2 pounds asparagus, trimmed
1/2 cup plus 2 tablespoons chopped fresh chives
3 navel oranges
14 ounces lump crabmeat
3 tablespoons fresh orange juice
3 tablespoons sugar
2 tablespoons distilled white vinegar
1 teaspoon grated orange peel
1/4 cup Dijon mustard

Steps:

  • Cook asparagus in large pot of boiling salted water until crisp-tender, about 4 minutes. Cut top 6 inches from asparagus. Set 6-inch asparagus tips aside. Slice remaining asparagus into 1/4-inch-thick rounds. Transfer slices to large bowl. Mix in 1/2 cup chives.
  • Cut peel and white pith from oranges. Working over bowl, cut between membranes to release segments. Drain off juices. Transfer segments to bowl with asparagus slices and chives. Gently mix in crabmeat. Season salad to taste with salt and pepper.
  • Whisk 3 tablespoons fresh orange juice, sugar, vinegar, and orange peel in medium bowl until sugar dissolves. Whisk in mustard. Season dressing to taste with salt and pepper. Divide asparagus stalks among 6 plates. Mound salad in center of plates. Pour dressing over each salad. Sprinkle with remaining 2 tablespoons chives.

2 tablespoons white wine vinegar
1 1/2 teaspoons whole-grain mustard
1/8 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil
1 tablespoon finely grated orange zest
1 pound thick asparagus, ends trimmed
3 medium oranges
1 small bulb fennel, trimmed, quartered, cored, and very thinly sliced crosswise
3 quarts loosely packed tender salad greens such as mâche, Boston, or red leaf lettuce, torn
1/3 cup fresh chives, finely chopped

Steps:

  • In small bowl, whisk together vinegar, mustard, sugar, salt, and pepper. Gradually whisk in oil, then zest.
  • In large sauté pan, bring 1 inch water to boil. Add asparagus and simmer until bright green, about 1 minute. Drain in colander, then rinse under cold running water until cool. Thinly slice on diagonal and transfer to large bowl.
  • Cut peel and white pith from oranges. Working over medium bowl, cut between membranes to release segments. Add segments and any juice in medium bowl to large bowl with asparagus; squeeze juice from membranes into dressing and whisk to combine.
  • Add fennel and then salad greens to large bowl. Drizzle with dressing and toss gently. Sprinkle chives on top and serve immediately.

⅓ cup raspberry vinegar

Steps:

  • To a large pot of boiling water, add the asparagus. Blanch for 1 minute; drain, and plunge asparagus into a bowl of cold water. Drain again and dry.
  • In a large bowl, combine the asparagus, endive, oranges, and red onion.
  • Whisk together the raspberry vinegar, canola oil, orange juice, sugar and salt and pepper. Add dressing to the asparagus endive mixture; toss well and serve.

Orange-Tarragon Duck Breast with Green Salad and Asparagus-Almond Rice image

3 tablespoons butter, divided
2 duck breasts, found in packaged meats case of larger markets
Salt and pepper
1/3 cup orange marmalade
4 tablespoons white wine vinegar, divided
4 sprigs fresh tarragon, leaves finely chopped
2 to 3 tablespoons slivered almonds
1 cup rice
2 cups chicken stock
1 small bunch asparagus
1 endive, thinly sliced
1 bunch watercress, trimmed and stemmed
1 frisee, coarsely chopped
1 shallot
1 teaspoon Dijon mustard
1/4 to 1/3 cup extra-virgin olive oil
1 small can mandarin oranges

Steps:

