1 1/2 lbs asparagus (about 40 spears)
1 cup cherry tomatoes, about 10, cut in half (es)
1 tablespoon balsamic vinegar
2 teaspoons orange juice
1 teaspoon minced garlic
2 tablespoons shredded parmesan cheese
1/8 teaspoon table salt or 1 dash salt, to taste
1/8 teaspoon black pepper (to taste)

Steps:

  • Chop woody ends off asparagus. Microwave for 2 to 3 minutes, or cook in boiling, salted water until barely tender, about 4 to 6 minutes.
  • Plunge into ice water to stop cooking. Drain. Add cherry tomatoes.
  • Stir together vinegar, orange juice and garlic; season to taste. Spoon dressing over asparagus and tomatoes.
  • Sprinkle with Parmesan cheese.

Raw garlic gives an assertive, sharp flavor to this fantastic asparagus salad recipe. It requires just eight ingredients to make, two of which include salt and pepper, so it'll soon become a go-to. Plus you need 10 minutes to throw it together, thanks to a quick blanching of the asparagus, which is the only cooking that's required. Mix the garlic with a little bit of balsamic vinegar and unsweetened orange juice for the easiest dressing ever. You can also incorporate red onions into the salad if you have any on hand. Chop up any of the salad leftovers and toss with whole wheat pasta for an easy main dish.

1 cup(s) Fresh cherry tomato(es) cut in half
1 Tbsp Balsamic vinegar
2 tsp Unsweetened orange juice
1 tsp Minced garlic
2 Tbsp Shredded parmesan cheese fresh, such as Parmigiano-Reggiano
0.125 tsp Table salt or to taste
0.125 tsp Black pepper or to taste

Steps:

  • Chop tough ends off asparagus. Boil asparagus just until tender, about 4 to 6 minutes. (Or microwave asparagus about 2 to 3 minutes.)
  • Plunge asparagus into a large bowl of ice water to stop them from cooking; drain and place on a serving platter. Sprinkle tomatoes over top.

cooking spray
salt and pepper, to taste
2 tablespoons butter
1 tablespoon soy sauce
1 teaspoon balsamic vinegar

Steps:

  • Preheat oven to 400 degrees. Arrange asparagus on a baking sheet. Coat with cooking spray and season with salt and pepper. Bake 12 minutes or until tender.
  • Meanwhile, melt butter in small saucepan over medium heat. Once melted, remove from heat. Stir in soy sauce and vinegar.

2 teaspoons olive oil
1 large tomatoes, coarsely chopped
3 garlic cloves, thinly sliced

1 lb asparagus, trimmed to 2 inch lengths
1 cup chicken broth
1 tablespoon lemon juice
1/2 lb ham, cubed
1/4 cup fresh basil, chopped
3 tablespoons parmesan cheese, grated

Steps:

  • Prepare the pasta according to the package directions.

1 bunch asapargus
good olive oil
kosher salt
freshly ground pepper
1 Tbsp soy sauce
1 tsp balsamic vinegar
2 Tbsp butter

Steps:

  • 1. Preheat oven to 400°F (200°C).
  • 2. Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a baking sheet, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper.
  • 3. Bake asparagus 12 minutes in the preheated oven, or until tender.

This is a recipe I came up with for my weight watchers diet. I love asparagus and I happened to have some white on hand. I find it to not be as flavorful as the green version, so I spiced it up a bit and added great flavor with the garlic and red onion, topping off with a good balsamic vinegar. Asparagus has no points, so the only points I added was the oil. I made a meal out of this. Yum!

1 tablespoon(s) chicken bouillon powder
2 cup(s) water
1/2 teaspoon(s) garlic powder
2 - - 3 grinds fresh black pepper
1/2 teaspoon(s) salt
1 bunch(es) white or green asparagus
1 tablespoon(s) olive oil
2 clove(s) garlic, minced or could use garlic paste in tube ( chunky would be best )
1 teaspoon(s) parsley paste
1/8 - 1/4 teaspoon(s) red pepper flakes - optional and to taste
1 tablespoon(s) red onion, chopped small
drizzle - of a good balsamic vinegar

Steps:

  • Trim tough bottoms of asparagus ( About 2 inches ) maybe more depending how big your asparagus is. In a medium saucepan, bring 2 cups water, salt, garlic powder and bullion to a boil.
  • Once boiling add the asparagus and spread out evenly so it cooks evenly. Lower heat to simmer and simmer for 4 -5 minutes or until crisp tender. Immediately rinse with cold water or add to ice bath, to stop cooking process. Drain well.
  • In same skillet, over medium heat add oil, red pepper flakes, garlic, red onion and parsley. Swirl around and cook a few seconds.
  • Add asparagus and saute until starting to brown some and vegetables are tender. Tossing to coat with onion/ garlic mixture. I also re seasoned with some salt & pepper.
  • Plate, salt and pepper and drizzle with balsamic if desire. Enjoy!

1 tablespoon olive oil
1/4 teaspoon salt (I use kosher salt)

Steps:
