Time 12h40m

Yield 4 servings

Number Of Ingredients 29

1/2 tablespoon szechwan peppercorns
1 tablespoon black peppercorns
2 star anise
32 ounces water (4 cups)
1/3 cup kosher salt
1/3 cup sugar
1 tablespoon dark soy sauce
4 large slices ginger
2 bay leaves
1 pork loin, cleaned (about 3 to 4 pounds)
Black pepper to taste
Garnish: 1/4 cup chive batons
2 tablespoons chile oil
Gingered Yams, recipe follows
Five Spice Apples, recipe follows
1 1/2 cups heavy cream
2 tablespoons minced ginger
4 medium sized yams, peeled and quartered
6 garlic cloves, peeled
2 to 4 ounces of butter
Salt and black pepper to taste
Canola oil to cook
1 small diced red onion
1/2 tablespoon five spice powder
1 tablespoon brown sugar
2 Granny Smith apples, peeled and diced
8 ounces apple juice
1 tablespoon butter (optional)
Salt and black pepper to taste

Steps:

  • Toast both peppercorns and anise until fragrant in a saute pan. Mix everything together and taste. The liquid should be tasty, but not overly salty. Place pork in brine overnight. After brining, thoroughly rinse pork in cold water. Season the pork with black pepper and saute in well oiled pan. Color both sides then place in a 375 degree oven for 15 to 20 minutes. The middle of the pork should get hot. Note: even when fully cooked, the meat will remain pink because of the brining process. Let loin rest for 10 minutes then slice. Place pork around a mound of yams. Garnish with apples, chive batons and chile oil. Optional garnish for the adventuresome would be fried yam chips.
  • Place cream and ginger in saucepan and on low heat, reduce the cream to 1 cup. In another saucepan, place yams and garlic and completely cover with cold water. Place on stove at medium heat and slowly boil. Cook about 20 to 30 minutes or until yams can be pierced with a paring knife then easily fall off of the knife. Strain well and place in food processor. Puree and add cream, butter, salt and pepper. Check for seasoning. Keep warm for serving.
  • In a saute pan, coat with oil and caramelize onions. Add five spice, sugar and apples. Deglaze with juice and season. Let mixture cook and reduce by 50 percent. The apples should remain intact and have some liquid left. Stir in the butter. Check for seasoning. Do not overcook apples to mash. This can be done in advance and reheated for plating.

Time 50m

Yield 2 servings

Number Of Ingredients 18

1/4 cup soy sauce
2 tablespoons rice wine vinegar
1 teaspoon Asian chile paste (sambal olek)
2 teaspoons finely chopped ginger
1 clove garlic, smashed and finely chopped
2 scallions, sliced
1 tablespoon orange zest
2 boneless pork loin chops, 3/4-inch thick
Canola oil
Sugar Snap Peas and Spinach with Ginger, recipe follows
Kosher salt
Ice
1 pound sugar snap peas, stem end and strings removed
Extra-virgin olive oil
1 (1-inch) piece ginger, finely chopped
2 cloves garlic, smashed
1 scallion, white and light green only, thinly sliced
1/2 pound baby spinach, washed but not dried, stems removed

Steps:

  • In a large bowl, combine the soy sauce, rice wine vinegar, chile paste, ginger, garlic, scallions, and orange zest. Add the pork to the bowl and turn to coat with the marinade. Let the chops sit in the marinade for a few minutes.
  • Coat a large saute pan with oil and bring to a high heat. Remove the chops from the marinade, shaking off any excess. Reserve the marinade. Sear the chops 4 to 5 minutes on each side. Remove the pork from the pan.
  • Ditch the excess oil from the pan. Place the saute pan on the hottest burner. Add the marinade to the pan-it should come to a boil instantly. WARNING: This liquid MUST be brought to a boil to kill any bacteria from the raw meat juices.

  • Coat a large saute pan with oil. Add the ginger, garlic, and scallions and cook over medium-high heat until the scallions are soft and translucent.
  • Add the sugar snap peas and toss to coat in the oil. Add the spinach and toss with the peas until the spinach starts to wilt. Remove from the heat, season with salt. Toss or stir the spinach to finish wilting and transfer to a serving bowl.

Tips for Preparing Asian Marinated Pork Loin

Asian marinated pork loin is a staple in most Asian kitchens, and there are numerous ways to prepare it. However, to prepare it to perfection, you need to consider the following tips:
Familiarize yourself with the available cuts
You should note that different cuts of pork require different cooking times, and there are varying levels of tenderness. The most readily available pork cuts for this recipe include loin, shoulder, or tenderloin. Loin is a lean cut that's ideal for grilling, while shoulder is best for slow cooking. Tenderloin is the most tender cut, and it's perfect for quick cooking methods like stir-frying.
Don't Forget to Marinate the Pork
Marinating the pork makes it tender while enhancing its flavor. You can choose to marinate the pork loin using Asian-themed flavors like ginger, soy sauce, garlic, hoisin sauce, or honey. Marinate the pork for at least two to four hours, but it's best marinated overnight in the fridge.
Properly Cook the Pork Loin
The proper cooking time of the pork loin depends on the temperature and your preferred level of doneness. For instance, if you prefer your pork loin well done, you can cook it to an internal temperature of 160-170 degrees Fahrenheit. However, ensure that you remove the pork from the heat source when it reaches an internal temperature of around 155 degrees Fahrenheit, and let it rest for five minutes to allow the temperature to rise and the juices to distribute evenly.

Tips for Preparing Gingered Sweet Potatoes

Gingered sweet potatoes are the perfect side dish for the Asian marinated pork loin. The orange hues of the dish perfectly complement the pork loin. To prepare gingered sweet potatoes, you should consider the following tips:
Choose the Right Type of Sweet Potatoes
When preparing gingered sweet potatoes, ensure that you pick the right type of pick potatoes. You can opt for either Japanese sweet potatoes or standard sweet potatoes. Japanese sweet potatoes are dense and a bit drier, while standard sweet potatoes are softer and have a sweeter taste.
Peel and Dice the Potatoes Uniformly
When cutting the sweet potatoes, ensure that you dice them evenly to ensure that they cook uniformly. You should also peel the sweet potatoes to enhance their texture and presentation.
Adjust the Spice Level to your Taste
The level of spice on the gingered sweet potatoes depends on your preference. If you like spicy gingered sweet potatoes, you can increase the quantity of ginger used. Similarly, if you don't like garlic, you can reduce the garlic used in the recipe.

Tips for Preparing Five-Spice Apples

The five-spice apples serve as a tangy counterpoint to the pronounced flavors of the pork and sweet potatoes. When preparing five-spice apples, you should consider the following tips:
Pick the Right Apples
Ensure that you choose apples that hold their shape well, such as Honeycrisp, Granny Smith, Jonagold, or Pink Lady apples. Avoid using overly soft or mealy apples for this recipe.
Dice the Apples into Uniform Pieces
When cutting the apples, ensure that you dice them into even pieces to ensure that they cook evenly.
Adjust the Sugar Level to your Taste
Similarly to the gingered sweet potatoes, the level of sugar on the five-spice apples is adjustable. If you like sweet apples, you can increase the amount of sugar or honey used. However, if you like tart apples, you can reduce the sugar used.

Conclusion

Preparing Asian marinated pork loin with gingered sweet potatoes and five-spice apples is an easy and straightforward process if you follow the above tips.
