CRUNCHY ASIAN COLE SLAW

Crunchy Asian Cole Slaw image

This is a family favorite we learned from my MIL at a family gathering last year. EVERYONE loves it--and it is super-easy to make. If you're on a budget, leave out the sunflower seeds and almonds, and substitute canola oil for the olive oil, and it's still great!

CRUNCHY ASIAN RAMEN COLE SLAW

Crunchy Asian Ramen Cole Slaw image

I recieved this recipe from my future sister-inlaw, Amy. She got the recipe from her aunt Diana. My family loves this slaw. I chilled my slaw sauce before using while preparing the other ingredients. When I made this I used white vinegar (I do not recommend Apple Cider Vinegar). I recommend using good quality Ramen noodles no off brands. I also use Sunkist Almond Accents roasted garlic caesar flavored sliced almonds. I also allowed my browned noodles, almonds and seeds to cool before mixing into the shredded slaw. Diana says "Do not pour sauce onto slaw mix until ready to serve or the noodles will become soggy".

SPICY KOREAN-STYLE PORK MEDALLIONS ON ASIAN COLE SLAW

Provided by evelynathens

Categories     Pork

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 20

1/3 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons light brown sugar
2 medium garlic cloves, minced
1 1/2 tablespoons minced fresh ginger
1/2 tablespoon sesame oil
2 teaspoons Asian chili sauce (like Sriracha)
1 1/4 lbs pork tenderloin, trimmed of all silverskin, cut on the diagonal into 1/2 medallions
1 lb napa cabbage, thinly sliced (6 C)
1 cup grated carrot (about 2 medium carrots)
1 red bell pepper, cut in fine julienne
4 scallions (both white and green parts)
1 tablespoon canola oil
1 teaspoon salt
2 tablespoons rice vinegar
1 tablespoon light brown sugar
1/2 tablespoon sesame oil
1 teaspoon Asian chili sauce (like Sriracha)
chopped roasted peanuts
chopped cilantro

Steps:

  • To make slaw: Toss the cabbage, carrots, red bell pepper and half of the scallions with the dressing. Let sit for 15 minutes, toss again and transfer to a large serving platter.
  • For pork: Mix together marinade ingredients (listed with pork). Toss the pork with 1/2 C of the sauce. Reserve the rest. Marinate for up to 2 hours in the refrigerator or 25 minutes at room temperature.
  • Heat 2 T canola oil in a heavy 12" skillet over a med-high flame until shimmering hot. Remove the pork from the marinade, shaking off the excess, and transfer the pork to a clean plate. Discard the marinade and add half of the pork medallions to the skillet, spacing them evenly. Cook them without touching until well browned, about 2 minutes. Flip and cook until the pork is just cooked through, about 2 more minutes. Set the pork on top of the slaw. Pour out the oil and wipe the pan with paper towels (if the drippings on the bottom of the pan look like they may burn, wash the pan). Return the pan to medium-high heat. Add the remaining 2 T canola oil and cook the remaining medallions in the same manner. Top the slaw with the remaining pork and pour the reserved sauce on top. Serve immediately, sprinkled with the rest of the sliced scallions, and your choice of garnish.

This was part of a recipe for tilapia tacos. I've tweaked it a bit and now make it as a side dish, not just as part of the taco. The last time I made it, I doubled everything and added small, thin strips of red bell pepper and about a handful of snow pea-pods, cut into thirds.

ASIAN STYLE CHICKEN RAMEN DINNER COLE SLAW

Asian Style Chicken Ramen Dinner Cole Slaw image

There are many different variations of this salad out there, of course. My version differs in that the dressing is creamy, and not sweet. The recipe makes 4 main-dish portions, or 8-10 side dish portions. It's great as a dinner entrée, and fast and easy to make! Very popular as a take-along potluck or picnic item, too.

