Steps:
- Cook asparagus in large pot of boiling salted water until crisp-tender, about 4 minutes. Cut top 6 inches from asparagus. Set 6-inch asparagus tips aside. Slice remaining asparagus into 1/4-inch-thick rounds. Transfer slices to large bowl. Mix in 1/2 cup chives.
- Cut peel and white pith from oranges. Working over bowl, cut between membranes to release segments. Drain off juices. Transfer segments to bowl with asparagus slices and chives. Gently mix in crabmeat. Season salad to taste with salt and pepper.
- Whisk 3 tablespoons fresh orange juice, sugar, vinegar, and orange peel in medium bowl until sugar dissolves. Whisk in mustard. Season dressing to taste with salt and pepper. Divide asparagus stalks among 6 plates. Mound salad in center of plates. Pour dressing over each salad. Sprinkle with remaining 2 tablespoons chives.
GREEN SALAD WITH ORANGE, FENNEL, AND ASPARAGUS
Steps:
- In small bowl, whisk together vinegar, mustard, sugar, salt, and pepper. Gradually whisk in oil, then zest.
- In large sauté pan, bring 1 inch water to boil. Add asparagus and simmer until bright green, about 1 minute. Drain in colander, then rinse under cold running water until cool. Thinly slice on diagonal and transfer to large bowl.
- Cut peel and white pith from oranges. Working over medium bowl, cut between membranes to release segments. Add segments and any juice in medium bowl to large bowl with asparagus; squeeze juice from membranes into dressing and whisk to combine.
- Add fennel and then salad greens to large bowl. Drizzle with dressing and toss gently. Sprinkle chives on top and serve immediately.

ORANGE-TARRAGON DUCK BREAST WITH GREEN SALAD AND ASPARAGUS-ALMOND RICE

- Rub a skillet with 1 tablespoon butter. Lightly score duck breaks through skin, but not the flesh, in a cross-hatch pattern. Season duck breasts with salt and pepper and place in cold pan skin side down and turn heat on to medium-medium high. Cook until crispy, 15 minutes, turn. Drain off some of the fat and discard. Mix marmalade with 2 tablespoons white wine vinegar and tarragon, salt and pepper, reserve. Once you flip the duck, pour the marmalade sauce over top and reduce heat. Loosely cover pan and let the duck hang out a couple of minutes more.
- While duck cooks, melt 1 tablespoon butter in a medium pot and toast nuts 2 minutes, add rice and toast 1 minute more. Add stock and bring to a boil. Cover and cook over low heat 15 minutes. Trim off the top 4 inches of asparagus and thinly slice on the bias. Add to rice and cook rice 2 to 3 minutes more for a total of 17 to 18 minutes.
- While rice cooks, combine endive, cress and frisee in a salad bowl. Combine shallots and Dijon with 2 tablespoons vinegar, salt and pepper. Whisk in 1/4 to 1/3 cup extra-virgin olive oil and pour over salad. Garnish with oranges.
- Serve duck breast on salad with asparagus-almond rice alongside.
ASPARAGUS AND MANDARIN ORANGE SALAD
I had this at a restaurant and loved it so had to try and duplicate it at home. Yummy. Quick and easy. I used a small amount of the mandarin juice in the balsamic mixture. Serve immediately or chill.

- Depending on how much salad you want to make will depend on how much Asparagus, but even if you make too much, you can always save it a few days. So, Roast the Asparagus brushed with olive oil. Let that cool. Preheat oven to 300°F. Brush large rimmed baking sheet with butter. Whisk egg white in bowl until foamy. Add sugar, spices, and salt. Whisk until mixture is thick and opaque. Add pecans; stir until coated. Using forks, transfer nuts to sheet, spacing apart; discard remaining coating. Bake nuts until deep golden brown, about 35 minutes. Cool completely on sheet. Transfer to container; cover and store at room temperature. Make the Dressing. Plac however much asparagus you want on your salad, then crumble goat cheese on top. Add the dressing and sprinkle with the pecans.

- 1. Snap off and discard tough ends of asparagus. Cook asparagus in boiling water to cover 2 to 3 minutes or until crisp-tender; drain. Plunge into ice water to stop the cooking process; drain.

- In large pot of lightly salted boiling water blanch the asparagus spears until green, about 2-3 minutes but no longer. Immediately drain and rinse with cold water to halt the cooking process.
- Peel the oranges and cut up into bite-size segments. Save one half of one orange for juicing and zesting.
- In a non-reactive small bowl, combine the olive oil, vinegar, orange zest and 1 tablespoon of orange juice. Season with salt and pepper. Whisk together and set aside.
- In a large salad bowl combine the cooked asparagus, red onion, orange segments, tomatoes, and lettuce. Just before serving, pour the dressing over the salad and mix gently to coat.

- Place quinoa in a strainer and immerse in a bowl full of water, rinse under cold running water and repeat 2 or 3 times till water becomes clean. Add water and quinoa to a medium saucepot. WARM ROASTED ASPARAGUS SALAD WITH ORANGE DRESSING AND PARMESAN
A fresh take on Spring asparagus, with a lovely orange dressing. This dish is delicious both warm and at room temperature. Perfect for Easter dinner or brunch.

- Preheat oven to 375° F. Arrange asparagus in a single layer on a baking sheet. Drizzle with a bit of olive oil and shake pan to coat asparagus with oil. Sprinkle with salt and pepper. Roast in pre-heated oven for 5-8 minutes (depending on thickness of asparagus) until just tender-crisp (so they stay a nice bright green colour).
- Meanwhile, make the dressing. Zest 1 orange into a medium bowl. Set aside. Juice both oranges and boil the juice down in a small saucepan over medium heat until reduced to about 3 tablespoons (No need to strain now, as you will strain later).
- Mince the shallot and put it in a small bowl with the vinegar poured over. Set aside 5 minutes.
- Add the mustard to the bowl with the zest. When the orange juice has reduced, strain it over the zest mixture. Drain the shallots, discarding the vinegar and add the shallots to the zest mixture. Whisk it all together, then slowly whisk in the olive oil a bit at a time. Taste after 2 Tbsp. and add a bit more if you feel it needs it for balance. Season with salt and pepper. Set aside.
- Once asparagus is cooked, arrange on a serving platter (something a little dished and not flat, as sauce is thin). To make it look pretty, using a slotted spoon, spoon some of the zest only across the top of the asparagus, about 1/3 up from the bottom, then spoon some more of the full dressing over top. Sprinkle with freshly shaved Parmesan and a bit more salt and Pepper.
- Nice warm or at room temperature.
