ASIAN GLAZED SALMON
Steps:
- Combine the Marinade ingredients in a shallow bowl. Add salmon and turn to coat. Cover and marinate for 30 minutes or up to overnight.
- Heat grill/broiler on high. Place the rack 25 cm / 10" from the heat source.
- Place salmon on baking tray (no oil required). Scrape all the excess glaze from the bowl onto the salmon.
- Grill/broil for 7 to 10 minutes, until the top of the salmon is beautifully caramelised. Be careful not to overcook the salmon!
- Serve salmon sprinkled with sesame seeds, scallions/shallots with rice and steamed Asian greens on the side.

- Place pieces of salmon in oven proof dish.
- Mix oil and soy sauce together and pour over salmon, coating well.
- Lay salmon fillets skin side down and spread 1 tsp oyster sauce on each.
- Sprinkle with pepper and bake at 200 degrees celcius for 5-7 minutes for rare.
- To prepare the salad:.
- Heat olive oil in small frying pan.
- Add ginger, garlic and mushrooms and cook over low heat until soft and tender.
- Remove from heat and put in small bowl.
- Add cucumber, coriander chopped and toss in sesame oil.
- Season.
- To serve:.
- Place salad on plate and top with salmon.

Steps:
- Combine all marinade ingredients in a bowl and stir well.
- Place salmon fillets in a shallow dish and cover with marinade.
- Rub the marinade gently on to the salmon and allow to rest while preparing the salad (5-10 minutes is more than enough time for the flavours to infuse).
- Combine salad ingredients (except sesame seeds) in a large bowl and then place on to the serving plates.
- Combine all ingredients for the dressing. Sesame oil can be quite powerful so if the taste is too strong, counter with more honey and lime juice.
- Drizzle dressing onto the salad and then sprinkle with sesame seeds.
- Place salmon fillets top-side down in a hot non-stick pan. Reduce to a medium heat and cook each side for 3-4 minutes depending on the thickness, turning only once. Salmon is best served rare to medium-rare.
- Place Atlantic Salmon with side salad and serve.

For the Salmon:
- 2lbs fresh salmon fillets with skin-on
- 3 tablespoons low-sodium soy sauce
- 3 tablespoons honey
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, peeled and grated
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
For the Oriental Salad:
- 4 cups mixed greens
- 1/2 red pepper, thinly sliced
- 1/2 yellow pepper, thinly sliced
- 1/2 cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Method
For the Salmon:
- Preheat the oven to 400 degrees Fahrenheit.
- Line a baking dish with parchment paper.
- Place the salmon fillets in the baking dish with the skin side down.
- In a small bowl, whisk together the soy sauce, honey, sesame oil, garlic, and ginger.
- Pour the sauce evenly over the salmon fillets.
- Bake for 12-15 minutes or until the salmon is cooked through.
- In a separate bowl, whisk together the cornstarch and water.
- Once the salmon is done, remove from the oven and brush the cornstarch mixture over the top of the salmon.
- Return the salmon to the oven and broil for 2-3 minutes or until the top is slightly golden brown.
For the Oriental Salad:
- In a large bowl, combine the mixed greens, red pepper, yellow pepper, cucumber, red onion, and cilantro.
- In a separate bowl, whisk together the sesame oil, rice vinegar, honey, salt and pepper.
- Pour the dressing over the salad and toss to combine.
Serving
Serve the Asian Glazed Salmon with the Oriental Salad on the side.
An easy way to plate could be to first add the salad and then place the salmon over it. Optional: garnish with additional cilantro for added flavor and presentation.