Provided by Julesong

Categories     Lunch/Snacks

Time 30m

Yield 8 side dish portions, 4 serving(s)

Number Of Ingredients 16

2 (4 ounce) chicken breasts, cut into bite-size pieces
1 tablespoon olive oil
1 teaspoon toasted sesame oil
1/4 cup mayonnaise (Best Foods, Hellmann's, or Vegenaise)
2 tablespoons plain low-fat yogurt (see note #2 below)
1 garlic clove, minced, to taste
2 tablespoons cider vinegar
1 tablespoon soy sauce
2 teaspoons lemon juice, to taste
1/8 teaspoon fresh ground black pepper, to taste
1/4 cup slivered almonds
3 green onions, chopped (scallions)
1 (4 ounce) can sliced water chestnuts, drained
1 tablespoon toasted sesame seeds
1 (1 lb) bag coleslaw mix or 1 small cabbage, shredded
2 (3 ounce) packages chicken-flavored ramen noodles

Steps:

  • Sauté the chicken pieces in olive and sesame oils until browned. Drain and set aside.
  • In a very large bowl, stir together the dressing ingredients well.
  • Add the browned chicken and coleslaw mix or shredded cabbage to the dressing and toss well to coat. Set aside.
  • Into a bowl, break up the ramen noodles into smaller pieces. In a saucepan, heat the amount of water according to package directions to a brisk boil and add the seasoning packets. Add the bowl of noodles all at once to the boiling seasoned water and cook, stirring occasionally, for 90 seconds. (You want the noodles slightly cooked, but not as limp as ramen will get if you cook it fully.) When noodles have cooked for 90 seconds, remove from heat and immediately drain.
  • Add the semi-cooked drained ramen noodles to the coleslaw and toss again to combine well.
  • Place salad in a large container and chill in refrigerator for at least 2 hours (it helps to cool and chill them if you stir the slaw a couple of times during chilling).
  • Makes 4 entrée-size servings. You can always stretch this salad by adding additional meat or packages of ramen! We've even added more semi-cooked ramen the next day to the leftovers. :).
  • Note: for folks who like their salad spicy, the addition of crushed red pepper is nice, or a bit of Tabasco in the dressing. A bit of minced fresh sweet basil is also nice in this recipe. My husband sometimes adds sliced black olives to his serving. I also use about a 1/2 cup of slivered almonds, because I love their taste and texture in the salad.
  • Note #2: if you don't have yogurt, you can use sour cream instead, but yogurt is preferred.
  • Note #3: if taking to a picnic or potluck and you're concerned about the mayo in it, you might consider using Vegenaise instead of regular mayo, which has no eggs in it. Tastes just like old fashioned mayo, but lower fat and no eggs. See http://www.followyourheart.com for more info.

SPICE RUBBED PORK TENDERLOIN WITH ASIAN COLE SLAW

Spice Rubbed Pork Tenderloin with Asian Cole Slaw image

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 17

2 pork tenderloins, each about 12 ounces, silver skin removed
1 tablespoon peanut oil
2 teaspoons Chinese five-spice powder
Kosher salt and freshly ground pepper
1 1/2 tablespoons rice vinegar
1 1/2 teaspoons soy sauce
1 1/2 teaspoons mirin
1 lime, juiced
1 1/2 teaspoons finely grated peeled fresh ginger
1 1/2 teaspoons peanut oil
1 1/2 teaspoons toasted sesame oil
1/4 head Napa cabbage, (about 1/2 pound,) thinly sliced crosswise
1/2 large head radicchio, thinly sliced, (about 2 cups)
4 scallions (white and green parts), thinly sliced
1 orange or yellow bell pepper, stemmed, seeded, and thinly sliced
1 red apple, such as Macoun, Cortland, or Pink Lady
Kosher salt and freshly ground black pepper

Steps:

  • Position a rack closest to the broiler and preheat to high.
  • Brush the tenderloins with the oil and rub all over with the five-spice powder. Season with salt and pepper, to taste. Lay the pork on a broiler pan and, broil turning once, until golden, about 5 to 7 minutes per side. (An instant-read thermometer should register between 140 and 150 degrees F when inserted into the thickest part of the meat.) Set meat aside for at least for 5 minutes before slicing.
  • Meanwhile, whisk the vinegar with the soy sauce, mirin, lime juice, and ginger in a glass measuring cup. Gradually whisk in the peanut and sesame oils. Toss the cabbage, radicchio, scallions, and bell pepper in a large bowl with 1/4 cup of the vinaigrette. Grate the apple (with the skin but not the seeds) directly into the slaw, and toss again. Season, to taste, with salt and pepper.
  • Slice the pork and divide among 4 plates. Garnish with some of the slaw and drizzle with remaining vinaigrette. Serve.

