A fresh salad with an Asian-inspired dressing featuring peanut oil and red pepper sauce. Strawberries and mandarin oranges add sweet flavor, while ramen noodles provide a satisfying crunch.

1 package ramen noodles, any flavor
3 cups iceberg lettuce, torn
3 cups romaine lettuce, torn
1 cup celery, chopped
2 tablespoons green onion, chopped
10 ounces mandarin oranges
2 cups strawberries, sliced
1 cup dried cranberries
¼ cup sliced almonds or other nuts, toasted and chopped
¼ cup peanut oil
2 tablespoons sugar
2 tablespoons vinegar
1 tablespoon fresh parsley, chopped
½ teaspoon salt
pepper, to taste
red pepper sauce, to taste

Steps:

  • Preheat oven to 350 degrees.. Mix together dressing ingredients. Chill until ready to serve.. Crumble noodles into a small baking dish, reserving seasoning packet for another use.. Bake for 10 minutes. Cool.. Toss remaining ingredients in a salad bowl.. Top with noodles, and drizzle with dressing just before serving.

I whipped up this salad when I was making dinner for a date and it got rave reviews! Also works great as a main dish when you add grilled chicken.

6 cups romaine lettuce, chopped
1 cup strawberry, sliced
1 cup mandarin orange, drained
3/4 cup chow mein noodles
3 tablespoons slivered almonds
1/2 cup light balsamic vinaigrette salad dressing

Steps:

  • Combine all in a large salad bowl and mix well to coat salad with dressing. Voila!
  • Would be good with probably most viniagrettes but personally I make mine with Newman's Low-Fat Sesame Ginger Dressing! It really adds an asian twist and is relatively healthy.

4-6 Cups Spring Mix Salad Greens ( or Other Salad Green You Like)
24 Strawberries (Sliced)
4 Ounces Feta Cheese (Crumbled)
1 Cup Walnuts
2 Tablespoons Light Olive Oil
2 Tablespoons Sugar
2 Tablespoons Balsamic Vinegar
2 Tablespoons Light Soy Sauce
Salt (To taste)
Pepper (To taste)

Steps:

  • Combine all the ingredients for the salad in a large bowl. Very lightly dress the salad right before serving, reserving the rest of the dressing on the side for people to add more.
  • If you want the salad to have a pretty presentation. Dress the spring mix and add the strawberries, Feta cheese, and walnuts on top. Just looks prettier.

This recipe is one of my family's summer favorites. It tastes so light, sweet, tangy, and fresh! Works great as a side or stands well on it's own. I hope you enjoy.

1 cup chopped walnuts
1 package Top Ramen noodles (Any Flavor, Do not use flavoring)
4 tablespoons butter
1 bunch broccoli, coarsley chopped
1 romaine lettuce hearts, coarsley chopped
2 cups fresh salad spinach
4 green onions, chopped
1 cup fresh strawberries, sliced
1 cup vegetable oil
1 cup sugar
1/2 cup white wine vinegar
1 tablespoon soy sauce
1 dash salt and pepper

Steps:

  • For Dressing:
  • Mix all ingredients together well and cover.
  • Refrigerate for at least an hour before serving.
  • For Salad:.
  • Open package of Ramen noodles and throw out seasoning pouch.
  • In a large sauce pan melt butter and add walnuts.
  • Break ramen noodles into bite size pieces and add to sauce pan.
  • Lightly brown walnuts and noodles in butter, stirring constantly (burns easily).
  • Remove sauce pan from heat and set aside.
  • Lightly toss chopped broccoli, lettuce, spinach, onions and strawberries in a large salad bowl.
  • Pour the warm contents of the sauce pan over the salad and mix lightly to gently wilt the lettuce.
  • Serve immediately with dressing.

½ cup sliced almonds
3 tablespoons white sugar
⅓ cup vegetable oil
3 tablespoons apple cider vinegar
hot sauce
2 ½ tablespoons white sugar
1 teaspoon salt
1 dash ground black pepper
1 (12 ounce) bag spring mix lettuce
1 (11 ounce) can mandarin oranges, drained
1 cup sliced fresh strawberries
1 cup chopped celery
½ cup chopped red onion
2 teaspoons chopped fresh parsley

Steps:

  • Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
  • Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Sprinkle the toasted almonds over the salad to serve.