  • Rub a skillet with 1 tablespoon butter. Lightly score duck breaks through skin, but not the flesh, in a cross-hatch pattern. Season duck breasts with salt and pepper and place in cold pan skin side down and turn heat on to medium-medium high. Cook until crispy, 15 minutes, turn. Drain off some of the fat and discard. Mix marmalade with 2 tablespoons white wine vinegar and tarragon, salt and pepper, reserve. Once you flip the duck, pour the marmalade sauce over top and reduce heat. Loosely cover pan and let the duck hang out a couple of minutes more.
  • While duck cooks, melt 1 tablespoon butter in a medium pot and toast nuts 2 minutes, add rice and toast 1 minute more. Add stock and bring to a boil. Cover and cook over low heat 15 minutes. Trim off the top 4 inches of asparagus and thinly slice on the bias. Add to rice and cook rice 2 to 3 minutes more for a total of 17 to 18 minutes.
  • While rice cooks, combine endive, cress and frisee in a salad bowl. Combine shallots and Dijon with 2 tablespoons vinegar, salt and pepper. Whisk in 1/4 to 1/3 cup extra-virgin olive oil and pour over salad. Garnish with oranges.
  • Serve duck breast on salad with asparagus-almond rice alongside.

⅓ cup balsamic vinegar
3 tablespoons olive oil
1 (12 ounce) can mandarin oranges, drained

  • Bring a pot of lightly salted water to a boil. Add asparagus and cook until tender, about 4 minutes. Drain in a colander and immediately immerse in ice water until cold to stop the cooking process. Drain.
  • Boil balsamic vinegar in a small saucepan until reduced to 1/3 the original amount, about 5 minutes. Pour reduced vinegar into a bowl and whisk olive oil into vinegar; set aside until cool, about 10 minutes. Add asparagus, onion, tomatoes, and olives to vinegar mixture and toss to coat.

1 large egg white
1/2 cup sugar
1 teaspoon freshly ground nutmeg

2 cups pecan halves (8 to 9 ounces)
Dressing:
3/4 cup Vinegar
1/2 cupOrange Juice
Orange Zest
2 tbsp Grainy Mustard
1/2 cup Olive Oil
1/4 cup Finely Minced Mint Leaves
Salt and Pepper to Taste
(I'm not possitive on the amounts, I'm guessing on a bottled dressing that they stopped selling. If you've made dressings before, I'm sure you'll figure it out. If not you could try to find one similar to this one.

Steps:

  • Depending on how much salad you want to make will depend on how much Asparagus, but even if you make too much, you can always save it a few days. So, Roast the Asparagus brushed with olive oil. Let that cool. Preheat oven to 300°F. Brush large rimmed baking sheet with butter. Whisk egg white in bowl until foamy. Add sugar, spices, and salt. Whisk until mixture is thick and opaque. Add pecans; stir until coated. Using forks, transfer nuts to sheet, spacing apart; discard remaining coating. Bake nuts until deep golden brown, about 35 minutes. Cool completely on sheet. Transfer to container; cover and store at room temperature. Make the Dressing. Plac however much asparagus you want on your salad, then crumble goat cheese on top. Add the dressing and sprinkle with the pecans.

2 medium avocados
2 large oranges
3 teaspoons fresh lemon juice
1/2 cup canola oil
1/4 cup red wine vinegar
1/4 cup fresh orange juice

Steps:

  • Snap the ends of the asparagus off and cut the spears into 1 inch pieces.
  • Stean until JUST tender, no more than 4 or 5 minutes.
  • Plunge into ice water to stop the cooking.
  • Peel the oranges, remove the membrane on segments and cut into chunks.
  • Peel and chop the avocados.
  • Toss the three together with the lemon juice.
  • Whisk the vinaigrette ingredients together.
  • Pour over the salad and lightly pepper and salt-toss and serve.

