1 teaspoon wasabi powder or prepared horseradish
2 pounds tuna steaks, 3/4 to 1 inch thick
1/2 cup vegetable oil
1/3 cup soy sauce

SEARED AHI TUNA GLAZED WITH WASABI BUTTER

Seared Ahi Tuna Glazed With Wasabi Butter image

I've always loved wasabi with tuna, but usually the wasabi overpowers such a delicate fish. When this recipe came to me through a friend, who doesn't recall its origins, I finally found the perfect marriage of flavors. I can't make this often enough!

Categories     Tuna

Time 13m

Yield 4 serving(s)

Number Of Ingredients 9

24 ounces ahi tuna steaks, around 1-inch thick
2 tablespoons dark sesame oil
salt and pepper
1/2 cup butter
3 tablespoons soy sauce
2 tablespoons wasabi paste (the tube kind)
3 green onions, sliced
2 tablespoons fresh lemon juice
lemon slice (for garnish)

Steps:

  • Drizzle sesame oil on both sides of each tuna steaks. Season with salt and pepper.
  • Combine remaining ingredients in a small sauce pan. Heat over low heat until butter is melted, stirring constantly to mix and prevent scorching.
  • While sauce is heating, heat a heavy frying pan on another burner with high heat. Place tuna in pan and sear until crispy and brown. Turn and sear on the other side.
  • Note: Tuna steak fans who like their tuna on the rare side (like me) will usually find 2 minutes searing time is ample. Folks who like their tuna steaks more well-done (like my DH) may want to sear their tuna for 4-5 minutes per side.

WASABI SESAME CRUSTED SEARED AHI TUNA SALAD

Wasabi Sesame Crusted Seared Ahi Tuna Salad image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 21

3/4 cup wasabi sesame seeds
1/3 cup coarsely cracked black pepper
1/3 cup coarse Hawaiian sea salt
Four 6- to 8-ounce 1 1/2-inch-thick ahi tuna steaks
Vegetable oil, for oiling the grill
4 tablespoons sesame oil
1/2 cup honey
1/2 cup red wine vinegar
1/2 teaspoon ground black pepper
2 tablespoons Dijon mustard
1/2 cup soybean oil
2 ounces spring mix
4 tablespoons capers
2 large carrots
2 large tomatoes
1 small red cabbage
1 cucumber
1 romaine heart
1/2 medium red onion, finely diced
1 lemon
2 avocados

Steps:

  • For the fish: Blend the wasabi seeds, cracked black pepper and Hawaiian sea salt in a medium bowl. Place the ahi steaks in the bowl, and carefully roll and flip the steaks to ensure they are completely coated. Remove the steaks to a plate and refrigerate until ready to cook.
  • For the vinaigrette: Mix together the honey, vinegar, pepper and mustard in a small bowl, then stream in the oil, whisking constantly.
  • For the salad: Slice, dice, chop and mix the spring mix, capers, carrots, tomatoes, cabbage, cucumber, romaine and onion, to your liking, then toss with some vinaigrette and plate four salads. Place one lemon wedge on the side of each plate and quarter the avocados. Slice each quartered avocado 3 to 6 times, creating an avocado fan out of each quarter. Set aside.
  • Before heating your grill, you will need to scrape, clean and then oil it. Once clean, preheat to medium-high and close until ripping hot, about 10 minutes. Fold a clean dish towel into a squarish 4-by-6-inch block. Pour 2 cups vegetable oil into a bowl and dip one side of your dish towel block in the oil.
  • Open the grill and begin coating grill grates with the oiled towel block. Repeat until grill grates are slick and clean. Pour the sesame oil on a small plate. Place each steak in the sesame oil on both sides, then on the grill.
  • Cook for 1 minute on each side. Then pull immediately from grill, slice 1/8- to 1/4-inch-thick with a heavy sharp blade and place directly on your plated salads. Top each salad with an avocado fan. Lastly, pair your dish with a nice Chardonnay or a local IPA. Cheers and enjoy!

vegetable oil, for brushing tuna
1 1/2 teaspoons crushed black peppercorns
1 tablespoon minced fresh dill
3 scallions, sliced thin
1 teaspoon minced fresh coriander (I use dry)

