp and drain. Reserve 1/3 cup of bacon drippings and set bacon aside.
  • Cook onions in bacon drippings until tender.
  • Add flour, salt, and pepper and stir until smooth and bubbly.
  • Gradually add milk and cook mixture until it boils and thickens, stirring constantly.
  • Heat oven to 350 and grease 13x9" (3 quart) baking dish.
  • Spoon a small amount of sauce into the bottom of the pan.
  • Divide lasagne noodles, bacon, sauce, eggs, and Swiss cheese into thirds and layer in pan.
  • Sprinkle with Parmesan cheese.
  • Bake at 350 for 25 to 30 minutes or until thoroughly heated.
  • Sprinkle with parsley.
  • Let stand for 10 minutes before serving (this is the most difficult part of the entire recipe).

6-1/2 cups uncooked wide egg noodles
3 tablespoons butter
1-1/2 pounds ground beef
2-1/4 cups spaghetti sauce
6 ounces process cheese (Velveeta), cubed
3 cups shredded mozzarella cheese

Steps:

  • Cook noodles according to package directions; drain. Add butter; toss to coat. , In a large skillet, cook beef over medium heat until no longer pink; drain. Spread a fourth of the spaghetti sauce into an ungreased 5-qt. slow cooker. Layer with a third of the noodles, a third of the beef, a third of the remaining sauce and a third of the cheeses. 1 pound lean ground beef
1 onion, chopped
1 (4.5 ounce) can mushrooms, drained
1 (28 ounce) jar spaghetti sauce
1 (16 ounce) package cottage cheese
1 pint part-skim ricotta cheese
¼ cup grated Parmesan cheese
2 eggs
1 (16 ounce) package lasagna noodles
8 ounces shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
  • In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
  • Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
  • Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

An easy lasagna recipe using egg noodles instead of the traditional lasagna noodles. This is a great 'clean out the cupboard & fridge' recipe! The original recipe calls for mascarpone instead of the ricotta (which I use). Use mascarpone if you wish...it's just always easier for me to find ricotta at the store. You could also use cream cheese instead of ricotta.

1 (8 ounce) package wide egg noodles
1 lb lean ground beef
6 green onions, sliced
2 large garlic cloves, minced
3/4 teaspoon salt, divided
1 (26 ounce) jar tomato and basil pasta sauce
1/8 teaspoon pepper
1 (8 ounce) package ricotta cheese
1 cup sour cream
1/2 cup shredded parmesan cheese

Steps:

  • Cook ground beef, green onions, garlic and 1/2 teaspoons salt in a large nonstick skillet over medium-high heat, stirring 10 minutes or until it crumbles and is no longer pink. Drain well.
  • Stir in tomato-basil pasta sauce and pepper. Cover, reduce heat and simmer 20 minutes.
  • While meat sauce is simmering, prepare egg noodles according to package directions. Drain noodles. Stir together noodles, ricotta cheese, 1 cup sour cream and remaining 1/4 teaspoons salt until blended.
  • Layer half each of egg noodle mixture and ground beef mixture, starting with noodles, in a lightly greased 2-quart baking dish. Repeat layers.
  • Bake at 350-degrees for 25 minutes. Remove from oven; sprinkle evenly with parmesan cheese and bake 5 more minutes.
  • Let stand 10 minutes before serving.

1 pound bacon strips, diced
1 large onion, chopped
1/3 cup all-purpose flour
1/2 to 1 teaspoon salt

4 cups 2% milk
12 lasagna noodles, cooked and drained
12 hard-boiled large eggs, sliced
2 cups shredded Swiss cheese
1/3 cup grated Parmesan cheese
2 tablespoons minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 1/3 cup drippings. In the drippings, saute onion until tender. Stir in the flour, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. , Spread 1/2 cup sauce in a greased 13x9-in. baking dish. Layer with 4 noodles and a third each of the eggs, bacon, Swiss cheese and remaining sauce. Repeat layers twice. 12 lasagna noodles, uncooked
2 tablespoons olive oil
1 (16 ounce) package italian ground sausage
1 medium onion
2 garlic cloves, chopped
1 (24 ounce) jar marinara sauce
4 cups cottage cheese or 4 cups ricotta cheese
1 large egg
2 1/2 cups shredded Italian cheese blend
2 cups chopped spinach (frozen or fresh)
1 teaspoon dried oregano

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain, lightly oil and set aside.
  • In a medium sauce pan cook the sausage until no longer pink. Add onion and garlic and continue cooking for another 4 minutes.
  • Add marinara sauce to the sausage mixture and set aside.
  • In a medium bowl, blend cottage or ricotta cheese, egg, ¼ cup of the cheese blend and the chopped spinach; set aside.
  • Coat a 9x13" baking dish with olive oil and spread 1 cup of the sauce mixture on the bottom.
  • Top with 3 lasagna noodles. Spread ¼ of the cottage or ricotta cheese mixture on the noodles and layer on 1 cup of the sauce mixture. Sprinkle ½ cup cheese blend. Repeat this process three more times starting with the noodles and finish with the remaining ¼ cup of cheese blend. Sprinkle with oregano on top.
  • Bake uncovered at 350 degrees F for 45 minutes until hot and bubbly. Let stand 10 minutes before cutting.