1/2 tsp grated orange rind
1/3 c fresh orange juice
3 Tbsp extra-virgin olive oil
2 Tbsp white wine vinegar
1/4 tsp salt
1/8 tsp white pepper, freshly ground
3/4 lb fresh dungeness crab or jumbo lump crabmeat, drained
1/2 c green onion, thinly sliced

Steps:

  • 1. Snap off and discard tough ends of asparagus. Cook asparagus in boiling water to cover 2 to 3 minutes or until crisp-tender; drain. Plunge into ice water to stop the cooking process; drain.
  • 2. Combine orange rind and next 5 ingredients in a medium bowl. Drizzle about half of dressing over asparagus, and toss well. Arrange asparagus in center of each of 4 plates.
  • 3. Add crabmeat and green onion to remaining dressing, and toss well. Spoon crabmeat mixture evenly on top of asparagus.

1 cup fresh asparagus spear (or use equivalent amount of frozen asparagus spears, thawed to room temperature)
2 medium oranges
1/2 cup red onion, sliced and cut into crescents
2 tomatoes, ripe but firm, cut into eighths
3 cups romaine leaves, chopped into narrow strips
2 ounces manchego cheese, for garnish (optional)
2 tablespoons extra virgin olive oil
1 tablespoon sherry wine vinegar
1/2 orange, zest of, finely minced
1 tablespoon reserved orange juice
salt
fresh ground black pepper

Steps:

  • In large pot of lightly salted boiling water blanch the asparagus spears until green, about 2-3 minutes but no longer. Immediately drain and rinse with cold water to halt the cooking process.
  • Peel the oranges and cut up into bite-size segments. Save one half of one orange for juicing and zesting.
  • In a non-reactive small bowl, combine the olive oil, vinegar, orange zest and 1 tablespoon of orange juice. Season with salt and pepper. Whisk together and set aside.
  • In a large salad bowl combine the cooked asparagus, red onion, orange segments, tomatoes, and lettuce. Just before serving, pour the dressing over the salad and mix gently to coat.
  • Add shaved manchego to each salad serving if desired.
  • Serve with crusty bread.

1/2 cup mandarin orange
2 cups red seedless grapes, cut in half
1 cup carrot, peeled and julienned
1 cup celery, cut on diagonal
1/2 cup slivered almonds, roasted
salt

12 2/3 ounces of your favorite salad dressing

Steps:

  • Snap off ends of asparagus and cut on the diagonal and blanch (add asparagus to boiling water and cook until just tender,while still maintaining bright color. Then remove, drain and IMMEDIATELY immerse into a bath of COLD water and ICE).

¼ cup Orange juice

1 tsp Dijon mustard
1 tbsp Honey or agave nectar
½ cup Olive oil

1 cup Asparagus, trimmed cut into ½ inch pieces
½ cup Red bell pepper, seeded and small diced
½ cup Yellow bell pepper, seeded and small diced
¼ cup Chives, chopped fine
1 Avocado, fanned

Steps:

  • Place quinoa in a strainer and immerse in a bowl full of water, rinse under cold running water and repeat 2 or 3 times till water becomes clean. Add water and quinoa to a medium saucepot. Bring to a boil and reduce heat allow quinoa to simmer. Cook, covered until tender (for about 15 minutes) and strain. Whisk together Sherry vinegar, blood orange juice, Dijon mustard, and honey; to dissolve the honey and Dijon mustard. In a slow steady stream, add olive oil, whisking constantly to incorporate. Toss together cooked quinoa and a small amount of dressing and refrigerate till ready to use. Place asparagus pieces in a medium saucepot filled with boiling salted water for 30 seconds. Remove asparagus and immediately place in a bowl of ice water. When asparagus is completely cooled remove from water and dry well. Add to quinoa Fan avocado on the plate and place a scoop of quinoa next to it. Garnish with a sprinkling of red bell pepper, yellow bell pepper, and chives.

This side dish salad combines several influences: The dates and orange are an Israeli touch; the pecans pay homage to the American South; and the quinoa is a high-protein grain from South America.

