ASPARAGUS APPETIZER - SPEAR ECSTASY
This is a wonderful light apetizer. I served it at a luncheon and all asked for the recipe. My son-in-law did the "taste test" for me and wanted any left-overs. (Re the capers listed below: it does take 1 tbsp PLUS 1 tsp, drained and chopped) Recipe from Food Network.

Steps:
- To make Dipping Sauce: Mix well the sour cream, mayo, onion, lemon juice, capers, tarragon, onion powder, sugar and pepper together using a whisk.
- Refrigerate until chilled, about 2 hours.
- Steam asparagus until fork tender, 6 to 8 minutes.
- Mix Ice Bath together in large bowl. Plunge asparagus into ice water and let sit until cold.
- (I personally skipped the water bath and just let steamed asparagus drain in colander until cooled.) Transfer to paper towel to drain.
- Refrigerate.
- Serve chilled asparagus with dipping sauce.
- Note Do Ahead tips: The dipping sauce can be prepared up to 2 days in advance and regrigerated. The asparagus can be prepared 1 day in advance and refrigerated.

Steps:
- Cut bacon in half strips.
- Fry in a pan until just beneath Crisp Not to limp.
- Lay on paper towels to degrease the Bacon.
- Cut Asparagus into 5/6 inch lengths. Pick thin Stems not thick. Steam the Asparagus in a Steamer until Tender.
- Cut cheese into thin strips about 5x1/2 inches long.
- Melt Butter.
- White bread. Cut off the crust, and roll out thinly with a rolling pin.
- Lay Asparagus, bacon and cheese on a diagonal into the bread.
- Roll the bread upward and seal with butter.
- spread Butter on top so to brown.
- Put into Broiler until Bread is Browned.
- Serve.
SPEAR ECSTASY
Asparagus With Lemon-Tarragon Dipping Sauce Arrange the asparagus spears in beautiful crystal glasses or silver cups and pour the sauce into a matching glass. This dish is best when the dipping sauce and asparagus are served chilled, so allow time to refrigerate.

- Heat the oven to 400°F. Unfold the pastry sheets on a lightly floured surface. Spread 3 tablespoons cheese on each pastry sheet. Top each with 4 slices prosciutto. Cut each into 15 strips crosswise, making 30 in all.
- Tightly wrap 1 pastry strip around each asparagus spear, prosciutto-side in. Place the pastries seam-side down onto 2 baking sheets.
- Bake for 15 minutes or until the pastries are golden brown.
- TIPS
- • Don't try to manipulate Puff Pastry that's not completely thawed; unfolding it while it's still frozen could tear the sheet.
- • When cutting Puff Pastry, the sharper the knife or pastry cutter, the better. A dull edge can cement layers together and prevent pastry from rising.
ASPARAGUS SPEARS WITH SESAME

- Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
- Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
- Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
- Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.
CRUNCH CRAZY ASPARAGUS SPEARS
Steps:
- Preheat the oven to 425 degrees F.
- Prepare the asparagus by trimming off the tough woody stem.
- Set up a breading station by whipping the egg whites and mayonnaise together (the mayonnaise helps the whites stick to the asparagus). Sprinkle with some salt and pepper.
- In a separate, dish add the panko, Parmesan, Italian seasoning and paprika. Sprinkle with salt and pepper and mix. Dip each asparagus spear in the egg wash and then coat evenly in the seasoned panko breadcrumbs. Place the spears on a wire rack over a baking sheet and lightly drizzle with some olive oil (this will help them crisp up).
- Bake until golden and crispy, 15 to 17 minutes. Serve immediately.
EASY BREEZY ASPARAGUS APPETIZER
This easy appetizer has been a hit at many of my parties. The pickled asparagus goes well with the cream cheese and chives. The asparagus comes in various thicknesses. If thin, use three sprigs. If thicker, one sprig is enough. Small jars of pickled asparagus can be found in most grocery stores; large jars are available at stores such as Sam's Club.

- Bring a pot of water to boil and blanch the asparagus. Drop into an ice bath to stop cooking.
- Roll out pie crust to 1/8 inch thickness.
- Slice the prosciutto into long thin strips.
- Starting at the top of the spear, wrap a strip of prosciutto around the asparagus, spiraling it down to the base. Do the same with the pie crust strips, overlaying the prosciutto.
- Lay each spear on a cookie sheet. When each one is wrapped, brush lightly with melted butter and sprinkle with sesame seeds.
- Bake at 350° for about 8 minutes, or until crust is golden.
- Serve warm.

- Trim the asparagus stalks so that the spears are 5 inches long. In a deep skillet, bring 1 1/2 inches of salted water to a boil and cook the asparagus until they are crisp-tender, about 2 minutes. in a colander, drain the asparagus and rinse under cold water. Dry the asparagus well on paper towels.
- In a small bowl, mash the Boursin with a fork until it is smooth. Cut 1 slice of prosciutto lengthwise into 1-inch strips and spread each strip with about 1/2 teaspoon Boursin. Spread about 1/4 teaspoon mustard over the Boursin and wrap each strip in a spiral around an asparagus spear, trimming any excess. Make more hors d'oeuvres with the remaining prosciutto, Boursin, mustard, and asparagus spears in the same manner.

BLUE CHEESE ASPARAGUS ROLLUPS
These are lovely appetizers to serve and so easy to make and not too expensive ingredients. You may freeze them before baking just allow a little longer in the oven when baking from the frozen state. I have just made these again using square white sandwich bread. I needed 25 slices of bread, put a generous tbsp of the filling on each, cut them in two and ended up with 50 appies. If using the sandwich bread you will need few extra asparagus but most aaparagus are longer than the slice of bread so you get 1 1/2 from most spears

- Flatten each slice of bread with a rolling pin so it is less than 1/4" thick.
- Mix Blue cheese, worcestershire sauce, beaten egg, cream cheese and seasonings.
- Spread the mix on each slice of bread.
- put an asparagus spear at the edge of each slice and roll up like a Jelly roll.
- Coat the outside of each roll with butter.
- Cut each roll into 3 pieces.
- Place, seam side down, on a cookie sheet and bake for about 20 minutes, 375°F.
- Turn over to the other side after about 10 minutes.
- The rolls should be nice and golden.
PANKO-CRUSTED ASPARAGUS SPEARS

- Preheat oven to 450°F Line a baking sheet with foil; coat with cooking spray.
- Combine mayonnaise, scallions, miso, chile-garlic sauce and oil in a small bowl.
- Place asparagus in a shallow dish and toss with half the miso mixture (about 1/4 cup), making sure the asparagus is well coated.
- Combine panko and sesame seeds in another shallow dish. Working with one spear at a time, roll in the panko mixture and place on the prepared baking sheet, leaving a bit of room between each spear. Coat the prepared spears with cooking spray.
- Roast the asparagus until the coating is browned and crispy and the asparagus is tender, 20 to 25 minutes. Serve with the remaining miso mixture as a dipping sauce.
- TIPS & NOTES.
- Miso is fermented soybean paste made by inoculating a mixture of soybeans, salt and grains (usually barley or rice) with koji, a beneficial mold. Miso is undeniably salty, so a little goes a long way. White or sweet miso (Shiromiso), made with soy and rice, is yellow and milder in flavor; use for soup, salad dressings and sauces for fish or chicken. Look for it near tofu at well-stocked supermarkets.
- Although we typically use whole-wheat panko-style breadcrumbs, for this recipe we recommend using white, Japanese-style panko breadcrumbs for the best texture and flavor. Look for them in the Asian-food section of most supermarkets or near other breadcrumbs.
