1 pre-made pizza dough
3/4 cup pre-made alfredo sauce
1 garlic clove, minced
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese
1/4 cup parmesan cheese
12 pieces asparagus, cleaned, trimmed to 6 inches and blanched
12 pieces prosciutto
1/4 cup sliced green onion
1/4 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon tarragon

Steps:

  • Preheat oven to 450°F.
  • Dust a flat, parchment covered ,surface with corn meal. Place dough in center and form into a rectangle. Spread evenly with alfredo sauce and sprinkle evenly with garlic and green onion. Wrap each piece of asparagus with prosccuito and place on pizza .
  • Top with cheese and seasonings and place on a flat baking sheet.
  • Bake at 450°F about 18 minutes or until crust is golden brown. Serve hot.

1 (10-ounce) fully baked, thick pizza crust
1/2 cup marinara sauce
1 cup shredded mozzarella cheese
1 (3-ounce) package thinly sliced prosciutto (deli section)
1 ounce soft fresh goat cheese, coarsely crumbled
2 tablespoons fresh basil, chopped

Steps:

  • Preheat oven to 425 degrees F.
  • Lay pizza crust on a foil-covered pizza pan or cookie sheet. Spread sauce evenly over pizza crust. Sprinkle mozzarella cheese over crust, leaving a 1-inch border around the edge. Arrange prosciutto on top of cheese. Sprinkle goat cheese over prosciutto. Bake until prosciutto is crisp and cheese is melted, about 12 minutes. Sprinkle basil over pizza. Cut pizza into 6 slices and serve.

1 lb fresh asparagus spear, tough ends trimmed off
2 slices prosciutto, cut in 1-inch wide strips
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped roasted red peppers
1/4 cup crumbled goat cheese or 1/4 cup feta cheese

Steps:

  • Preheat oven to 450°F.
  • Line a 15-inch X 10-inch baking pan with foil.
  • Wrap asparagus spears in bundles of 3 or 4 spears with strips of prosciutto around the middle.
  • Place bundles in a single layer on baking pan tucking under ends of prosciutto.
  • Drizzle with olive oil; sprinkle with salt and pepper; top with roasted red peppers.
  • Bake for 8-10 minutes or until asparagus is crisp tender.
  • Sprinkle with cheese and continue baking for 5 minutes or until cheese is soft.

1/3 cup marinara sauce

2 ounces thinly sliced prosciutto
1 ounce fresh goat cheese coarsely crumbled
2 tablespoons chopped fresh basil

Steps:

  • Preheat the oven to 425 degrees F. Line a pizza pan or baking sheet with foil and lay the pizza crust on top. Spread the sauce evenly over the crust. Sprinkle with the mozzarella, leaving a 1-inch border around the edge.

6 asparagus spears, trimmed, halved lengthwise, cut into 1 1/2-inch pieces
3 tablespoons extra-virgin olive oil
1 10-ounce tube refrigerated pizza crust dough
1 14 1/2-ounce can diced tomatoes with Italian seasonings, drained
1 5.5-ounce log soft fresh goat cheese (such as Montrachet)
3 tablespoons chopped fresh marjoram
1/4 teaspoon dried crushed red pepper

Steps:

  • Preheat oven to 400°F. Toss asparagus with oil in medium bowl to coat. Unroll pizza dough on baking sheet, forming 9x12-inch rectangle. Spoon tomatoes over dough, leaving 3/4-inch plain border. Scatter asparagus with oil over tomatoes. Bake pizza 7 minutes. Remove from oven. Crumble goat cheese over pizza. Sprinkle with marjoram and crushed pepper. 8 sheet(s) phyllo pastry
8 slice prosciutto
1/2 red bell pepper cut into thin strips
3/4 - 1 lb thin, trimmed asparagus
1/3 c whole milk ricotta
4 oz goat cheese - softened
1/3 c alfredo sauce (your own or purchased)
1 large egg yolk
2 Tbsp freshly grated parmesan cheese
4 Tbsp butter - melted
salt & pepper to taste
3 Tbsp minced fresh chives

Steps:

  • 1. Blanch the asparagus uncovered in a pot of boiling salted water for 2 - 3 minutes. Drain and pat dry with paper towels and set aside.
  • 2. In a medium bowl mix together the ricotta, goat cheese, Alfredo sauce, egg yolk, chives, and salt and pepper to taste. (It's also awesome with Asiago cheese sauce instead of the Alfredo)
  • 3. Put 1 sheet of the phyllo on a work surface and keep the rest covered with a damp towel so that they don't dry out. Brush with some of the melted butter and then place the second sheet on top of the first again brushing with melted butter. Top that with a third sheet, brush with butter and sprinkle with 1 tbsp of grated parmesan cheese. Lay the 4th sheet over that and brush once again with the butter.
  • 4. Arrange 4 slices of the prosciutto along one short end overlapping as needed but leave a border of 1 1/2" on the bottom and both long sides. Spread half of the goat cheese mixture on top of the prosciutto.
  • 5. Take half of the asparagus and place them on top of the cheese parallel to the short end of the pastry. Arrange half of the red pepper strips in between the asparagus.
  • 6. Fold in the sides and bottom edge of the phyllo over the filling and roll it up to form a roll. Arrange seam side down on an ungreased baking sheet, brush the top and sides of the strudel with melted butter and cut several vents in the top of each.
  • 7. Repeat with the remaining ingredients to make the second strudel.
  • 8. Bake in a preheated 400F oven for 25 - 30 minutes until they are golden brown. Cool on a wire rack for 5 - 10 minutes before slicing with a serrated knife. Enjoy!
