Asian Grilled Salmon image

Ina Garten's Asian Grilled Salmon, from Barefoot Contessa on Food Network, is a light, quick main dish with salty-sharp flavors like Dijon and soy sauce.

Provided by Ina Garten

Categories     main-dish

Time 34m

Yield 6 servings

Number Of Ingredients 5

1 side fresh salmon, boned but skin on (about 3 pounds)
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
  • While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
  • Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
  • Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

Soy Sauce and Sesame Oil

Preparation

To make Asian inspired salmon patties, begin by removing the skin from fresh salmon fillets and flaking the flesh with a fork. Add minced green onions, ginger, garlic, cilantro, and parsley to the bowl of flaked salmon. In a separate bowl, whisk an egg and soy sauce, sesame oil, salt, and pepper. Combine it with the salmon mixture and mix well. Next, add breadcrumbs to the mixture and let the mixture rest for ten minutes. Form the mixture into small patties and coat each one in additional breadcrumbs. Heat some oil in a frying pan over medium heat and cook the patties until golden brown.

Variations

You can add your spin to the salmon patties by incorporating different Asian-inspired ingredients. For instance, replace breadcrumbs with panko breadcrumbs for a crispier texture. You can also add wasabi, Sriracha, or hoisin sauce for added flavor. To add more veggies to your meal, mix some shredded carrots or zucchini into the salmon mixture. Making delicious Asian-inspired salmon patties is a delightful way to add some variety to your seafood recipes. However, it can be a bit of a challenge to make them taste as good as they look. Below are some valuable tips that can help you make the perfect Asian-inspired salmon patties.

Tip 1: Choose the Right Salmon

The type of salmon you use can make a significant difference in the flavor and texture of your salmon patties. When making salmon patties, always choose fresh salmon. Wild salmon, preferably sockeye or king salmon, is a fantastic choice as it contains a higher fat content, making your salmon patties moist and tasty.

Tip 2: Season Well

Salmon patties can have a bland taste if not adequately seasoned. To make your patties more flavorful, add a variety of Asian-inspired spices such as ginger, garlic, and green onions. Additionally, soy sauce, sesame oil, and rice vinegar can add a tangy and savory taste to your patties.

Tip 3: Use High-Quality Breadcrumbs

Breadcrumbs play a crucial role in the success of the salmon patty. When making Asian-inspired salmon patties, always choose high-quality breadcrumbs. Panko breadcrumbs are an excellent choice as they are light and airy, perfect for a crispy crust.

Tip 4: Form into Patties Carefully

When forming your patties, it is crucial to handle the mixture gently. Overworking the mixture can cause the patties to become dense and rubbery. Scooping the mixture with an ice cream scoop is a great way to ensure that each patty is uniform in size and shape.

Tip 5: Choose the Right Oil

Choosing the right oil to cook your patties in is essential. Peanut oil is a great choice as it has a high smoke point, making it perfect for cooking at high temperatures. Coconut oil is also an excellent choice as it can add some delicious coconut flavor to your patties.

Tip 6: Cook at the Right Temperature

To ensure that your salmon patties are cooked to perfection, cook them over medium heat. If the heat is too high, the patties will burn on the outside but be raw in the middle. If the heat is too low, your patties will become greasy and take longer to cook.

Tip 7: Don't Overcook

Salmon patties are best when cooked to a medium-rare temperature. Overcooking the patties can cause them to become dry and tough. When cooking your patties, keep an eye on them and remove them from the heat as soon as they are cooked to your desired level.

Tip 8: Serve with Delicious Sauces

Adding a sauce to your salmon patties can enhance the flavor and make them even more delicious. A simple teriyaki sauce or a spicy chili sauce can complement the Asian-inspired spices in your patties. Additionally, a yogurt-based sauce can add a creamy and tangy flavor to your salmon patties.
Conclusion
In conclusion, making delicious Asian-inspired salmon patties requires a bit of patience and attention to detail. Choosing the right salmon, seasoning well, using high-quality breadcrumbs, forming the patties carefully, choosing the right oil, cooking at the right temperature, and not overcooking are all essential tips to make the perfect salmon patties. By following these tips, you can make restaurant-quality salmon patties that will impress your family and friends.
