These are always the first snacks to disappear when we entertain, and a favorite of guests! Any leftover prosciutto is also great wrapped around...

30 fresh asparagus spears, trimmed to width of ham slices
8 oz pkg cream cheese, room temperature
2 tsp prepared horseradish, to taste
1/2-1 tsp sugar, to taste
1/4 tsp dried dill weed
1 pinch salt and pepper
15 slice good quality prosciutto ham

Steps:

  • 1. Wash and trim asparagus spears - save bottoms for another use if not too woody. Blanch briefly 2 min in boiling salted water and remove stalks to bowl of ice water to stop cooking process and retain crispness/color.
  • 2. Cream together cheese, horseradish, sugar, and spices to your personal taste. (Some like it lighter/sweeter and others like the full-on horseradish flavor!) Blend thoroughly with mixer until creamy.
  • 3. Drain and dry asparagus spears. Spread cream cheese mixture onto prosciutto slices in moderate layer, then place 2 asparagus spears across the width of ham slice. Roll up asparagus in cream cheese mixture to end of ham strip. Keep refrigerated until served. If you are finicky about uniform appearances, you can slice off the bottom of each with a sharp knife after refrigerating a while for exactly flat and matching edges (cook gets to eat the scraps!). These are colorful, quick and easy, and very unusual snacks to serve as many people have never tasted them before. The sweet, salty, and spicy elements blend together with the savory asparagus to make an explosion of mouth feel and flavor! Always a hit at our house, or when we take them to parties.

9 ounces deli smoked ham
5 tablespoons low-fat cream cheese
1 lb asparagus, about 15 spears,trimmed
ground black pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Flatten and dry the ham slices.
  • Stack ham in piles of 2 slices each; spread each stack with 1 tsp of cream cheese.
  • Sprinkle with freshly ground black pepper.
  • Place 1 asparagus spear on one of the long sides of each ham stack; roll up.
  • Place in 13x9-inch baking dish.
  • Bake for 15 to 20 minutes or until heated through.
  • NOTE: You can make this ahead, just assemble as directed, cover tightly with plastic wrap and foil.
  • Refrigerate overnight or until ready to use.
  • Uncover and bake as directed.

1 medium sweet red pepper, cut into 16 strips
8 ounces Havarti cheese, cut into 16 strips

16 whole chives

  • In a large skillet, bring 1 in. of water to a boil. Add asparagus; cover and cook for 3 minutes. Drain and immediately place asparagus in ice water. 2 (8 ounce) packages cream cheese, softened
2 teaspoons horseradish
2 teaspoons dijon-style mustard
1/2 teaspoon Worcestershire sauce
1 lb ham, thinly sliced

Steps:

  • Cook asparagus until crisp-tender.
  • Mix together cream cheese, horseradish, mustard and Worcestershire sauce.
  • On each slice of ham spread a thin layer of cheese mixture.
  • Place one spear of asparagus at one end of ham slice, and roll up, jelly roll-style.
  • Slice into bite-sized pieces.

Came up with this out of the blue. My dad really liked them; he claimed the leftovers for his lunch the next day. I served these for dinner but I'm sure they would make a great appetizer. Would probably also be tasty with chicken used in place of the ham.

8 ounces cooked lean ham
6 ounces monterey jack pepper cheese, shredded
3/4 cup asparagus
1 very large potato (Big. As big as you can find)
15 slices canned jalapenos
1/4 teaspoon red pepper
1/4 teaspoon black pepper
1/4 teaspoon salt
cooking spray

Steps:

  • Prepare veggies. Thinly slice big potato in the long direction. You'll need about 15 slices that you are able to roll up and hold together with a toothpick. The bigger, the better. Cut asparagus into 1" sections. (I steamed my asparagus before baking the rolls but I'm not sure if it was necessary). Toss asparagus with small amount of oil, salt, and pepper.
  • Spray cooking sheet with oil and place potato slices onto sheet.
  • In middle of each slice, place small amount of ham and asparagus. Put a small amount of cheese in each also. Don't put too much in or it'll melt out all over the cookie sheet. Reserve some cheese for topping.
  • Roll each potato slice and stab all the way through with tooth pick.
  • Spray rolls with cooking spray and sprinkle with red pepper, black pepper and salt. Place 1 slice of jalapeno on each tooth pick (so it doesn't fall off). Sprinkle reserved cheese on top of rolls.
  • Bake at 425F for 15-20 minutes, until potatoes begin to crisp.

12 -16 stalks green asparagus
one package crescent roll (8-ounce)
Dijon mustard
10 slices lean ham

Steps:

  • Preheat the oven to 375 degrees F.
  • Break off the woody parts of the stem so that only about the top 3 inches or so of the stalk remain.
  • Place the asparagus in a microwavable bowl with just enough water to cover. Place a towel over the top of the bowl. Microwave on 50 percent power until tender (2 minutes). Drain.
  • Open the package of crescent rolls and spread out the crescent roll dough sheets evenly on a large baking sheet. Roll out each sheet as much as possible. Coat the dough sheet with an even layer of Dijon mustard.
  • Wrap 1-2 asparagus stalks in 1-2 slices of ham. Place at the wide end of the crescent dough and roll up in the dough. Repeat for each crescent roll.
  • Bake until slightly golden brown (about 10-12 minutes). Remove from the oven, let cool slightly, and serve warm.