Asian Grilled Tuna with Wasabi Butter Recipes If you're looking for a healthy and flavorful meal, Asian grilled tuna with wasabi butter may be the perfect dish for you. This recipe combines the rich and flavorful taste of fresh tuna with the kick of wasabi, a popular spice used in many Asian dishes. The recipe is quick and easy to make, and can be served as both a main dish and a side dish. Preparation To prepare the dish, you'll need fresh tuna steaks, wasabi paste, soy sauce, honey, garlic, ginger, and butter. Start by mixing the soy sauce, honey, garlic, and ginger in a small bowl. Then, add a tablespoon of wasabi paste and mix well. This will create a thick and flavorful marinade for the tuna. Marinate the tuna steaks in the mixture for 30 minutes, making sure to coat both sides of each steak. While the tuna is marinating, prepare the wasabi butter by mixing softened butter and wasabi paste in a small bowl. Mix well, and adjust the amount of wasabi paste to your desired level of spiciness. Grilling the Tuna Once the tuna has marinated, it's time to grill it. Heat the grill to high heat, and lightly oil the grates. Place the tuna steaks on the grill, and cook for 3-4 minutes on each side, or until the tuna is cooked through but still tender. Be careful not to overcook the tuna, as it can become dry and tough. Before serving, top each tuna steak with a dollop of wasabi butter. The butter will melt into the warm tuna, creating a rich and creamy flavor that complements the spiciness of the wasabi marinade. Presentation To make the dish look even more appetizing, serve the tuna on a bed of steamed rice or quinoa. Garnish with a sprig of fresh cilantro, and drizzle with a bit of soy sauce for added flavor. Variations There are many ways to customize this recipe to your liking. If you prefer a milder flavor, reduce the amount of wasabi paste in the marinade and butter. You can also experiment with different types of fish, such as salmon, swordfish, or halibut. For a vegetarian option, try marinating firm tofu in the wasabi marinade, and grilling it on skewers. Top with wasabi butter and serve with a side of steamed vegetables. In Conclusion Asian grilled tuna with wasabi butter is a delicious and healthy dish that's perfect for any occasion. It's quick and easy to make, and can be adjusted to your preferred level of spiciness. Give it a try today, and discover the wonderful world of Asian-inspired cuisine!
Asians are famous for their unique cuisine and one of the top elements of Asian flavors is spice. The Asian style grilled tuna with wasabi butter is a famous dish that can be found on the menus of high-end restaurants across the world. The dish looks complicated, but with a little bit of patience and some valuable tips, you can perfect it in your own kitchen. Here are some valuable tips when making the Asian grilled tuna with wasabi butter recipe:

Tip 1: Know Your Tuna

Before you start preparing the grilled tuna with wasabi butter, you need to know the type of tuna that you are using. The best kind of tuna for grilling is the yellowfin tuna. You should always choose tuna that is at least 1 inch thick, as it will help the tuna to keep its shape during the grilling process.
Tip 1.1: Quality Matters
When it comes to fish, the quality matters a lot. Therefore, always buy your tuna from a reputable fishmonger. You can also buy frozen Yellowfin tuna, which is available in most supermarkets, but make sure it is top quality. Frozen fish should be kept frozen until you are ready to use it.
Tip 1.2: Clean and Rinse Your Tuna
Before you start cooking your tuna, you need to clean it properly. Rinse it under cold water, then pat dry it with paper towels. You should also remove any bones or bloodlines that may have been left behind.

Tip 2: Marinating the Tuna

The secret to tender and tasty grilled tuna is marination. You need to marinate your tuna for at least 2-3 hours before grilling to allow the flavors to penetrate the fish. A good marinade can enhance the flavor of the tuna and make it more tender.
Tip 2.1: Choose Your Ingredients Wisely
When it comes to marination, choose ingredients that will complement the flavor of the tuna. A typical Asian-style marinade includes soy sauce, ginger, garlic, and sesame oil. You can also add honey or brown sugar for a little sweetness.
Tip 2.2: How to Marinade
To marinate your tuna, place it in a shallow dish or a ziplock bag, add the marinade, and ensure that the fish is evenly coated. Then cover it and place it in the refrigerator for at least 2-3 hours. Marinating it for longer will result in more flavor absorption.

Tip 3: Grilling the Tuna

Once you have marinated the tuna, it is time to grill it. Grilling tuna is a delicate process that requires attention and care to avoid overcooking or undercooking the fish.
Tip 3.1: Preheat Your Grill
Always make sure your grill is properly preheated before grilling your tuna. You should set your grill to medium-high heat, and make sure the grates are clean.
Tip 3.2: How to Check for Doneness
It's essential to check for doneness while the tuna is grilling. The rule of thumb is that the tuna should be cooked until it’s lightly pink in the center. The cooking time is usually determined by the thickness of the fish. A 1-inch thick tuna steak usually takes about 2 minutes per side.
Tip 3.3: Avoid Overcooking
Overcooking the tuna will result in a dry and rubbery texture, which is not desirable. Therefore, be vigilant and frequently check the tuna's temperature to avoid overcooking.

Tip 4: Making the Wasabi Butter

The wasabi butter is the perfect garnish for this dish. It adds a unique flavor that complements the grilled tuna.
Tip 4.1: Choosing the Right Wasabi
When making the wasabi butter, make sure you use real wasabi. The wasabi paste available in most supermarkets is usually a mixture of horseradish and mustard. While it may be a good substitute, it does not have the same flavor as real wasabi.
Tip 4.2: Creaming Your Butter
Creaming your butter is essential in creating a smooth and consistent wasabi butter. To make the butter, first, soften the butter to room temperature, then mix it with wasabi and some lemon juice. Once the butter is mixed together, refrigerate it to allow it to firm up.

Tip 5: Serving the Grilled Tuna with Wasabi Butter

Now that your dish is ready, all you need is to serve it up and enjoy.
Tip 5.1: Presentation is Key
When serving the tuna, make sure you present it nicely on a plate. Add some chopped scallions or sesame seeds to garnish. This will make the dish more appetizing and presentable.
Tip 5.2: Adding a Side Dish
To make your meal more wholesome, add a side dish of your choice. A healthy vegetable salad or some roasted vegetables would make the perfect accompaniment to the grilled tuna.

Conclusion

The Asian grilled tuna with wasabi butter is a delicious dish that can be enjoyed on any occasion. With a little bit of patience and following these valuable tips, you can prepare the dish in your own kitchen and impress your guests. Knowing your tuna, marinating it properly, preheating your grill, making the wasabi butter, and presenting your dish nicely are important aspects to consider. Enjoy your meal!
