Asian Style Dressing- from Jamie Oliver's Winter Salad With Duck image

This is a dressing recipe from the new Food Network show Jamie at Home. They didn't list the recipe on Food Network's site, so I'm putting it here for safe keeping. I find it tastes really fabulous over long thin slices of grated carrots as a carrot salad.

4 tablespoons lime juice (or the juice of 2 limes)
4 tablespoons olive oil
1 teaspoon sesame oil
1 tablespoon soy sauce
1 teaspoon unrefined sugar
1 small chile
1 small garlic clove
4 scallions (top half only)
1 tablespoon cilantro (or (to taste)

Steps:

  • Juice two limes into a bowl big enough for you to whisk your dressing.
  • Add the olive oil, sesame oil, soy sauce, and sugar to the bowl.
  • Grate the small chili (red pepper flakes may be substituted here) and the garlic clove over the bowl into your dressing.
  • Whisk together.
  • Finely chop the scallion tops and cilantro and stir into dressing.

Dressing
3 tablespoons white-wine vinegar
2 tablespoons rice vinegar
2 teaspoons soy sauce
1 garlic clove, minced
a 1-inch piece fresh ginger root, peeled and minced (about 1 tablespoon)
2 teaspoons Asian sesame oil
1/3 cup canola or vegetable oil
Salad
1 tablespoon sesame seeds
2 pounds green beans, trimmed
2 scallions, chopped fine (about 2 tablespoons)

Steps:

  • In a small bowl, whisk together vinegars, soy sauce, garlic, ginger root, and sesame oil. Add canola or vegetable oil in a stream, whisking, and whisk until emulsified. Season dressing with salt and pepper.
  • In a small dry skillet toast sesame seeds over moderate heat, stirring, until golden and transfer to a small bowl.
  • In a large saucepan of boiling salted water, cook beans until crisp-tender, about 4 minutes. Transfer beans to a colander and rinse under cold water. Drain beans well.
  • In a large bowl, combine beans, scallions, sesame seeds, and dressing and toss well. Serve salad chilled or at room temperature.

1/4 cup chopped thawed frozen pitted sweet cherries, juices reserved
2 tablespoons low-sodium soy sauce
2 tablespoons creamy peanut butter
1 tablespoon rice vinegar (unseasoned)
3 tablespoons vegetable oil
1/2 teaspoon sesame oil
1 cup thawed frozen pitted sweet cherries, juices reserved
1/2 cup low-sodium soy sauce
1/2 cup dry white wine
1/4 cup packed light brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon freshly grated ginger
1 clove garlic
1 1/2 pounds skinless, boneless chicken breasts
Vegetable oil, for brushing
2 cups sauerkraut, drained and rinsed
1/2 12-ounce package wonton wrappers, thinly sliced
6 cups chopped romaine lettuce
1 red bell pepper, julienned
1 green bell pepper, julienned
3 scallions, julienned
2 medium carrots, julienned
1 cup snow peas, trimmed and julienned
1 cup drained sliced water chestnuts

Steps:

  • Make the dressing: Whisk the cherries, 1 tablespoon reserved cherry juice, the soy sauce, peanut butter, vinegar, vegetable oil and sesame oil in a bowl. Set aside.
  • Make the chicken: Put the cherries, 3 tablespoons reserved cherry juice, the soy sauce, white wine, brown sugar, Worcestershire sauce, ginger and garlic in a blender and puree until the cherries and garlic are finely chopped. Pour the marinade into a large resealable plastic bag. Pierce the chicken all over with a fork. Add to the bag with the marinade, seal and refrigerate at least 20 minutes or up to 8 hours. Preheat a grill to high. Brush the grates with vegetable oil. Remove the chicken from the marinade, brushing off any excess. Grill the chicken, covered, until the juices run clear, 5 to 7 minutes per side. Transfer to a cutting board and let rest 5 minutes.
  • Meanwhile, prepare the salad: Preheat the oven to 350 degrees F. Soak the sauerkraut in a bowl of ice water 10 minutes; drain, rinse and squeeze out the excess water. Arrange the wonton strips in a single layer on a baking sheet and bake until crisp, about 5 minutes. Toss the sauerkraut and romaine with half of the dressing in a bowl; divide among plates. Top with the bell peppers, scallions, carrots, snow peas and water chestnuts. Slice the chicken and serve with the salad. Top with the crispy wonton strips. Serve with more dressing on the side. 1 teaspoon orange zest, grated
1 cup orange juice, freshly squeezed
1 tablespoon soy sauce, reduced sodium
1 tablespoon honey
2 teaspoons sesame oil
1/2 teaspoon chili sauce, Siracha
black pepper, freshly ground to taste
1 cup quinoa, uncooked
8 ounces water chestnuts, drained and chopped
1 red bell pepper, seeded and chopped
1 1/2 cups snow peas, chopped and cooked until tender and then cooled
4 scallions, white and green parts thinly sliced

Steps:

  • Prepare the dressing by whisking together the first 7 ingredients (thru pepper).
  • Rinse the quinoa very throughly to remove the bitter natural resin.
  • Bring 2 cups of water to boil and add quinoa in a steady stream to prevent clumping. Return to the boil and and reduce heat to low. Cover and simmer for 15 minutes until it is tender. Look for the white line around the seed - it's the germ and when it bursts the grain is cooked. If water remains in the pot, remove the lid and boil and stir until the remaining liquid evaporates, being careful not to overcook. Remove from heat and let stand covered for 5 minutes. Fluff with a fork and let in cool.
  • In a serving bowl combine the quinoa with the last 4 ingredients. Add dressing and toss until combined.
  • Chill for 1 hour before serving.

2 pounds boiling potatoes (preferably yellow-fleshed)),quartered lengthwise and cut crosswise into 3/4-inch pieces
1 fresh jalapeño pepper, minced with some of the seeds (wear rubber gloves)
2 small garlic cloves, minced
1 tablespoon sugar
1 tablespoon white-wine vinegar
1-1/2 tablespoons fresh lime juice
1 tablespoon anchovy paste
1-1/2 teaspoons vegetable oil
1/4 cup packed fresh coriander,chopped fine
1/4 cup packed fresh mint leaves,
2 ribs of celery, sliced thin crosswise

Steps:

  • In a steamer set over boiling water steam the potatoes, covered, for 10 to 12 minutes, or until they are just tender, transfer them to a bowl, and let them cool to room temperature. In a small bowl whisk together the jalapeño, the garlic, the sugar, the vinegar, the lime juice, the anchovy paste, the oil, and salt to taste and let the dressing stand at room temperature for 30 minutes. Add the dressing to the potatoes with the coriander, the mint, and the celery and combine the salad well.

  • Dressing will keep, refrigerated for several weeks.
