This 10 minute grilled asparagus dish is made with just 4 simple ingredients! It is bursting with flavor and the perfect summer side dish or appetizer.

1 lb. asparagus, stems trimmed
1 tbsp olive oil
1 lemon, halved
Salt and pepper, to taste
1/4 cup crumbled feta cheese (regular or reduced fat)

Steps:

  • Toss the asparagus with olive oil, salt, and pepper. Make sure to wash and trim the asparagus before cooking.
  • Place the asparagus and halved lemons on the grill. Cook the asparagus for about 3 minutes on each side. Cook the lemon cut side down for 5-6 minutes. You can also cook the asparagus in a 425-degree oven for 8-10 minutes.
  • Top with feta cheese with lemon juice.

Tender spears of asparagus get layered between pieces of lavash with feta, mozzarella and za'atar for a mouthwatering grilled cheese ready in minutes. A Middle Eastern staple, lavash is great for making wraps and sandwiches, but you could also substitute another kind of flatbread.

Steps:

  • Cook 5 trimmed asparagus spears in salted boiling water until crisp-tender, 2 to 3 minutes. Drain and pat dry. Top one 4-inch piece lavash (or other flatbread) with the asparagus, 2 tablespoons shredded mozzarella, 1 tablespoon finely crumbled feta, 1/4 teaspoon za'atar (Middle Eastern spice blend), a few thin slices red onion and another piece of lavash. Brown in butter in a nonstick skillet over medium heat until crisp, about 2 minutes per side. Sprinkle with more za'atar.

1/4 cup olive oil
4 cloves garlic, minced
1 teaspoon lemon, zest of
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes
kosher salt (to taste)
fresh ground black pepper (to taste)
1 -2 tablespoon chopped fresh Italian parsley
3 -4 ounces crumbled feta cheese
1 lemon (juice of, no seeds)

Steps:

  • Preheat oven to 400F.
  • Heat olive oil, minced garlic, lemon zest, oregano, and red pepper flakes in a small pan over low heat until garlic becomes golden and oil becomes fragrant; remove from heat and allow to cool.
  • Bend asparagus gently until it breaks at a natural point and discard ends.
  • Toss asparagus pieces with infused olive oil and place in a single layer on a baking sheet (one with a side edge).
  • Season asparagus with salt and pepper.
  • Sprinkle asparagus with crumbled feta cheese.

1 tablespoon Dijon mustard
2 tablespoons champagne vinegar (can sub rice vinegar or white wine vinegar)
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
1/2 cup extra-virgin olive oil
1 1/2 lbs asparagus
1 pint cherry tomatoes
3 slices country-style white bread, cut into 1/2-inch cubes
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh chives or 2 tablespoons green onions

Steps:

  • Prepare the grill for direct cooking over medium heat (350° to 450°F) and preheat the grill pan.
  • In a small bowl whisk together the mustard, vinegar, salt and pepper. Slowly add in the oil, whisking constantly until it is emulsified.
  • Remove and discard the tough bottom of each asparagus spear by grasping at each end and bending it gently until it snaps at its natural point of tenderness, usually about two-thirds of the way down the spear.
  • Spread the asparagus on a large plate. Drizzle with 2 tablespoons of the vinaigrette and turn the spears until they are evenly coated. (I lightly salt the asparagus at this point.) In a medium bowl toss the tomatoes and bread cubes with 2 tablespoons of the vinaigrette.
  • Brush the cooking grates clean. Spread the tomatoes and bread cubes in a single layer on the grill pan and lay the asparagus on the cooking grate. Grill over direct medium heat, with the lid closed as much as possible, until the asparagus is tender, the tomatoes begin to soften, and the bread cubes are toasted, turning often. The asparagus will take 6 to 8 minutes and the tomatoes and bread cubes will take 2 to 4 minutes.
  • Arrange the asparagus on a platter and top with the tomatoes, croutons, feta, and chives. Serve with the remaining vinaigrette.
