1 lb asparagus, steamed
1 (1 1/4 ounce) packet dry onion soup mix
1/2 cup butter (1 stick)
1 cup mozzarella cheese, grated

Steps:

  • Preheat oven to 450.
  • Steam asparagus for ten minutes, then arrange in an ungreased baking dish (any size will do).
  • Melt butter and mix in soup mix and pour over asparagus. (If you don't want to use all the butter, cut the stick in half and replace with as much water.).
  • Top with mozzarella cheese (as much as you want!).
  • Bake at 450 for 12-15 minutes, until cheese is melted and golden-brown around edges. Serve hot.

Number Of Ingredients 12

1/2 lb fusilli (any kind with texture) or 1/2 lb spiral shaped pasta (any kind with texture)
1/2 lb asparagus (cut into 2 in pieces)
1/2 lb shrimp (I used medium size, cooked)
1 cup white wine (I used a Shiraz)
2 -3 tablespoons butter
1 tablespoon olive oil
8 ounces diced tomatoes and green chilies
1 onion, large sliced thick
2 stalks celery, diced
1 teaspoon basil
4 garlic cloves, diced
1/2 cup parmesan cheese

Steps:

  • In large skillet, heat oil and 2 Tbsp butter to melting, add in onions, garlic, celery, cook 4 min.
  • Add in 1 c wine and simmer til reduced by 1/2.
  • Add in shrimp and tomatoes with green chilis and incorporate, heat through 3-4 minute.
  • (if shrimp is uncooked, cook til pink in color).
  • In the meantime, have a 4 qt pan heating water with a pinch of salt, once boiling add in pasta, cook 4 minute Then add asparagus and stir. Cook til al dente. about 4 minute.
  • Drain pasta and asparagus return to pan. Add in parmesan cheese and stir, pour into Casserole pan or Pasta plate. Then pour shrimp and veggie mix over top and serve.
  • Served with a crusty tomatoe basil bread. (will post soon)and a Shiraz wine. YUMMY.
  • *** cook time is overlapped as pot of water is cooking as you are making shrimp topping.

2 pounds fresh asparagus, trimmed
1/2 pound fresh mushrooms, sliced
4 green onions, thinly sliced
1/2 cup chopped walnuts
1/4 cup butter, cubed
1/2 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
Additional walnuts, optional

Steps:

  • In a skillet, cook asparagus in a small amount of water until crisp-tender, about 6-8 minutes; drain. Cover and refrigerate for at least 1 hour. In the same skillet, saute mushrooms, onions and walnuts in butter until mushrooms are tender. In a bowl, combine the mayonnaise, sour cream, salt and nutmeg. Stir in mushroom mixture. Cover and refrigerate for at least 1 hour. Just before serving, place asparagus on a serving platter; top with dressing and walnuts if desire.

1 can(s) cream of mushroom soup
4 hard boiled eggs
6 slice sharp cheddar cheese
1 can(s) drained asparagus

Steps:

  • 1. Preheat oven to 350. Take a medium size cassarole dish, crumble one pkg ritz crackers in bottom. Add drained Asaparagus, then sliced boiled eggs, sliced cheese, then soup and another layer of crackers. Bake 40 min. I serve it with some type of fruit salad. Can be used as main dish or side dish.

3 cups cooked rice
1 teaspoon salt, divided
3/4 teaspoon pepper, divided
1 package (12 ounces) frozen cut asparagus, thawed and drained
4 boneless skinless chicken breast halves, cut into 1-inch strips
1/4 cup vegetable oil
1 cup sliced fresh mushrooms
6 green onions, chopped
1/4 cup chopped sweet red pepper
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup mayonnaise
2 teaspoons lemon juice
1 teaspoon salt-free seasoning blend
1/2 cup shredded cheddar cheese

Steps:

  • Spread rice in a greased 11x7-in. baking dish. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cover with asparagus. Sprinkle chicken with remaining salt and pepper. In a large skillet, cook chicken in oil over medium-high heat until browned on all sides. With a slotted spoon, remove chicken and place over asparagus. Add mushrooms, onions and red pepper to skillet; saute until tender. Spoon over chicken. Combine soup, mayonnaise, lemon juice and seasoning blend; spread over vegetables. Sprinkle with cheese. Cover and bake at 350° for 40-45 minutes.

1 (10 3/4-ounce) can asparagus spears and juice
4 hard-boiled eggs, sliced
Cracker crumbs
1 (10 3/4-ounce) can cream of mushroom soup
2 tablespoons butter, melted
3 tablespoons Sauterne wine
3 or 4 dashes Tabasco
1 teaspoon Worcestershire sauce
1 Garlic salt (optional), salt, pepper, and sugar to taste
1 cup grated New York State cheese
1 slice bread, crust trimmed
1/2 cup slivered almonds blanched

Steps:

  • Into buttered casserole, alternate layers of asparagus, eggs, cracker crumbs, and soup that has been mixed with asparagus juice, butter, wine, and seasonings. Top with cheese, small pieces of bread, and almonds. Bake at 350° for about 20 minutes.
