Crispy Air Fryer Zucchini Chips image

When the garden is overflowing with zucchini, give this zucchini chips recipe a try. Cooking them in the air fryer makes the chips crispy with very little oil. Panko gives them a crunchy texture, while the seasoned bread crumbs add a hint of Pecorino Romano cheese flavor. Enjoy by themselves or with your favorite dipping sauce....

2 zucchini, medium
2 eggs, beaten
1/2 c seasoned bread crumbs (with Pecorino Romano cheese)
1/2 c Panko bread crumbs
salt
olive oil spray

Steps:

  • 1. Slice zucchini into slices, about 1/4-inch thick each. Sprinkle salt on top and bottom. This helps draw out the moisture. Let slices sit about 15 minutes.
  • 2. Blot the moisture with a paper towel.
  • 3. In a bowl, whisk the eggs.
  • 4. In another bowl, mix the Panko and bread crumbs together.
  • 5. Dip the zucchini slices into the egg and then the bread crumb mixture.
  • 6. In a single layer, place the zucchini slices in the air fryer basket. Spray with olive oil.
  • 7. Fry at 390 degrees for a total of 8 minutes. Flip the slices after 4 minutes. Spray the other side with more olive oil. Continue cooking for the remaining 4 minutes.
