ASIAN-STYLE GRILLED TILAPIA
I have to put this recipe somewhere before it gets thrown away!! It was in the paper as a "Quick Meal". I just love tilapia!! Feel free to add more garlic or ginger to this sauce....the more the merrier, right?

Steps:
- Combine the soy sauce, sugar, garlic, lime juice, ginger and red pepper flakes in a wide, shallow baking pan that will hold all of the fish in a single layer.
- Stir briefly to dissolve the sugar.
- Add the tilapia, then turn it over so that it's coated all over with the marinade.
- Set aside for 20 min or so.
- Heat the broiler to high, and move the oven rack to position closest to heat.
- Slide the pan into the oven, and broil the fish for 5 minute Keep the oven door ajar so the broiler element stays lit.
- Turn the pan around (back to front), and broil for 5 more minute.
- If the juices in the pan appear to burn, add a little water to the dry spot to prevent burning.
- The fish should be opaque and flaky.
- Spoon the sauce over the fish when serving.

ASIAN GLAZED TILAPIA
This recipe comes from a local restaurant. I finally begged and begged and the chef gave me the ingredient list. I had been experimenting with several recipes using a marinade of soy sauce and balsamic vinegar trying to recreate my favorite menu item, but the fish was always over powered. Not so with this combination. The sauce lends the fish a sweet flavor, but doesn't overwhelm. I made it for my friends and they all agreed it was one of the best seafood dishes they've ever eaten. Sorry, but I didn't have a chance to snap any photos. I served the fish over Asian rice straw noodles - I think any light noodle would work nicely. I tossed the noodles with a few tablespoons of the glaze used on the fish, and paired with sautéed zucchini and yellow squash which were julienned for a pretty side dish. I hope you give this a try. It's really quick, easy, and impressive.

Steps:
- Sprinkle each side of the fish with salt and pepper.
- Coat a sautée pan with Olive Oil or your favorite cooking oil. I find that a non-stick pan works best for cooking this delicate fish.
- Prepare the glaze by mixing equal parts Hoisin with Soy sauce. The hoisin is thicker and sweeter giving balance to the soy. You won't need that much for glazing the fish so you can use the remainder to toss in with your noodles if you want.
- Brush the tops of each of the fish with the glaze and lay that side down on the pan allowing the glaze to form a seared on crust.
- Brush the other side of the fish with glaze before flipping.
- Each side takes about 4-6 minutes depending on how thick your filet is. I had big meaty ones so total cooking time was about 15 minutes. If you are unsure whether they are done, make a small cut into the the thickest part of the fish. If the cut is easy to make and the fish flakes, then it's done. If it's hard to pierce with a fork or seems tough, give it a few more minutes. You may have to flip the fish in order to keep it from burning if you are cooking thicker pieces and need the extra time. You may also want to cover the pan with a lid and let the steam help you out.
- Serve on a bed of asian noodles or alone. It's sure to be a crowd pleaser for those that enjoy seafood, and even those who don't!

EASY, EASY ASIAN TILAPIA IN MICROWAVE
My friend Pan Hui who has a couple of Chinese Restaurants passed this easy way of cooking Tilapia to me. It is more of a technique than a recipe, you adjust for amount you are cooking. I serve with rice, vegetable and a nice salad.

- 1. Lay Tilapia fillets on a plate. Sprinkle with green onion and ginger. Drizzle soy, sesame oil and canola over top.
- 2. Cover plate with plastic wrap, leaving a small area unsealed. Microwave in 1 minute increments until fish is white all the way through.
- 3. Serve and congratulate yourself on the easiest fish dish you have ever prepared and it didn't stink up the house because of the ginger.
- 4. Garnish with more green onion if desired.

Ready, Set, Cook! Reynolds Wrap Contest Entry. I'm of a Korean background so the asian flavors of salty, sweet, sesame, ginger, garlic is present. My kids love it and I don't think they realize they're eating 'fish'. They don't need to know as long as they like it and eat it. lol. Using the tilapia is the best cuz of the lightness of the fish. The distinctiveness of the cilantro will give it a great fresh herb taste.

- Preheat oven 375.
- Make the marinade. Make sure to only use 3Tbsp of the sesame oil. This should make a little over 3/4cup of sauce but out of that put aside 1/4 cup for the veggies and the rest is needed for the fish.
- Add in all the veggies and a handful of cilantro in a mixing bowl. Sprinkle in Salt/pepper, LEMON ZEST, 1/4 cup of the marinade and toss. Put to the side.
- Lay down the REYNOLDS FOIL in the baking dish.
- Pour the other part of the sesame oil (3Tbsp).
- Lay the TILAPIA and you can overlap the thinner sides.
- Pour the remaining part of the marinade over the fish.
- Spread the veggie mixture covering the fish.
- Cover the foil but leave a small air pocket.
- Bake 12--15 minutes.
- ENJOY by itself or on some rice.

This is quick and easy (done in the microwave) and very tasty. Serve with steamed rice and broccoli. (cook rice before putting fish in microwave, as it only takes 5 minutes).

- 1. SAUCE: In a small bowl, whisk together all of the sauce ingredients.
- 2. Coat a 9 x 9-inch glass baking pan with non-stick cooking spray. Place fillets in pan side by side and pour sauce over them, tipping pan to distribute the sauce all around. Sprinkle green onions over fish. -
- 3. Cover pan with plastic wrap (leave one corner open to vent). Microwave on high for 5 minutes. (If you microwave doesn't have a revolving plate, turn pan a quarter turn halfway through cooking time.)

ASIAN TILAPIA
Steps:
- Dredge filets with flour. Heat olive oil with 1 tbspn of butter in frying pan. Add fish. Allow to brown on one side while adding about 3 tbspns soy sauce, half a line, about 1" of wasabi paste and a generous sprinkle of ginger. Add pepper. When browned on one side, turn. Add ¼ to 1/3 cup of vegetable stock. Turn off fire and sprinkle with chopped cilantro.
TILAPIA SOUTHEAST ASIAN STYLE
Steps:
- In a large skillet or wok, heat one Tbsp peanut oil and one tsp sesame oil on high heat. Add scallions and ginger. Stir fry one minute. Add garlic and red pepper and stir fry 3 minutes more. Remove vegetables from skillet. Dredge fish fillets in Wondra flour. Salt and pepper fillets lightly. Add 1 Tbsp peanut oil and 1 tsp sesame oil to skillet. Pan sear fish fillets till just cooked through...about 2 minutes per side. Add soy sauce, lime juice, and cococut milk to skillet. Add vegetables. Cook until sauce is a bit thickened and fish is cooked through.
ASIAN TILAPIA PURSES
Steps:
- In a small mixing bowl combine lemon juice, ginger root, soy sauce, 5-spice, salt, pepper and sherry. Place tilapia fillets in a shallow baking dish in a single layer. Pour sauce over fillets to cover and refrigerate for at least an hour up to overnight. Preheat oven to 350F. Cook the cabbage leaves in boiling water just until tender. Place 1/4 of the prepared rice in the center of a cabbage leaf. Place fillet on top and sprinkle with extra marinade. Wrap leaf to cover fish completely, skewer with toothpick to secure if needed. Bake for 14-16 minutes and test with meat thermometer if you wish to verify doneness. Serve hot.
