TERIYAKI BACON WRAPPED SCALLOPS
Bacon-wrapped scallops lightly marinated in a teriyaki, fresh grated ginger, and brown sugar sauce. These are always a huge hit at every party I go to. They disappear fast and then I'm always asked for the recipe. I often hear comments such as, What an awesome combination!!! and These are so additive!!

Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line 2 baking sheets with aluminum foil.
- Whisk teriyaki sauce, brown sugar, and ginger in a bowl.
- Wrap each piece of scallop with a strip of bacon and secure with a toothpick. Dip each bacon wrapped scallop in the teriyaki sauce mixture and arrange on one of the prepared baking sheets.
- Broil in preheated oven until lightly charred, about 6 minutes. Flip scallops and transfer to the clean baking sheet and return scallops to the oven. Continue to broil until bacon is charred on the second side, about 6 minutes more.

- Wrap the bacon around a scallop nicely and secure tightly with a metal skewer. You may thread two of them onto a skewer. Season both the surfaces of the scallop with some salt and cayenne pepper.
- Heat up the grill and place the bacon-wrapped scallops on the grill. Keep turning the scallops until the bacon becomes charred, brown and slightly crispy. Turn the skewers around so the bacon is grilled with direct heat. Grill until the bacon becomes nicely charred all around. Serve immediately.

- Stir together maple syrup, soy sauce, and Dijon mustard in a bowl until smooth. Add the scallops, and toss to coat. Cover bowl with plastic wrap, and marinate at least one hour.
- Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with a sheet of aluminum foil.
- Arrange bacon pieces on baking sheet so they do not overlap. Bake in preheated oven until some of the grease has rendered out of the bacon; the bacon should still be very soft and pliable, about 8 minutes. Remove bacon from the baking sheet and pat with paper towels to remove excess grease. Drain or wipe grease from the baking sheet.
- Wrap each scallop piece with a piece of bacon, and secure with a toothpick. Place onto baking sheet. Sprinkle the scallops with brown sugar.
- Bake in preheated oven until the scallops are opaque and the bacon is crisp, 10 to 15 minutes, turning once.

- LIGHTLY RINSE THE SCALLOPS and drain thoroughly. Slice any very thick ones in half horizontally.
- Heat a broiler or prepare a medium hot fire for grilling.
- Combine the Plum Sauce ingredients and blend well. Cut the strips of bacon in half. Place the scallops in a bowl, ad half the sauce, and toss lightly to coat. Wrap a piece of bacon around each scallop and thread onto the bamboo skewers. If broiling the scallops, cover a cookie sheet with aluminum foil and arrange the skewered scallops on top. Place the scallops about 3 inches from the heat source and broil or grill, basting with the remaining sauce, for about 8 to 9 minutes on each side, or until the bacon is cooked. Serve hot.

- Partially Cook Bacon for 3-5 minutes in a pan, on medium heat, putting a plate or weight on the bacon to flatten it as it cooks. Do not overcook, as it will complete the cooking process on the BBQ. Remove from pan and place the partially cooked bacon slices on a paper towel and pat with papertowels to remove any excess grease, then set aside.
- Lightly Salt the Scallops, and then wrap them with the partially cooked bacon and secure them with toothpicks.
- Mix Maple Syrup and Dijon Mustard together, and coat the bacon wrapped scallops with the mixture, and refrigerate for (1) hour if you have the extra time, if not you can grill them right away.
- Lightly Oil the BBQ grill, and cook until lightly browned. Serve immediately.