ASIAN SALAD / COLE SLAW / CHINESE COLE SLAW - LIGHT

Asian Salad / Cole Slaw / Chinese Cole Slaw - Light image

I adapted this recipe from #54866 and had so many tweaks and changes from the original that I needed to put this one down so I could remember it all. I've omitted alot of the oil from the original to lighten it up. This is great for summer time BBQ's as a side dish. Or grill some chicken and you've got a Chinese Chicken Salad.

Provided by RaisingKang

Categories     Vegetable

Time 30m

Yield 12 serving(s)

Number Of Ingredients 14

1 head cabbage (I use green)
4 green onions, sliced thinly, include the whites and greens
1 -2 minced garlic clove (I used the minced from the jar to save time)
1 tablespoon fresh ginger, diced (I used the minced that is prepared in the jar to save time)
1 carrot, shredded
1 (6 ounce) package ramen noodles, uncooked, discard seasonings
1/4 cup sunflower seeds
2 tablespoons sesame seeds
1 cup slice almonds
1/2 cup sugar
1/8 cup sesame oil
1/4 cup olive oil
1/4 cup rice wine vinegar
1 tablespoon light soy sauce

Steps:

  • Prepare Salad.
  • 1) slice cabbage into small bite size pieces.
  • 2) Add garlic, ginger, green onions, and carrots. Toss to combine.
  • Note: If you are making ahead of time, place this salad mixture in a ziploc bag or covered storage bowl. It will keep in the refrigerator for about 4 days or longer depending on how you store it.
  • Prepare Crunchies.
  • 1) Break the ramen noodles into pieces, but not too small that you loose the look of the noodle. Spread flat on a cookie sheet or jelly roll pan.
  • 2) Sprinkle over the top - Sunflower & Sesame seeds and slice almonds. Mist with Olive Oil mister to lightly coat.
  • 3) Place pan under the broiler until lightly toasted. Stir gently if needed. This will happen pretty fast, so don't let them burn. Once brown remove from oven to cool.
  • Note: If preparing ahead of time, once cooled place crunchies in a ziploc bag.
  • Prepare Sauce.
  • 1) Place all ingredients for the sauce in a small saucepan and bring to a boil. Stir until the sugar dissolves and the sauce thickens to a syrup like consistency. Keep stirring so it doesn't burn.
  • Note: If preparing ahead of time you have two options. One is the make the sauce and refrigerate it in a container. Just prior to serving you can reheat the sauce in the micowave or allow it to come to room temp to toss it. OR you can just make the sauce the day of.
  • Another option if you have a small family. Keep all 3 parts separate and toss just prior to serving. The salad and crunchies will keep for several days. I will slightly heat the sauce in the microwave so that it's not so thick and will toss easily. I'll just toss a bowl or two at a time and the rest will keep.

ASIAN PORK TENDERLOIN WITH SPICY ASIAN COLE SLAW

Asian Pork Tenderloin With Spicy Asian Cole Slaw image

I just saw this in Cuisine at Home magazine that I subscribe to, and it looked so good I just had to try it, and it was wonderful! Family loved it, even the picky daughter said she liked the cabbage. Now there's a good vote! The recipe calls for 2- 1 to 1 1/2 pound tenderloins...I used a 2.13 pound loin roast, (in one piece), and only adjusted the cooking time by 10 minutes. I wanted a starch to go with this meal, so I cooked up a package of Tap Ramen with the water and flavor packet, then let the water absorb into the noodles. This was a great meal! Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 26

