This Japanese style salad is designed as a side salad, almost a garnish, in which a little goes a long way.

1/2 lb egg noodles, cooked
1 tablespoon sesame oil
1 carrot, julienned
1 green onion, chopped
1 teaspoon sesame seeds
1 garlic clove, minced
2 tablespoons mirin
2 tablespoons soy sauce
1 teaspoon ginger, ground
1 tablespoon wasabi paste

Steps:

  • After draining the noodles during the cooking of them, mix the noodles with the sesame oil. This will allow them to not stick together. Chill the noodles.
  • Combine sauce ingredients throughly and chill.
  • When ready to make, combine noodles, carrot, green onions and sauce and serve topped with sesame seeds.

1/2 pound somen noodles, blanched, refreshed
1/4 cup chopped scallions, green part only (save a little for garnish)
2 tablespoons thin soy sauce
1 tablespoon rice wine vinegar
2 tablespoons wasabi oil
1/4 cup gari, julienne (pickled ginger, save a little for garnish)
1/2 cucumber, seeded, julienne
1 yellow or red bell pepper, julienne
4 sheets nori
1/4 cup toasted sesame seeds, for garnish
1/2 cup wasabi powder
1 tablespoon mirin
1 teaspoon sugar
Water
1/2 cup canola oil
2 cups thin soy sauce
1/2 cup brown sugar
1 lime, juiced

Steps:

  • In a large mixing bowl combine first 6 ingredients. Check for seasoning. Using a sushi mat, place one sheet of nori, shiny side down. Lay down a thin layer of noodle mix on the bottom third of the nori. Arrange cucumber and peppers on the noodles and roll tightly. Moisten the top edge of the nori to "glue" the roll.
  • Plating: Slice sushi with straight cuts and some on the bias. Drizzle soy syrup and wasabi oil on a large, white plate. Garnish with gari, sliced scallions and sesame seeds.
  • Wasabi Oil: In a stainless steel bowl, whisk wasabi, mirin, and sugar. Add water until a loose puree is achieved. Whisk in oil. For extra spicy, use less oil.;
  • Soy Syrup: Combine all and reduce at a simmer until a syrup consistency is achieved, about a 70 percent reduction. Let cool.

Spicy, fresh, delicious! This recipe takes a bit of prep, but if you have two sets of hands, it's a fun dish to prepare! We're pretty new to Asian cooking, but this recipe seems unique to us because it's cool in temperature but hot in flavor; you get both types of spicy: "mouth spicy" from the jalapenos and "nasal spicy" from the wasabi! I got this recipe from a random magazine at the gym...I HAD to try it and proceeded to text it to my e-mail in a series of like, 10 text messages... we totally enjoyed the fruits of my labors, and now you can too. Prep time is approximate...we were multi-tasking so it's hard to say how much we spent on this individual dish. Anyway, hope you enjoy! :)

1 lb uncooked shrimp, peeled and deveind
1 tablespoon gingerroot, grated (don't use powder)
2 garlic cloves, minced
1 1/2 teaspoons vegetable oil
4 ounces wide rice noodles, broken in half
1 1/2 teaspoons toasted sesame oil
2 cups napa cabbage, shredded
1 large carrot, shredded
1/2 cup radish, thinly sliced
1/4 cup fresh basil, torn
1 jalapeno, seeded and sliced
1/4 cup honey-roasted cashews or 1/4 cup wasabi peas
5 1/2 tablespoons soy sauce
5 1/2 tablespoons rice vinegar
1 1/2 tablespoons lime juice
1 1/2 tablespoons vegetable oil
1 1/2 teaspoons sesame oil
1 1/2 teaspoons sugar
1 1/2 teaspoons wasabi paste (plus more to taste)

Steps:

  • In a skillet, sauté the shrimp, ginger, and garlic in the oil for 3 minutes or until shrimp is cooked. Set aside.
  • Meanwhile, cook noodles according to package directions. Drain; rinse in cold water and drain again.
  • To serve, layer noodles, shrimp, cabbage, carrots, radishes, basil, and jalapeno in individual bowls. Pour dressing over top of each serving and sprinkle cashews or wasabi peas over top.
  • A Word of Caution: I highly suggest using the recommended 1 1/2 tsp of wasabi paste to start. Only add more if, after mixing it with the rest of the ingredients in the individual bowls, additional heat is desired. The sauce by itself never seemed hot to us, so we used almost an entire tube of wasabi -- and subsequently cried our way through dinner.

7 ounces dry egg noodles
1/4 cup chopped scallion
3 garlic cloves, finely minced
2 tablespoons brown sugar
1 teaspoon maggi seasoning, sauce (can use soy sauce instead)
1 tablespoon oyster sauce
3 tablespoons butter

Steps:

  • Bring a large pot of water to a boil and cook the noodles according to the package instructions. Drain noodles and wipe the pot clean. Return the pot to medium-high heat and add the butter. When the butter is sizzling and bubbling a bit, add the green onion and the garlic. Fry for 1 minute or until very fragrant; be careful not to let the garlic burn.
  • Add the brown sugar, Maggi Seasoning and oyster sauce and stir well to mix everything evenly. Add the noodles and toss vigorously to get the good stuff evenly distributed throughout the noodles.

12 oz chinese chow mein (stir-fry) noodles
1 c frozen soy beans
1 red bell pepper, seeded and chopped
1 c reduced-sodium chicken broth
2 Tbsp unsalted butter
1 Tbsp reduced-sodium soy sauce
2 Tbsp wasabi paste, or more to taste
2 Tbsp chopped fresh cilantro
salt and freshly ground black pepper

Steps:

  • 1. Cook noodles according to package directions, adding soy beans and bell pepper to the boiling water when you add the noodles. Drain and set aside.
  • 2. Meanwhile, combine broth, butter, soy sauce and wasabi paste in a medium saucepan and set pan over medium heat. Bring to a simmer and whisk to dissolve wasabi paste completely into the broth. Add noodles, soy beans and bell pepper and cook 1 minute to heat through. Stir in cilantro and season to taste with salt and pepper.
