Asian Chicken Lettuce Wraps (better than P.F. Chang's)! A quick, easy, and healthy dinner that tastes delicious! Gluten and dairy-free!

1 lb ground chicken
1 TBS peanut oil
½ onion (minced)
1 cup red or green pepper (diced)
1 8 oz can water chestnuts (drained and minced)
3 TBS soy sauce*
3 TBS hoisin sauce**
1 TBS sesame oil
1 TBS rice vinegar
1 TBS peanut butter
1 TBS honey
2 tsp sweet chili sauce ((Trader Joe's!))
½ tsp garlic powder
¼ tsp powdered ginger
¼ cup peanuts (crushed.)
Lettuce or your favorite Asian salad

Steps:

  • Whisk together sauce ingredients until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it and ensure everything is well-mixed.
  • Heat 2 TBS peanut oil in a frying pan. Once hot, add ground chicken.
  • Cook until some pieces are starting to brown. Add onion and cook for 5 minutes or until the onion is becoming translucent.
  • Add the peppers and water chestnuts and cook about 5 minutes or until peppers are becoming soft.
  • Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.
  • Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!

1/2 cup hoisin sauce
1/4 cup reduced-sodium soy sauce (plus 1 tablespoon, use tamari to make gluten free)
2 tablespoons rice vinegar
2 teaspoons sesame oil
1 tablespoon extra-virgin olive oil
2 pounds ground chicken breast
1 small bunch green onions (thinly sliced, white/light green and dark green parts divided)
1 tablespoon freshly grated ginger
2 cloves garlic (minced (about 2 teaspoons))
8 ounces baby bella cremini mushrooms (finely chopped)
1 1/2 cup grated carrots (from about 3 large carrots)
1/2 teaspoon red pepper flakes (reduce to 1/4 teaspoon or omit if sensitive to spice)
2 cans water chestnuts, drained and finely chopped ((8 ounce cans) drained and finely chopped)
2 heads butter lettuce

Steps:

  • Lightly coat a 5-quart or larger slow cooker with nonstick spray. In a small bowl, stir together the hoisin, soy sauce, rice vinegar, and sesame oil. Set aside.
  • Heat the olive oil in a large skillet over medium high. Add the chicken and brown the meat, breaking it into small pieces. Continue cooking until no longer pink, about 4 to 6 minutes. Stir in the white and light green parts of the green onions, ginger, and garlic. Cook 30 additional seconds.
  • Transfer the meat mixture to the slow cooker. Stir in the chopped mushrooms, carrots, red pepper flakes, and sauce. Cover and cook on LOW for 2 to 3 hours until the mixture is thickened and the chicken is ultra tender. (Do not be tempted to cook on HIGH, as the chicken will become tough.) Stir in the water chestnuts and green parts of the green onions.
  • To serve, separate the butter lettuce leaves and fill with the chicken mixture. Enjoy hot.

4 green onions, finely chopped

DRESSING:

1 tablespoon water
1 garlic clove, halved
3/4 teaspoon minced fresh gingerroot
1/4 teaspoon coarsely ground pepper
1 cup fresh cilantro leaves
6 lettuce leaves
6 whole wheat tortillas (8 inches), room temperature

Steps:

  • In a large bowl, combine the chicken, green onions, cabbage and carrot. For dressing, in a small food processor, combine the vinegar, oil, honey, water, garlic, ginger and pepper. Cover and process until blended. Add cilantro; cover and process until chopped. Pour over chicken mixture; toss to coat., Place a lettuce leaf on each tortilla; top with chicken mixture. ½ cup peanut butter, creamy
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon sriracha sauce
1 teaspoon sesame oil
½ cup vegetable oil
2 teaspoons sesame seeds
4 flour tortillas, 10-inch
4 Romaine lettuce leaves
1 orange, segmented
1 cup Napa cabbage, shredded
1 cup carrot, shredded
½ red bell pepper, thinly sliced
2 green onions, white part only, sliced

Steps:

  • 1.Heat Crispy Chicken Strips according to package directions. 2.Make peanut butter sauce by combining peanut butter, vinegar, soy and sriracha sauces in a mixing bowl. Slowly whisk in sesame and vegetable oils until well combined. Stir in sesame seeds and set aside. 3.Assemble wraps by spreading 2 tablespoons of sauce on each tortilla and layering with Romaine, chicken strips, ¼ of each of the orange segments, cabbage, carrots, bell peppers and green onions. Fold the bottom of the tortilla over the filling, fold in the sides and roll tightly. - Remember to wash hands and surfaces before preparing food

Much of the pleasure of eating this wrap comes from the crunchy textures of the lettuce and the shredded vegetables. If you poach and shred a couple of chicken breasts at the beginning of the week, then these wraps are quickly thrown together.

2 flour tortillas
4 to 6 romaine lettuce leaves, cut away from the ribs
1/2 cup shredded carrots
1/4 cup cucumber, cut in julienne (take several thin slices of cucumber, stack them and cut them in thin strips)
1/8 sweet red pepper, cut in very thin strips
1 tablespoon freshly squeezed lime juice
2 tablespoons extra virgin olive oil
1/2 avocado, sliced
1/2 to 3/4 shredded poached chicken breast
Salt
freshly ground pepper to taste
Optional: cilantro, basil, tarragon, other herbs

Steps:

  • In a medium bowl, combine all of the ingredients except the lettuce and toss together. Taste and adjust seasoning.
  • Warm a large flour tortilla for about 10 seconds in the microwave or over a burner, just until flexible. Lay it on your work surface and cover with lettuce leaves, leaving a two-inch border all the way around. Place half the chicken mixture over the lettuce in a strip on the bottom half of the tortilla. Spoon some of the juices from the bottom of the bowl over the lettuce.
  • Fold the bottom edge of the tortilla over the filling. Fold in the sides, then roll up, squeezing the tortilla so that the roll is compact. Place the roll on a piece of plastic wrap. Fold in the sides of the plastic over the ends of the wrap, and roll up tightly to secure. Repeat with the remaining tortilla, lettuce and filling. Refrigerate for at least five minutes and for as long as 24 hours.

1/2 cup finely shredded bok choy
1/2 cup finely shredded napa cabbage
2 tablespoons julienned water chestnuts
1/3 cup julienned carrot
1/4 cup julienned shiitake mushroom
4 tablespoons sesame dressing
8 ounces grilled chicken breasts
2 whole wheat tortillas
1/4 cup sunflower sprouts

Steps:

  • Heat a medium saute pan over medium high heat and add the vegetables.
  • Stir-fry for about 1 minute and add the Sesame Dressing. Cook another 2 minutes.
  • Remove from heat and set aside.
  • Slice the chicken into strips and add to the vegetables and toss.
  • Lay the tortillas on a cutting board.
  • Divide the filling among the tortillas.
  • Top with sunflower sprouts.
  • Fold in the sides of the wrappers and begin folding from the bottom to form the wrap.
  • Cut each wrap in half and serve.

1 bunch green onions, sliced
1 (8 ounce) can water chestnuts, drained and diced
¼ cup hoisin sauce
2 tablespoons light soy sauce
1 tablespoon Sriracha
¾ tablespoon rice vinegar
1 teaspoon minced fresh ginger
½ teaspoon red pepper flakes
1 tablespoon olive oil
1 cup diced yellow onion
1 pound ground chicken
3 cloves garlic, minced
1 tablespoon sesame oil
salt and ground black pepper to taste
8 leaves Bibb lettuce, or more as needed

Steps:

  • Set 2 to 3 tablespoons green onions aside for garnish. Combine remaining green onions, water chestnuts, hoisin sauce, soy sauce, Sriracha, rice vinegar, ginger, and red pepper flakes in a bowl.
  • Heat oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add ground chicken, garlic, and sesame oil. Cook and stir until chicken is crumbly and no longer pink, 5 to 10 minutes.
  • Add hoisin mixture to the skillet and cook until heated through, about 5 minutes. Season with salt and pepper.
  • Fill lettuce leaves with chicken mixture and top with reserved green onions.
