2 medium carrots (grated)
1 medium red pepper (finely diced)
2 stalks celery (finely diced)
¼ medium red onion (finely diced)
¼ cup cilantro (chopped)
2 tablespoons toasted sesame seeds
¼ cup roasted peanuts (can sub almonds or cashews)
2 tablespoons sesame oil
1 tablespoon lemon juice
1 tablespoon honey
2 teaspoons soy sauce (gluten-free if needed)
1 teaspoon grated ginger
1 small garlic clove (grated (preferably with a Microplane))
A pinch of sea salt

Steps:

  • Combine all the sesame dressing ingredients in a small jar and shake it well.
  • Add the Asian salad ingredients to a medium-sized bowl.
  • Pour the dressing over the top and toss to coat.

The apples add interest and a little crunch...and you can easily substitute cooked chicken for the turkey," she suggests.

1 package (3 ounces) ramen noodles
1-1/2 cups cubed apples
1-1/4 cups cubed cooked turkey breast
1/2 cup reduced-fat cheddar cheese
1/2 cup frozen peas, thawed
1/4 cup sliced green onion
1/4 cup chopped sweet red pepper
1/2 cup fat-free poppy seed salad dressing
2 tablespoons reduced-fat sour cream
1/4 teaspoon salt

Steps:

  • Remove seasoning packet from ramen noodles and discard or save for another use. Prepare noodles according to package directions. Drain an rinse in cold water., In a large bowl, combine the noodles, apples, turkey, cheese, peas, green onions and red pepper. In a small bowl, combine the dressing, sour cream and salt. Stir into noodle mixture. Cover and refrigerate for at least 1 hour.

3 green onions, finely chopped
2 tablespoons hoisin sauce
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/4 pounds ground turkey
1 tablespoon olive oil
SLAW:
3 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper
2 medium apples, julienned
2 green onions, finely chopped
ASSEMBLY:
4 hamburger buns, split and toasted
2 tablespoons hoisin sauce

Steps:

  • In a large bowl, mix green onions, hoisin sauce, ginger, garlic, salt and pepper. Add turkey; mix lightly but thoroughly. Shape into four 3/4-in.-thick patties., In a large cast-iron or other heavy skillet, heat oil over medium heat. Cook burgers until a thermometer reads 165°, 7-9 minutes on each side., Meanwhile, for slaw, in a large bowl, whisk oil, vinegar, mustard, salt and pepper. Add apples and green onions; toss to coat., To assemble, spread bun bottoms with hoisin sauce. Top with burgers and slaw; replace tops. Freeze option: Place patties on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 165°.

1 tablespoon each vegetable and Oriental sesame oil
Quarter size fresh ginger, minced
2 green onions, thinly sliced
Salt and freshly ground black pepper
1 head Belgian endive, separated into spears
1/4 cup finely diced red bell pepper
2 tablespoons chopped cilantro or peanuts

Steps:

  • Cut the turkey into small cubes, making sure to remove all fat and skin. Make a dressing of the soy sauce, sherry, oils and ginger and toss with the turkey and green onions. Season to taste with salt and pepper

1/4 cup soy sauce
2 tablespoons rice vinegar
2 teaspoons toasted sesame oil
4 drops hot chili oil
2 small cloves garlic, minced
1/2 teaspoon grated fresh ginger
1 teaspoon vegetable oil
2 cups julienned snow peas
2 cups mung bean sprouts
2 cups diced cooked turkey
2 tablespoons sesame seeds (preferably black)
6 large iceberg lettuce leaves, halved, center ribs removed

Steps:

  • Make a dipping sauce by combining soy sauce, vinegar, sesame oil, chili oil, garlic and ginger in a small mixing bowl. Blend well.
  • Heat the vegetable oil in a large nonstick skillet. Add the snow peas and sprouts and stir-fry for 2 minutes. Add the turkey and cook until heated through, about 1 minute. Remove from heat and stir in the sesame seeds.

3/4 cup chopped unpeeled apple
1/2 cup sliced celery
2 tablespoons raisins
1/3 cup Italian salad dressing