Salad:
1 teaspoon olive oil
1/2 cup finely chopped white onion
1 cup uncooked quinoa
2 cups water
1/2 teaspoon kosher salt
1 cup fresh orange sections (about 1 large orange)
1/4 cup chopped pecans, toasted
2 tablespoons minced red onion
5 dates, pitted and chopped
1/2 pound (2-inch) slices asparagus, steamed and chilled
1/2 jalapeño pepper, diced
Dressing:
2 tablespoons fresh lemon juice
1 tablespoon extravirgin olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
2 tablespoons chopped fresh mint
Mint sprigs (optional)

Steps:

  • To prepare salad, heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add white onion to pan; sauté 2 minutes. Add quinoa to pan; sauté 5 minutes. Add 2 cups water and 1/2 teaspoon salt to pan; bring to a boil. Cover, reduce heat, and simmer 15 minutes. Remove from heat; let stand 15 minutes or until water is absorbed. Transfer quinoa mixture to a large bowl. Add orange and next 5 ingredients (through jalapeño); toss gently to combine.
  • To prepare dressing, combine juice and next 4 ingredients (through garlic) in a small bowl, stirring with a whisk. Pour dressing over salad; toss gently to coat. Sprinkle with chopped mint. Garnish with mint sprigs, if desired. Serve at room temperature.

2 bunches asparagus
8 ounces mandarin oranges
1/2 cucumber
2 ounces olive oil
2 tablespoons Worcestershire sauce
2 tablespoons sesame oil
1 tablespoon garlic powder
1 tablespoon italian seasoning

Steps:

  • Blanch Asparagus but leave crunchy.
  • Dice Cucumber.
  • Strain Oranges.
  • Mix Olive Oil, Worcester Sauce, Sesame Oil, Garlic Powder and Italian Season in a mixing bowl.
  • Add Asparagus, Oranges and Cucumber to the mix and mix thoroughly.
  • Place into plastic baggie for marinating.
  • Marinate at least 2 hours or overnight.

WARM ROASTED ASPARAGUS SALAD WITH ORANGE DRESSING AND PARMESAN



Warm Roasted Asparagus Salad with Orange Dressing and Parmesan image

A fresh take on Spring asparagus, with a lovely orange dressing. This dish is delicious both warm and at room temperature. Perfect for Easter dinner or brunch.

Number Of Ingredients 8

2 oranges
1 purple shallot, minced
3 Tbsp. white wine vinegar
1/2 tsp. Dijon mustard
2-3 Tbsp. extra virgin olive oil
Salt and freshly ground black pepper
20 spears green asparagus, trimmed of woody ends
Parmesan cheese, for shaving

Steps:

  • Preheat oven to 375° F. Arrange asparagus in a single layer on a baking sheet. Drizzle with a bit of olive oil and shake pan to coat asparagus with oil. Sprinkle with salt and pepper. Roast in pre-heated oven for 5-8 minutes (depending on thickness of asparagus) until just tender-crisp (so they stay a nice bright green colour).
  • Meanwhile, make the dressing. Zest 1 orange into a medium bowl. Set aside. Juice both oranges and boil the juice down in a small saucepan over medium heat until reduced to about 3 tablespoons (No need to strain now, as you will strain later).
  • Mince the shallot and put it in a small bowl with the vinegar poured over. Set aside 5 minutes.
  • Add the mustard to the bowl with the zest. When the orange juice has reduced, strain it over the zest mixture. Drain the shallots, discarding the vinegar and add the shallots to the zest mixture. Whisk it all together, then slowly whisk in the olive oil a bit at a time. Taste after 2 Tbsp. and add a bit more if you feel it needs it for balance. Season with salt and pepper. Set aside.
  • Once asparagus is cooked, arrange on a serving platter (something a little dished and not flat, as sauce is thin). To make it look pretty, using a slotted spoon, spoon some of the zest only across the top of the asparagus, about 1/3 up from the bottom, then spoon some more of the full dressing over top. Sprinkle with freshly shaved Parmesan and a bit more salt and Pepper.
  • Nice warm or at room temperature.