2 (1 -1 1/2 lb) pork tenderloin, trimmed of all silverskin and excess fat
2 tablespoons Chinese five spice powder
1 tablespoon kosher salt
1 tablespoon ground black pepper
2 tablespoons peanut oil
1/3 cup chinese plum sauce
2 tablespoons honey
1 tablespoon tomato paste
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon fresh ginger, minced
1 tablespoon pineapple juice
1 teaspoon chili-garlic sauce
fresh chives (for garnish)
2 tablespoons pineapple juice
2 tablespoons rice vinegar
2 tablespoons sugar
1 tablespoon chili-garlic sauce
1 tablespoon chinese plum sauce
1 teaspoon cornstarch
6 cups green cabbage, cubed
1 cup red bell pepper, julienned
2/3 cup carrot, julienned
2 tablespoons fresh ginger, minced
1 tablespoon peanut oil
1/2 teaspoon kosher salt

Steps:

  • FOR THE TENDERLOIN:.
  • Preheat oven to 400*F.
  • Combine Five-Spice, salt and pepper, and rub over tenderloins.
  • Heat oil in oven-proof saute pan over medium-high; sear pork on all sides, 5-8 minutes.
  • Transfer pan to oven and roast 20 minutes, until internal temperature reaches 140*F.
  • Remove pork from pan and let rest for 10 minutes before slicing.
  • FOR THE SAUCE:.
  • In same pan, whisk together the next 8 ingredients, (plum sauce through chili-garlic sauce), and cook while meat is resting.
  • FOR THE SLAW:.
  • Whisk first 6 ingredients together in a bowl and set aside.
  • In oil, saute cabbage, bell pepper, carrot and ginger in skillet on high heat.
  • After 1 minute, add salt. (The salt flavors the vegetables, but also draws moisture from the cabbage, helping it to wilt faster. This was quite fast and dramatic.).
  • Continue to saute for 2 minutes or until cabbage begins to wilt.
  • Stir in reserved sauce and cook 1 minute until slightly thickened.
  • Place slaw on platter, slice pork and lay over top of slaw, and serve with a dollpop of pan sauce.

Tips for Making Asian Coleslaw Recipes

When it comes to making Asian coleslaw, there are a few things you'll want to keep in mind to help ensure your dish is delicious and flavorful. Here are some tips to consider:
1. Choose the Right Cabbage
Cabbage is the main ingredient in coleslaw, so it's important to choose the right variety. For traditional coleslaw, green cabbage is often used, but for an Asian twist, you might want to consider using napa cabbage. Napa cabbage has a milder flavor and a more tender texture than green cabbage, making it perfect for salads.
2. Use Fresh Ingredients
To ensure your coleslaw is as flavorful as possible, make sure you're using the freshest ingredients possible. This means using fresh cabbage, as well as fresh herbs and vegetables like cilantro, green onion, and carrots.
3. Get Creative with Your Dressing
Asian coleslaw is all about the dressing, so don't be afraid to get creative. Some popular dressing ingredients include soy sauce, rice vinegar, sesame oil, honey, and ginger. Play around with different combinations until you find a dressing that you love.
4. Mix Up Your Texture
To add interest and texture to your coleslaw, consider adding some crunchy ingredients like chopped nuts or crunchy noodles. This will not only make your dish more appealing to the eye, but it will also give it a more interesting mouthfeel.
5. Let Your Flavors Marinate
Coleslaw is one of those dishes that gets better with time. Allow your flavors to marry by mixing your ingredients together and letting your coleslaw sit in the refrigerator for at least an hour before serving.
6. Add Some Spice
If you want to give your coleslaw a little kick, consider adding some spice. A little bit of red pepper flakes or Sriracha sauce can bring some heat to the dish and complement the sweetness of the dressing nicely.
7. Don't Overdo It with the Dressing
While the dressing is important, you don't want to drown your coleslaw in it. Start with a small amount and add more as needed. Remember, you can always add more dressing, but you can't take it away once it's been added.
8. Serve with Something Crunchy
To balance out the soft textures of the coleslaw, consider serving it with something crunchy. This could be anything from crispy wonton strips to fried wontons to crunchy vegetable sticks.
9. Consider Adding Protein
To make your coleslaw a more substantial dish, consider adding some protein. Cooked and shredded chicken or pork, shrimp, or tofu are all great options and will help turn your coleslaw into a filling meal.
10. Make Ahead of Time
Coleslaw is a great dish to make ahead of time. You can make a large batch and enjoy it over the course of a few days. Just be sure to keep it stored in an airtight container in the refrigerator.
