- This dish can be made 2 ways.
- Quickest and easiest: Heat soups, chicken and cheese in pan on stove until cheese is melted, add noodles, heat through.
- Casserole method: Combine all ingredients in greased casserole, top with croutons, bake at 350 for about an hour.
- If you like it cheesier, add more.
- If it looks a little dry, you can add milk to it.

BEV'S ORANGE CHICKEN
I got this recipe from a co-worker. This has to be one of the easiest recipes ever. Chicken is roasted in a flavorful orange sauce. It is great with chicken thighs or breasts, bone-in or not. You can't go wrong!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a small bowl, stir together the orange juice, soy sauce, onion soup mix and garlic powder; set aside. Rinse chicken, and pat dry. Place chicken thighs into a 9x13 inch glass baking dish. Pour the orange juice mixture over.
- Bake, uncovered, for 1 hour and 30 minutes in the preheated oven, basting every half hour. If using boneless chicken, reduce cooking time to 1 hour.

I got allot of these, I bought tons of recipe boxes from an auction recently, they are all on hand written index cards. NOTE: none of these have time or servings on them so I am guesstimating those.

Steps:
- In a plastic bag, combine flour, salt, pepper and poultry seasoning.
- Shake chicken, a few pieces at a time, in flour mixture to coat.
- Heat oil in large skillet over medium heat; brown chicken.
- Reduce heat cover and simmer 30 minutes or until chicken is fork tender and juices run clear, removing cover last 10 minutes to crisp chicken.

HUNTINGTON CHICKEN
Comes from 'Adventures in Wine Cookery' (1965), a collection of recipes from California wine makers. As the contributor suggests, it's great party fare. You don't have to tell that there's cream of mushroom or chicken soup in it. This is worth the effort for a special potluck or buffet dinner party. It saves time to cook the chicken the night before making the rest of the recipe, giving the broth time to defat in the fridge. Then you can cut up the cold chicken while you cook the macaroni.

- Cook chicken in wine and enough water to cover until tender, seasoning with salt and pepper.
- Pour off and reserve liquid; remove fat; add enough water to make 1-1/2 cups.
- Cook macaroni and green pepper in chicken liquid for 10 minutes. Drain, reserving liquid.
- Remove chicken from bones and cut into bite-sized pieces.
- In a large mixing bowl, combine chicken, cooked macaroni, green pepper, drained mushrooms, soup, chicken liquid, and Tabasco sauce.
- In an 8x12-in baking dish, layer half the chicken mixture followed by half the cracker crumbs and cheese. Repeat layers, ending with cheese.
- Bake at 350 degrees until cheese has melted.

The original recipe calls for the cream to be scalded (heated to just below the boiling point), but I don't see the necessity for this. By all means do it if you like.

- Preheat oven to 350°F.
- Cook macaroni in boiling salted water according to package directions. Drain.
- Melt butter in a skillet.
- Stir in flour.
- Add cream and stir until slightly thickened, about 3 minutes.
- Add cream cheese, pimiento, and chicken broth, and stir until cream cheese melts.
- Add chicken and macaroni. Stir well.
- Pour into a lightly greased casserole dish and season with salt and pepper.
- Bake for 30-45 minutes, or until bubbly.
